Almond Milk

my baby is highly allergic to cows milk. like full body hives and can't breathe. so we do almond milk or coconut milk mostly and oats milk but she isn't the biggest fan of that one. it's fine for recipes tho. I'm too scared to try goats with her because I heard the proteins are basically the same and while I can be gentler on lactose kids bellies I'm worried it will trigger her anaphylaxis.

Okay well ofc there’s other ingredients but no other milks! Recipe: -(Approx) 1 1/2 cup unsweetened vanilla almond milk -1 scoop Sunwarrior PB & Chocolate Protein -(Approx) 2 tbsp Good Culture cottage cheese -1/4 tsp guar gum Blended. Froze for about 24 hours. Let sit out for like 5 minutes then spun on light ice cream. I did 3 re-spins to get consistency in first two pictures (soft serve). I feel like since almond milk has been slowly phased out of most cafes by oat as the main alternative, almond enjoyers have become increasingly irate. At a cafe I worked at last summer, there were multiple occasions a customer would order something with almond milk, I would say sorry we just have oat, is that okay, and they would just straight up walk out. Ive also seen google reviews where people will give a cafe one star bc they didn't have almond milk... Im just as upset about almond milk/coconut/etc replacing soy as the cafe milk alternative standard, but I settle for oat because idc that much. Has anyone else noticed this? Almond milk people are really ride or die. And they are usually a very specific type of person lol EDIT: I can't drink cow milk so I get wanting an alternative other than oat, but I guess I have only noticed people asking for almond milk specifically. Today, I tried the same recipe, but with a different base. They both froze for the same amount of time. The first image was how the milk turned out. It was really good, and only required one re-spin. Almost no ice crystals, and went really well with my mix-in. Nutrition: ~500 calories ~1g sugar The second image was the almond milk one. Didn’t turn out so great, required 3 re spins (wasn’t very solid after that, as you could imagine), and had a ton of ice crystals. It also wasn’t very flavorful and had an unpleasant almond after taste. Nutrition: 290 calories 1g sugar I think if you really want to cut out calories then almond milk MIXED with milk is not a bad idea. But, since the entire pint was ~210 calories less, it’s not worth it. Especially if you only have a serving (1/4 of the pint) a day. I'm just trying stuff out. I'd like to make "healthier" ice cream eventually but I'm just trying a series of experiments to see what works. For my first experiment, I tried 100% unsweetened almond milk. At only 30 calories/cup it's clearly a temping starting point. But as it's nearly all water, there is no way this is going to blend up well. In my previous recipes, I've noticed that pudding mix and xanthan/guar gum really help so ended up I actually used both to see what effect they would have: * 1oz pack of instant sugar free vanilla pudding * 1/2 tsp xanthan and 1 tsp guar gums * Splenda and vanilla extract for additional flavor. Freeze for 24 hours, out of the freezer for 15 minutes, then 1) used Lite Ice cream setting and 2) did a respin. Result Not that bad! (I was expecting much worse) Reasonable flavor but not surprisingly, rather icy. However, it was still VERY edible, but clearly not creamy. The pudding/gums obviously helped but can only do so much with such a watery base. But the ENTIRE pint comes in at just ~175 calories (which is crazy low) Lesson: Pudding mix + gums do help, but can only go so far. Last night she made kraft mac and cheese but used sweetened vanilla almond milk instead of regular milk and sprinkled (not fresh) bacon crumbles on top.
