Siesta Co. Small Sardines in Organic Extra Virgin Olive Oil with Yuzu Kosho
This is the third of three Yuzu Kosho cans I tried from Siesta Co. Like the mackerel and tuna belly before them, these small, tender sardines are in excellent EVOO. The "hint of Yuzu Kosho" is the real star for me -- subtle but more distinctive than a typical "lemon" flavoring, the light citrus gives the sardines a nice sparkle. This one seemed to have slightly less green pepper than the mackerel. I had these with my green salad dressed with the can's EVOO and a drizzle of Carandini orange balsamic glaze. (I put only 4 in the salad; can contained 7 fish.) All three Siesta Yuzu Kosho varieties are winners! Best Commercially Available lemon juice? (Fresh squeezed not practical or allowed)
I’m getting married this summer and our venue allows us to bring our own alcohol. I decided on a Paper Plane as my signature cocktail but I was told that it has to be made as a batch on site and I don’t want the bartenders making 100 of them 1-2 at a time. I planned to bring homemade super juice but they said it has to be commercially available. Is there a good alternative to fresh squeezed/super juice that I can bring as a replacement? Siesta Co. Mackerel in Organic EVOO with Yuzu Kosho
When I recently discovered Siesta Co.'s Tuna Belly in Organic EVOO with Yuzu Kosho, I immediately went directly to the source to buy more. While on their site, I discovered they also make a sardine variety and a mackerel variety also in organic olive oil and yuzu kosho. Tonight I tried the mackerel with nicely seasoned fillets. This one seemed a bit lighter on the yuzu and with a slightly more prominent green pepper (you can see the seasoning better in the plated image). This was delicious on Raincoast Crisps (Salty Date and Almond flavor) spread with cream cheese and a bit of pickled onion. Siesta Co.Tuna Belly in EVOO with Yuzu Kosho 😋
This tin moves right up near the top of my all-time favorite tuna bellies! The meat is very tender, rich and easily flaked, which makes it ideal for adding to salads. The "hint of yuzu kosho" is truly delicious! I've had stronger yuzu kosho in small dabs on sushi, but this was a milder, citrusy flavor that didn't overpower the tuna. I dressed my salad with the excellent organic EVOO from the can and a drizzle of (unfortunately bottled) lime juice. Best salad I've had in a long time (and I eat salad almost daily)! I can't remember who I learned about this tin from (maybe u/DreweyD or u/Tinned_Fish_Tyler ?), but whoever it was had referred to Bernal Cutlery as a source, where I paid $17. Even as I ate it 😅, I was already searching Siesta's website to see what else they made. I discovered they also have small sardines and mackerel, both with yuzu kosho! I immediately ordered a Yuzu Kosho Trio Pack, plus a 3-pack of the tuna belly. NOT A COCKTAIL: Quasi-DIY Yuzu Super Juice
I bought this yuzu juice powder online in an effort to make yuzu economical enough to stock as a juice alongside lemon/lime in home recipes. I think I kind of succeeded— it held up pretty reasonably in a typical sour spec of 2oz strong 0.75oz sweet 0.75 oz “citrus”. That being said would not be surprised if others made a better recipe with further iterations. I also tested this in a daiquiri and found it to be a reasonable stand-in. HOW TO BUILD: 3packed teaspoons of yuzu juice powder (it compressed similar to powdered sugar, so ensure it’s compressed flat to the top of your measure 1/4oz teaspoon citric acid—yuzu juice is borderline lemonade by itself and needs a bit of help in the acid dept. 1:4teaspoon sugar 1/2cup water Blend all ingredients with a handheld mixer. submitted by /u/pastelthrowawy to r/cocktails [link] [comments]

Siesta Mackerel with Yuzo Kosho
Picked up a tin of mackerel in yuzu kosho sauce (can’t remember where, sometime in the last 6 months) and finally got around to trying it today. Surprisingly great—bright, spicy, citrusy sauce that really elevated the fish. I usually don’t go for mackerel, but this tin won me over. Served it on matzoh with pickles, and it’s hands down the best mackerel tin I’ve had. For love of the game, for the high quality merch from Bethesda, and for anyone who needs a drink at the end of times. Full recipe and specs on my ig @player2desu I have to run to work but wanted to post this really quick. I’ve been working on and off on a Quantum soda for years, and always fall short. It was very demotivating. So, I decided to keep it simple, and stupid, and delicious! This is a Yuzu BOMB. Nuka Cola Quantum
Nuka Cola Quantum • 90ml blue Sour Patch Kids-infused Haiken Yuzu vodka • 45ml Yuzuco yuzu super juice • 30ml Shiromi yuzu cordial • 45ml cold distilled water Garnish with a dehydrated lime, half of it dipped in Electric Dust (buzz button mixture). I know I’m one season too late and one season too early, but I couldn’t help it. I’ve been trying to make a Quantum for so long- going as far as buying every single oil/extract on that one dudes list from YouTube. I’m so sorry I really don’t remember his name right now but someone in the comments might. I even bought (and returned) a centrifuge lol. Anyway, I stopped trying to make a soda and just focused on making a cocktail. There’s enough sweetness from the cordial and from the blue sour patch kids infused vodka that it doesn’t need any simple or any other sweetener. There’s enough vodka and dilution in there to offset the citrusy sweetness. It’s got the perfect color, and a nice sweet tang from the overload of yuzu. Have no doubt, this is a YUZU BOMB. And it beats the hell out of the Quantum’s I’ve tried from candy shops. Full recipe is on my ig if you want to make it.
