How do you all cope with low sodium diets?
I have been working with my cardiologist and dietician to get my blood pressure down. It fluctuates, but I’m normally around 140/85. My dietician wants me to try and reduce sodium to 1,000mg a day. I already don’t eat many processed foods, so now I am working on adjusting my cooking. The primary issue is that cooking is my main hobby and biggest passion in life. I have spent years honing my craft and creating/perfecting recipes. Salt is a HUGE part of making food taste dynamic and delicious. I have been substituting with various acids, but salt is a necessary ingredient to achieve the dynamic and broad spectrum of flavors and textures. I am looking for advice on how to cope with this change. I no longer have any interest in cooking, I feel like my creative freedom has been taken away. I don’t even really have any interest in eating what I cook anymore. I’ll spend hours cooking something, take a bite and instantly lose interest. It’s like my artistic medium has been taken away. I know it’s dramatic but cooking has been a huge part of my life and an integral part of who I am. Has anybody had a similar experience? Low sodium struggle bus!!!!!!!!
Yesterday my cardiologist told me to cut my sodium to 2,000 a day. I said oh I'll do even better and do 1,500. Omg after looking at labels for everything. Everything has so much sodium! I am in shock! A tsp of Dijon mustard has 115mg!? Wtf?! I've found all kinds of recipes and what not I'm going to try. But does anyone have any low sodium recipes or store bought for sauces/marinades? I eat a vegan diet and I don't know what to flavor tofu with anymore? The only low sodium sauces I can find are pasta sauces. I never realized how much sodium is in everything. If that causes your blood pressure to rise, no wonder mines been so high. Low Sodium Pickling
I love pickled snacks but don't care for all the sodium that most of them have. I've done this recipe numerous times to make quick pickles. Instead of salt I use NuSalt. I do NOT like NuSalt in any other recipe but it works for me in this one for some strange reason. I made one jar of pickles and also made a batch of pickled cauliflower and carrots. So I’ve recently had to switch to a low sodium diet. I need flavor in my food, and the fake salt isn’t quite cutting it. I’m not overly familiar with spices. Where should I start?
This diet means a lot more cooking at home, with a focus on natural, healthy ingredients (having a heart attack at 36 will do that!) I was a decent cook before, but a lot of my recipes relied on salt and bad fats. Now I’m at a loss. Low sodium and migraine connection
I recently asked for recommendations of salt and vinegar crisps on a big subreddit after Walkers changed their recipe and removed a lot of the salt. Walkers S&V crisps were always my migraine survival and recovery food. As well as lots of good recommendations, someone asked if my migraines might be caused by hyponatremia. I didn't know much about this so I looked it up and I really think they might be right, although I don't think I'm suffering from clinical hyponatremia, but that low sodium has probably been making my migraines worse. I was diagnosed with 'non Celiac gluten sensitivity' (by a hospital dietician) years ago so I eat a gluten free diet, and I also noticed my migraines increase with dairy. So my diet is GF and dairy free. As a result I can't eat that much processed food which is I think is most westerners get most of their salt. For years I cooked lovely healthy varied meals from scratch but I went through several major bereavements a few years ago and after that I couldn't face cooking much so I mostly ate cereal, toast, eggs, fruit, soya yogurt and crisps for a few years while I was grieving. My migraines started to get worse last summer which I think is partly due to perimenopause but I think it's also due to low sodium. This unfortunately made my diet worse because when I have a migraine I often get nausea and I can't digest much so my diet becomes even more basic and minimal until the migraine goes. I've started making a few more simple and easier to digest healthy meals and making sure I add enough salt to each one because I know relying on salty crisps isn't healthy longterm. If you have any good recipes for these sorts of meals let me know. Does anyone else noticed a low sodium/increased migraines connection? What do you do to have enough salt and does anyone use those electrolyte products (such as sachets and bottles of liquid electrolytes)? Reasonably low sodium tare
Hi everyone, I'm learning to make ramen and I recognize that saltines is a Hallmark of the flavor profile, but for blood pressure reasons I want to keep things in a reasonable range. Between the noodles and the Tare, I am trying to keep the sodium below 1000 mg per bowl. Ideally below 700 mg. Does anyone here have any Tare recipes they like that keep the sodium content down, but are still very flavorful? San J has a Tamari lite w/ ~500 mg of sodium per tbsp and Wegmans has a white miso paste that only has about 300 mg of sodium per tbsp. Human Kibble: Test Batch
Finally got access to a kitchen, so I took the chance to make my first batch of kibble! I also made some cakes, which I'll also be posting here once I finish writing a proper recipe. Aside from the macro ratios, most of the ingredients and seasonings were put in on a whim with the idea that "more variety is more nutrition". Future batches will be fine tuned for actual nutritive value. This one was mostly made to prove that the concept is workable. Ingredient list is for 3 days' worth. INGREDIENTS • 1.5lb textured soy protein (chosen for protein density, affordability, and low initial water content) • 0.5lb buckwheat (Chosen because I had a lot of buckwheat) • 1 full celery heart, thoroughly washed and minced (For fiber and volume. I could've gotten away with just chopping it, so I'll keep that in mind for future batches) • 1/3 cup olive oil (to prevent fat deficiency) • Large amount of Maggi sauce (for flavor and sodium content) • 1/3 cup fortified nutritional yeast (because I'm prone to B vitamin deficiencies) • Large amounts of ginger, turmeric, rosemary, Mrs. Dash, dried onion, and celery seed • Water, as necessary PROCESSING Put buckwheat to boil in a mixture of the water and Maggi sauce (the sodium content of the Maggi will sub in for salting the water) and leave it to boil for 20 minutes or until soft Put the protein, celery, and oil in a large bowl and mix thoroughly (I did not do that and it resulted in a massive protein glob on the bottom that had to be manually dug up and mixed back into the mixture) Once buckwheat is done, dump it, water and all, into the bowl. put a pot of additional water to boil. Let rest for a few minutes so the protein can fully hydrate (I, again, did not do this, and it resulted in ultra dense protein slop that was a nightmare to work with) Add seasonings and nutritional yeast and blend together until it's a homogenous paste/batter. If it's too thick to blend, add additional boiling water (as little as possible, as more water lengthens dehydration time) Spread paste as thinly as possible over as many baking sheets as possible Leave in oven on the "warm" function overnight (I felt comfortable doing this because my oven has a safety feature to turn itself off if it detects a potential fire. Do not do this if your oven doesn't have that.) Done Picture doesn't represent entire batch. The rest is still in the oven because I spread it too thick and it didn't fully dry overnight. A lot of y'all have asked questions and expressed their concern in my initial post, which I will be addressing here: HOW'S THE TASTE/TEXTURE? Bland. Functional. Noticeable celery flavor and the faintest hint of savory, as if La Croix made a mushroom flavor. Texture is akin to Grape Nuts. WHY NOT DO [X] INSTEAD? Because, over 4 years of continuously working on eating healthier, I've almost certainly tried that and it didn't work for one reason or another. ARE YOU HOMELESS? No. THEN WHY [X]? That's private. WHY DEGRADE YOURSELF LIKE THIS? Because I don't consider it degrading. If it's good enough for cats and dogs, who also feel emotions and demonstrate dietary preferences, then it's good enough for me. IS THIS AN EATING DISORDER? Maybe? Depends on how you define "disorder". I will admit I worded my initial post in a way that caused more concern than I intended. The plan is an 1800-2000 calorie per day diet, 1200-1400 of which would be kibble. With the kibble getting me to the minimum range of all my macros, micros, and fiber, that leaves me 400-800 calories a day that I can dedicate to literally anything I want without worrying about anything else. The reason I was so hard focused on making the kibble hit "minimum nutritional requirements" was because I wanted to maximize the caloric amount of actual food I could allow myself on a day-to-day basis. I am by no means anorexic or bulimic and if I don't meet my calorie minimum on any given day, I intend to drink the volume of milk necessary to get to that minimum before I sleep. I have high requirements for protein (I powerlift as a hobby) and I'm trying to lose weight at a healthy (read: maintaining my actual health) pace without crash dieting. To do these both while keeping a real food diet, I'd largely have to sacrifice things like desserts and full fat dairy, which I'm unwilling to do. By optimizing a kibble to fit the minimum nutrient values to have eaten healthily on any given day, I allow myself absolute freedom within the leftover caloric range. WHAT IF YOU WANT TO EAT MORE REAL FOOD ON ANY GIVEN DAY? I'll just eat less kibble that day. That or go a bit over my calorie range for the day (with the intent to not do anything to "make up" for it). Society will not collapse if I go to a Mexican restaurant with friends and actually eat my fill. CONCLUSION This diet is very specifically catered to my needs and preferences, and I don't think it's well suited for the vast majority of people. I understand that this is a rather unorthodox way to eat, which will naturally lead to further questions and concerns. I'll be happy to answer any good faith questions or listen to any suggestions y'all might have. How to make low sodium food for picky husband
I need to have a low to no sodium diet do to a transplant, but most low sodium recipes have some type of vegetables or fruit and most of the time if I make them I have to leave out a lot of whats in the recipe, so im not sure what to do since its already hard to find recipes for low to no sodium. Any advice would be helpful. I figured it out ok, he does make his own meals (I dont know where people are getting he doesn't but i more then likely worded this poorly, he also got me a low sodium cook book as well) and adds hes own salt but with me using Mrs. Dash its doesn't have enough flavor kick for him, then main thing he is really picky about is veggies the smell amd taste make him gag, there are our recipes that we would both like to try and he said that he would try more vegetables but they can't taste like veggies. He is really considerit to my health ever since we started dating and got married in November even with not living with a family member that has it. Help, my ‘famous homemade cake’ is actually just a box mix and now I’m stuck living a lie
Update: You guys are crazy about this story i can’t answer to you all but thanks you so much for the help, and recipes you shared with me ❤️ I came clean to my boyfriend & he thinks it’s funny. So I’ve decided to tell the truth to my friends once I baked a great replacement recipe to give them as a make-up. They won’t buy the Alsa batter mix because of the palm oil in it, and I shouldn’t either tbh.. I’ll keep you updated in the cooking sub 👩‍🍳 I’ve really dug myself into a hole. It all started at this event where we were supposed to bring a cake. I had totally forgotten, didn’t have time, so I grabbed one of those ready made cake mixes, like Alsa (maybe its a French brand idk ). Of course, I didn’t dare admit it was just a box mix(edit not a box mix, but a already made batter) , since the whole idea was to bring something “homemade”… But then the cake was such a hit. Like, such a hit that ever since, people keep asking me to make my “famous” chocolate cake for every birthday, every party… This has been going on for years now. Everyone keeps begging me for the recipe, and I’ve tried a million times to recreate it with recipes I find online, but the result is always so disappointing compared to that cursed mix. And now my friends are getting annoyed at me for not sharing the recipe, cause I keep saying I will. So please, I need help figuring out how to reproduce this chocolate cake. On top of everything, the mix is ridiculously expensive, and I’m tired of wasting money and lying to my friends! Édit3: here is the actual list of ingredients Ingredients: Palm oil, EGG 21%, sugar, cocoa powder 18% (sugar, cocoa mass, cocoa and low-fat cocoa powder, natural vanilla flavor), WHEAT flour 10.3%, a stabilizer (glycerol), powdered CREAM, powdered EGG white, a pinch of raising agents (diphosphates and sodium carbonates), a little salt, and a preservative (E202). Edit2: it’s actually not a box mix, my translation isn’t the best. It’s a pre-made batter ready to be put in cake mold and int the oven. Crazy picky eater with food allergies that now needs a low sodium diet. Please help! Biggest challenge for any cook.
I apologize profusely for my lack of palate, but I can't help that. I get I'm awful. I recently was diagnosed with severe postpartum pre-eclampsia which has caused my blood pressure to sky rocket even months (and while using lots of BP medication) following delivery. I need to change my diet but unsalted/low salted food is so bland. Looking for recipes that will work with my new lifestyle. I'm allergic to peanuts, and avoid all tree nuts as a result since they are typically processed in the same factory. I am also lactose intolerant and allergic to soy. I'm sensitive to citrus, so tend to only use 1/4 the amount suggested. I love veggies and enjoy learning to cook with new veggies. My meat options are limited to chicken (not chicken thighs as this upsets my stomach) and ground beef. Absolutely no seafood or meat sources outside of that. I don't like soups or stews. Usually it's the texture that turns me off from eating these. I looooove spicy and hot flavors, but can't seem to find many recipes that fall under the low sodium category. I also love rice dishes, pasta, and LOVE potatoes. I typically cook once per week in large batches so I can eat that throughout the week.i love in the Midwest of the US. I understand people will roll their eyes, but this is just who I am. I wish I liked more. My life would be so much easier, but this is reality for me. Taking yet another major ingredient from my already narrow cookbook is quite difficult. Thank you for any suggestions! Edit: Thank you everybody for your suggestions and concerns. I'm honestly just a picky eater, and I'm just looking for low sodium recipe suggestions or low sodium alternatives that people have had success with.
