My little guy does well with taco meat and shredded cheese. Also torn up turkey lunch meat served with torn up provolone slice. He really prefers soft foods at lunch time like cottage cheese and peanut butter yogurt. He eats much better at breakfast and dinner. Good luck!

Cottage Cheese Egg Muffins with Spinach and Feta (10 minutes + bake time)
10 minute recipe that made breakfast for me all week. 4 ingredients plus seasonings. Pretty simple (mostly scooping and stirring). I was searching for high protein breakfast ideas for my bestie and saw "egg muffins" made with cottage cheese, and I already had the ingredients. I was concerned that raw spinach would make them watery or runny, but they turned out perfectly. I think they'd be good with any combination of add-ins. Broccoli and white cheddar is on my list to try next time. Cottage Cheese Egg Muffins 1 cup cottage cheese 6 large eggs 1 cup fresh spinach (chopped) ½ c to ¾ c feta (crumbled; I used about 5 oz of Greek feta, not pre-crumbled) 1 tsp baking powder ½ tsp garlic powder ¼ to ½ tsp black pepper ¼ to ½ tsp sea salt Preheat oven to 375°F. Grease muffin tin (I used silicone muffin trays, a food service glove, and dab of butter). Mash cottage cheese in a bowl with a fork. Add all of the seasonings and mix. Use the fork to beat the eggs in a separate bowl, then combine with the cottage cheese. Add the feta and spinach. Fill muffin cups about ¾ full. This recipe is perfect for 12 standard size egg muffins. Bake 18-20 minutes, until muffins look set and center just springs back. Do not overbake! Cool a few minutes, then serve or store in the fridge in a sealed container. Microwave 45 seconds to 1 minute to reheat. I also put a few in the freezer to see how they do after thawing -- no verdict on that yet. Edit: They do okay in the freezer for a few weeks. Slight change in texture. Non dairy alternatives to cottage cheese
I actually love cottage cheese but dairy makes me break out if I eat it too much. So annoying. Right now my hyper fixation breakfast is egg salad on toast but add some cottage cheese to boost the protein and make it a bit more filling. So my question is, is there a non dairy option that a similar macro profile to cottage cheese. With a similar taste/vibe. Or a non dairy yogurt to try? Been making these for a few weeks and my family is already tired of hearing about them lol. The cottage cheese makes them super fluffy inside but crispy outside. Here's the recipe: cottage cheese 200g 2 eggs 1-2 tbsp sugar 2 tbsp sour cream 100ml milk 30ml butter or oil pinch of salt, vanilla Blend everything until smooth, then add: 120-130g flour 1 tsp baking powder Mix with a whisk and cook in a waffle maker. That's it. Today I swapped sugar for sweetener and threw in about 20g of whole wheat flour — tastes basically the same but a little less guilty lol. My 8 mo hates eggs and avocado (that’s mostly what I fed my first)! The baby has been enjoying no-cook breakfast foods. Greek yogurt and berries, homemade popsicles (usually yogurt and berries but also done frozen pear applesauce and other fruit purées), cottage cheese, and peanut butter toast. Those are our default easy breakfast items.

NORMAL cottage cheese recipes
I like using cottage cheese on this toast of mine that I usually have for breakfast, but I’m looking for new ways to use it because I only need a bit on my toast and my tub usually goes bad towards the end of it. On my search for recipes to use up cottage cheese, all I was getting was healthy, high protein recipes. Please understand my frustration when I say I absolutely do not want that. I don’t want a high protein, cottage cheese, flatbread or bagel or anything else of the sort. I want functional good tasting recipes that involve cottage cheese. Cottage Cheese is the New Egg?
Am I the last person alive who realized that cottage cheese is the perfect way to make eggs stretch out now that egg prices are astronomical? I used to eat a veggie scramble every morning with 2-3 eggs. I’ve since dropped that routine to maybe 2-3 times a week because (1) sourcing eggs is crazy and (2) paying an arm and a leg for eggs is crazy. I normally hate cottage cheese (it’s a texture thing for me), but figured I should learn to love it since it’s still a relatively affordable way to get vegetarian protein in. Someone suggested adding it to scrambled eggs in another sub, so I tried it. And ho-lee! SUCH a great idea! I cook the veg, then cook the cottage cheese to dry it out, then add spices (I like black pepper, cumin, chili powder, and Mexican oregano) and an egg and scramble. Add the veggies back in right before plating. It’s not super pretty, but it’s tasty and lets me have my morning scramble again! Before, 3 eggs alone were $1.125 for 18g protein per breakfast. Now, 1 serving of cottage cheese + 1 egg is $0.825 for 17g protein per breakfast. A $0.30 savings each breakfast, but almost more importantly: I don’t have to get to the store immediately after it opens and throw elbows to get eggs. Aside: Greek yogurt also FTW. Anyone use it in savory applications? I’ll sub it for half the mayo or sour cream in recipes, but am curious what else y’all got. Thanks. —- Cost breakdown: I can get a 48oz tub of cottage cheese for about $5. It has 11 half-cup servings. 90 kcals, 11g of protein per. $0.041/gram of protein. $0.45 per serving. If I’m lucky, I can get 24ea eggs for $9. 70 kcals, 6g of protein per. $0.063/gram protein. $0.375 per serving. I can get a 48oz tub of Greek yogurt for about $7. Quick n easy cottage cheese toppings for a poor appetite...?
My current preferences are pineapple, strawberries, or honey, but welcome to other ideas. For context, my lousy appetite in the mornings has had me largely dependent on prepackaged frozen breakfasts--mostly chicken sliders or toaster scrambles--in a "find something that works for me and stick with it" mentality, to make sure I'm eating something when I don't always feel the need but know I'll regret it later if I don't eat (especially on work days when I don't have much time for my gut to catch up to my brain). But for nutritional reasons I really need to change it up and I figured cottage cheese and fruit would be an easy answer... if my appetite ever lets me eat more, maybe add it to the frozen sandwiches, otherwise alternate which day I'm eating what for a while. (I also need to start making my own egg bites but that's another issue.) Frozen fruit if it's out of season and hard to get (eg the strawberries), either chucked into a blender with the cottage cheese or thawed and stirred in, single serving cups for things like the pineapple (because it lasts longer for god-only-knows what reason than totally fresh), or fresh whole fruit when I can get the kinds I like. In that last case, the fruit might not even be a topping, that might be the best time for honey and just eat the fruit as a separate dish. What other toppings work really well for cottage cheese that'll satiate without telling my appetite I overate? Edit: Wow, never got this much traction this quickly. 😅 I'll have to look over your suggestions when I'm not supposed to be working, but in the meantime, thanks! Also to those who mentioned it, despite my use of the word "toppings," yes, using the cottage cheese on something else works as well. Edit next day: lot of suggestions to consider. To avoid overloading my pantry with things I don't normally buy 😉, I decided to start with the apple butter, triscuits, salsa (I already have pineapple salsa that I've been trying to decide what it'll work with, so this sounds like a good experiment) as the "easy" options... and of course whatever fruit I feel like buying or seasonings that are already in the house. My baby would like to see how long someone can survive on just cottage cheese
11.5 months. Just loves cottage cheese. I already sent out his birthday invites or I would change the theme of his first birthday party to cottage cheese. He was also given half a banana towards the end of his breakfast. For some reason if you give him the banana to start he will just squish it and not eat it. If you give it to him at the end he politely eats most or all of it. Also second pic he was screaming “mama!!!!!” Let me out of here!!
