High protein-low carb breakfast ideas? (No oatmeal, no eggs)
I’ve been eating oatmeal (adding pb & berries) and greek yogurt for breakfast every day for literally 8-9 years at this point, but recently my health issues (including PCOS) have been getting worse and I feel like the oatmeal is causing my blood sugar to spike badly now, even with the added protein of the yogurt, fat from peanut butter & fiber from berries. I need to find a new high protein breakfast, but it’s a little difficult bc I also have IBS & POTS, which eliminates some options: - no eggs - no dairy only (ex: just having greek yogurt/smoothie. I need to eat something else along with dairy or it upsets my stomach) - nothing too carb-heavy (pancakes, waffles, etc.) - no long prep times (POTS makes my mornings difficult, I’m very symptomatic & unable to spend more than 10 mins cooking something) Unfortunately, the “dinner leftovers” option also won’t work for me since I often have fish and the thought of eating a piece of salmon first thing in the morning totally turns my stomach. I’d really like to find an option that’s breakfast-y if possible. With that being said, I’d love to hear what you all have landed on for PCOS-safe breakfasts. I need some help with ideas for high fiber & low fat recipes!
Hey y'all, first time posting in this sub. I'm having issues with my gallbladder and will likely have to have it removed soon. I was told by my doctor that a high-fiber and low-fat diet is the best way to manage my symptoms before and after removal. My issue is that my diet is pretty shit right now (which is what probably caused my gallbladder issues in the first place) and I'm used to eating a lot of takeout/fast food/high carb and fatty snacks. I really wasn't concerned about eating "healthy" before this started happening so I'm kind of lost on where to start. What I have learned about "hidden carbs" while running a low carb cafe in Melbourne.
After spending years deconstructing recipes and calculating macros for our kitchen at Regretless, I have noticed how many "keto friendly" options out there still hide a surprising amount of carbs. When you are eating out in Melbourne, there are a few common traps that can easily kick you out of ketosis without you realizing it. One of the biggest culprits is commercial thickeners in sauces and dressings. Even if a dish is sugar free, many places use cornstarch or flour to get that perfect consistency. We have had to get really creative with our reductions to keep things like our Kimchi Chicken at 3.3g of carbs. Another one to watch is "keto" bread or waffles that use high amounts of certain nut meals or fillers that push the count higher than you would expect. This is exactly why we spent so much time perfecting our Cheesy Chaffle to sit at exactly 1g of carbs. I have also found that many "sugar free" syrups used in coffees or desserts still use sweeteners that can cause a glycemic response for some people. We stick to very specific profiles for our cheesecakes and crepes to keep them between 2g and 3g of carbs per serve. I am happy to answer any questions about how to spot these hidden carbs when you are dining out or even if you are trying to troubleshoot your own recipes at home. Eating low carb vs dosing for carbs
My young adult daughter was recently diagnosed in the last few weeks and we are both trying to learn as much as we can. She has seen her primary and had one visit with the endocrinologist. She is on long acting and just started short acting insulin a few days ago. She has always eaten healthy and exercises and understands the counting of carbs and eating more protein and veg and limiting sweets. But she is also young and has a sweet tooth. So my general question is… does she have to avoid sweets or just dose for them appropriately? If she wants to go out for icecream with friends does she just dose accordingly or try to find some zero sugar option if there is such a thing? Are eggnog and Christmas cookies a thing she needs to avoid forever now? I guess this sounds slightly crazy but if I need to find recipes for sugar free eggnog and keto Christmas cookies for when she comes home for Christmas I’m gonna do that. Any suggestion for very low carb meals that are satisfying?
Found out pre diabetic and the usual starches - potatoes, pasta, rice, breads, send my sugar way too high. So far I have found I can handle non-starch veggies, salads, meats, cheese, nuts, edamame noodles. Trying to come up with alternatives. My doctor prescribed a low carb diet
I have been struggling with gaining a ton of weight, my cholesterol sky rocketed and I was having some issues with infertility. I have an amazing doctor who has actually taken the time to do blood work on me and review the results. He explained to me that it appears that my issue is insulin resistance and how having all this extra blood sugar was likely the cause for a lot of my issues. Rather than put me on pills, like most doctors, he spend the time to explain the science. He told me to go low carb for 3 months with 30 minutes of walking a day and then come back and we could do the labs again. He seems confident that is all it will take. His willingness to actually explain to me why it will help and how my body works is what completely sold me. Low carb tortillas are heaven sent for egg sandwich lovers
I love a good egg sandwich. Today I got tired of my usual breakfast ideas and wondered what would happen if I had an egg sandwich with a low carb tortilla instead of a roll.... it worked. My favorite food posts here are ones that don’t involve pre-packaged low calorie foods or crazy “hacked” baking recipes.
I love seeing people share meals made out of regular food that you might find in a non-dieter’s refrigerator. Fruit. Vegetables. Bread. Meat. Eggs. Milk. A bit of dessert. Not like a muffin recipe that calls for 200 grams of space-age sweetener, a teaspoon of Korean seaweed fiber, a cup of flour made from ground pigeon eggshells, and a tablespoon of $25 non-fat, no-sugar, no-carb, no-color, no-weight butter substitute. And then you cook that in a rice cooker for some reason. Don’t get me wrong - I’ll eat a pint of Halo Top and throw some Diet Coke in my brownie batter no problem. But I do think it’s a mistake to forget that, presumably, most people here want to cultivate a sustainable and healthy eating pattern. I feel like sustainability is easier when you know how to eat and indulge without turning your kitchen into a chemistry lab. Like, maybe the key is learning how not to want an entire pan of brownies. Rather than learning how to make a pan of brownies that taste like sugary Clorox but only have 400 calories so you can eat the whole thing. Just my thoughts. Chili. High protein, low carb, generally low calorie, low cost.. where have you been all my life?
I do meal prep Sundays and am on a high protein/kinda low calorie diet. I usually cook a bunch of chicken to eat throughout the week in various forms, but still needed protein shakes/bars to hit my goals. A few weeks ago I decided to make a pot of chili. I did it while I'm prepping my marinade, marinating and what not. I had generally made chili in the slow cooker which I now think is kind of a waste of time when it can be done so quickly on the stove. Holy smokes. For such little effort, you can have loads of healthy, high protein, low calorie, entirely customizable food to eat all week! My last batch consisted of: 2 lbs 90% lean ground beef 1 can chickpeas 1 can pinto beans 1 can black beans 2 10oz cans rotel 3oz tomato paste 1 small can diced jalapenos 1 whole yellow onion 1 green bell pepper 1 red bell pepper 3 tbsp pre minced garlic (I know, I know) Edit: Forgot I squeezed half a lime into it and also poured like 1/4-1/2 the lager I was drinking in there. Otherwise, No liquid necessary although it's a thick, chunky chili which is how I like it! Spices: Cumin, chili powder, oregano, smoked paprika, cayenne, fresh cracked salt and pepper. The list seems long, but seriously, all you do is chop an onion and two bell peppers, then it's all opening cans. The little amount of work for so much tasty and healthy food kinda blows my mind. I fill five smallish tupperwares with chili to grab and go for a 10 AM breakfast at work. Have a smallish cup of chili during lunch with my main dish (chicken sandwich, lately). Last night for dinner I chopped up one of my pre-cooked chicken breasts and put it on a salad, with a side soup of.. chili! If you lift or exercise at all, protein is very important for rebuilding torn muscles and other functions. Customization: If you don't like ground beef or want a more lean meat, you can sub it for turkey or chicken (chicken has that protein boost as well). Here is a great turkey blackbean chili that's even more simple to do. I did this one two weeks ago. You can do 3 beans, one bean or no bean! I've made a three meat chili that just had ground beef, cubed chuck roast and ground pork. No beans about it. I personally prefer beans for their own health benefits you don't get from meat. Anyway, just wanted to share this for any meal preppers out there! Edit to add: this is a pretty meat heavy chili, which is how I like it. You can do this same recipe with 1lb, 1.5lb or 2lb ground beef depending on how much you like. Just change your amount of seasoning appropriately! :D Edit 2: Some people have pointed out this isn't "low carb" because of all the beans and they are right. It's hard for me to lump complex carbs and processed carbs together, so when I think carbs I usually think bread/processed grains/chips etc. What you can do about that is: don't add beans! Or just add chickpeas, or just pinto beans, or black beans! Just one can. It will still be fine without them, just even more meaty. A way to fluff it up and keep it low carb is to add more of another kind of meat (breakfast/italian sausage, chuck roast cubed into 1in cubes, chicken). Sorry for the misinformation on the carb department. Also, you can dice up some mushrooms! Personally, I still think this recipe is a little on the low to mid range carb wise since it's mostly meat, haha Edit 3: just adding more good ideas: if you get bored with it, you can make it into a quesadilla! Slap some on a tortilla and put some shredded cheese on there. Boom! Another edit: someone PMd me for instructions and since I typed it all out on my phone, figured I’d post it here: Dice the yellow onion and green and red pepper. Set aside. Put 2 tbsp olive oil into a large pot and heat on medium. As the diced onion and garlic. Cook for 3-5 minutes. Add beef and red and green pepper. Stir occasionally until meat is browned. This should only take ten minutes or so. While this is going on, start opening cans. And if you want and aren’t drinking already, open a beer. Add the rotel, jalapeños, beans, tomato paste.. just like everything that was in the cans I guess. Now seasonings: 1.5 tbsp cumin 1 tbsp chili powder 1-2 tsp oregano 1-2 tsp smoked paprika 1/2 tsp cayenne 12-15 cranks cracked salt and pepper Let me know if I forgot one something. Splash a little beer in there. Squeeze lime in there if you have some. Do you have any ingredients left? Let me know. They should probably be in the pot by now though! Stir occasionally so it doesn’t burn to the bottom of the pot. Let simmer for like, 1-2 hours on low-med heat after cooking on med for like ten-15 minutes. Serve immediately or let cool in the fridge overnight and eat it all week! It’s tastier the next day imo FINAL EDIT: I've gotten SO MANY awesome tips in this thread! It intentionally was just meant to be an FYI about how well chili lasts a week and is a good meal for a sunday prep, I never intended to even add a recipe and only added my last one on a whim. [FP] I am excited to share with you THE BEST Low Carb Bread Recipe EVER.
Updates + Notes: 5/6/17 - Added weighted measurements + updated notes on recipe. 5/25/17 - /u/ConvolutedSpeech made some amazing buns. Ladies and gentlemen, I have tried just about every recipe out there when it comes to low carb breads and this is the first time I have ever felt like actual "bread" has been achieved. I've been eating sandwiches for a week, and even had a hotdog with bread bun last night. It has made this lifestyle so much easier. First off, here are the pictures. Details: It tastes like bread, chews like bread, tears like bread, feels like bread, and even toasts a bit (not great, but similar to wheat bread). The flavor reminds me of a white bread crossed with a wheat bread. Total cost for ingredients comes out to about $4.50 per loaf. Best of all, the whole loaf comes in at about 22 net carbs, meaning there are about 1.3 net carbs per slice (17 slices per loaf). I got all the ingredients from Whole Foods except Oat Fiber, which apparently needs to be bought online. Recipe: 1 cup of water - 246 g 1 Tbsp. Saf Instant brand yeast (I've tried a few different brands, but none rise as well as Saf.) - 11 g 1 tsp of real honey (this doesn't get added to carb count, as it is eaten by the yeast) - 7 g 3 Tbsp. of Swerve Confectioner-style sweetner - 27 g (update: I no longer use any swerve; don't notice a taste difference) 2 eggs, slightly beaten, room temperature 1/2 Cup Oat Fiber - 38 g 2/3 Cup Ground Golden Flax Meal - 84 g 1 1/4 Cup Vital Wheat Gluten - 192 g 1/2 tsp of Xanthum Gum - 1 g 1 tsp of salt - 6 g 2 Tbsp. of softened butter - 28 g Instructions: Here are a couple videos, though my instructions below are fine-tuned for my best results: If you're using a mixer If you have a bread machine Instructions for Mixer (Updated: 5/6/17): Microwave 1 cup of water for about 45 seconds until it is 100-110 °F Pour your honey into the water and mix it around so it dissolves Add your yeast into the honey water and stir it around Add in your remaining ingredients in the order listed above Mix for about 7 minutes to knead it Update: I've noticed that kneading it for longer (upwards of 15 minutes) results in a better dough. The end result shouldn't be shaggy looking, and it should bounce back a bit when you push on it with your finger. Put into a loaf pan, cover with oven-safe seran wrap that has been sprayed with non-stick spray Microwave 2 cups of water until it begins to boil (about 2 minutes). Keep this in the microwave to make it warm and humid. Place loaf in the microwave BUT DO NOT TURN IT ON. Leave it in there for 45 minutes Update: 2-3 hours. to allow the dough to rise (You can also use the oven on low. But, again, you are not microwaving the dough -- you're just putting the dough in the microwave while it is off). Put in oven for 20-25 minutes at 375 degrees. This bread is going to be a staple for me. I wanted to share it with you folks because I hadn't seen it (or anything like it) on here before, and because I'd love to have more people experiment with it in case there are ways to improve upon it. Edit: Updated the net carb count. After double checking, it comes in at 22 net carbs, not 34. Woohoo! Update: Pizza Crust Recipe I talked to my friend (who referred me to this recipe) and she said she has also used it to make pizza. Pic: https://imgur.com/a/lJbQT. To make it, you start with the dough listed above, and then: Use some oat fiber on your counter (to keep the dough from sticking) Roll it out with a rolling pin like you would do with any other dough Scatter some coarse corn meal on a wooden pizza peel (one of those big spatula things) Pre-heat an oven to 550 * F with a pizza stone in it Brush the crust with olive oil, add toppings, then slide it into the oven with a jerk of the pizza peel onto the stone and bake for 10 to 12 minutes (until crust is brown and cheese is bubbly). Note: Admittedly, I don't have a pizza peel or stone, so I'll try this recipe without them and report back... my friend is super fancy though.
