Hamburger Helper tonight. Getting rid of the last box I bought on clearance.....so glad!! It isn't good. Back to my homemade version. I will use ground chicken in it. Green salad and the rest of the broccoli

About a year ago I discovered recipes for homemade Hamburger Helper. We weren’t big fans of the box mixes but on busy days they did come in handy. I’ve tweaked these recipes a bit and they are now far better than the store bought mixes. The ingredients fit perfectly in a quart mason jar. Our family’s favorite is the stroganoff with the lasagna in a close second. The tomato mac is good but is usually the last one on the shelf. I’ll include the recipes for all three. Want that comfort food feel with 3x the work as the boxed stuff? Then Homemade Hamburger Helper(gift recipe) is for you! All joking aside this is insanely delicious and our second time making it. I did make some minor substitutions and omissions: omitted the bacon the only hot sauce we had on hand was sriracha, so I halved the called for amount of hot sauce and it was just enough to make your nose run a bit and your face flush— exactly how we like our spicy. agreed with reviews that full heavy cream being too much so I used half heavy cream, half 2% milk we had on hand We also didn’t have chives, so green onions it is. Lastly, we used CarbeDiem pasta elbows rather than traditional pasta because it’s what we have on hand. For anyone trying to keep their glycemic index lower or who might be counting calories (albeit quite futile with this dish) I really do love it in meals like this where it tastes the same but holds its form a bit better. I do not have any affiliation with the brand. I also like freezing this one down in portions as a grab and go lunch to take to work. 5/5 for flavor, 3/5 for being complicated, so 4/5 overall.
