A year of work mapping U.S. regional food traditions [OC]
After a year of research, debate, and help from many of you in your home regions, I’ve finished a national map of 78 U.S. food regions. Each area is based on distinct culinary traditions shaped by geography, culture, and history, from Gullah and Tex-Mex to Monroe BBQ and Crucian cuisine. I’d love your feedback: Did I miss something obvious? Should a region be renamed, removed, or split further? A version of this map’s headed to print next year as part of a national cultural atlas, so this is the last round of tuning before it gets locked in. Methodology note: This map is interpretive rather than purely statistical. Regions were defined using a mix of historical settlement patterns, agricultural zones, immigration history, regional dishes, and feedback from locals across multiple revisions. This is the 5th major revision, and I’m posting here specifically to invite critique before it goes to print as part of a larger cultural atlas. Chicken Corn Tortilla Soup changed recipes and I'm no longer able to eat my favorite soup :(
I would regularly get this soup but was really disappointed to find that they added cilantro to the recipe. I'm among the population that have the gene that makes cilantro taste like soap. It’s so dark in Seattle now. I made some chicken tortilla soup to lift my spirits.
I followed the Once Upon a Chef recipe here, with a few modifications. I added closer to 3/4 tsp cayenne, a little more cumin, drained and rinsed cans of pinto and black beans, fire-roasted corn, pulled rotisserie chicken, and juice of one lime. Food pantries can only do so much. I’m so tired of hearing that SNAP benefits not being distributed next month “isn’t a big deal” because pantries will take care of it. Here is what I got today:
I waited my turn for 3 hours (no, I’m not exaggerating) and there were still at least 75 people behind me. Here is what I received for a family of 2, and this pantry only runs 1x/month. I’m trying to plan the best way to utilize everything: 2 pounds (almost moldy) limes 2 pounds plums 2 pounds grapes 1 pound frozen strawberries 1 package of spaghetti 1 box sauerkraut pierogies 1 pound ground chicken 12 frozen fruit slushies 1 container of juice 1 jar queso dip 2 loaves of bread 1 package tortillas 1 box banana flavored crackers 1 package sliced pepperoni 1 bag dried lentils I’m very excited to have received fruit, I can barely buy produce anymore. I’ll probably make some sort of soup/chili with the beans and chicken. I can freeze one loaf of bread for later. The limes I have no idea what to do with. I’m thankful for free food, I truly am. I want people to try to understand though that what food pantries distribute is not always foods to make a cohesive meal. I was very surprised there were not canned veggies, tuna or spaghetti sauce. Update: I went to the food bank for the first time
I appreciate all the suggestions and the advice on how to utilize this as much as possible. I’m going through a divorce and my husband took everything (the car, the apartment, the furniture, the money) and is MIA for the most part. I’m living with my best friend and her husband, who have already shared all they can with me. They have good countertops. I have zero countertops. This month, it was go to the food bank or don’t eat. I’m making taco salads every day for lunch with the chicken, beans, rice, romaine, limes, some salsa I had, and some cherry tomatoes from my garden. I figured out how to can, so I made four jars of pickles so far. I had to give away the bread, Oreos, tortillas and pasta to a friend since I’m allergic to wheat. I squeezed limes and made lime juice ice cubes, froze some lime zest, and borrowed a friend’s juicer to make orange juice with all the oranges. I’ve only used two bags of the 6 bags of limes they gave me so I’m going to bring some to work. I also made a pie crust with oats, butter, and sugar and made a pie with the yellow plums. Next week I’m going to use the rice, chicken, green beans, and bok choy to make stir fry, and freeze some bok choy for egg drop soup feat. bok choy the next week. I posted this to encourage people to visit their own food banks. I went to a church food bank in an affluent suburban neighborhood. I know my experience is probably rare. I didn’t even want to tell my friends I live with but they’ve helped me process and cook the food a lot, so I’m sharing this abundance where I can, even though they themselves are not in need like I am. Quinoa in soup is my new favorite thing. I made this Chicken Quinoa Soup with Black Beans tonight and it was ridiculously easy to make and super filling.

I'll list out a few substitutes first... Chicken Thighs: Chicken breasts or use another can of black beans Quinoa: Brown rice, farro, or lentils (cook time will vary) Garnish: Anything you like! Cheese, sour cream, avocado, radish, cilantro, scallions, tortillas, crema, lime wedges, etc! I used a mix of spices, but you could honestly just use your favorite Mexican spice blend or really any combination of chili powder, paprika, garlic powder, cumin, and cayenne powder, depending on what you have available. Chicken Quinoa Soup with Black Beans: Serves: 6 Ingredients: Soup: 6 chicken thighs 2 tablespoons extra virgin olive oil, divided 2 tablespoons chili powder, divided 2 tablespoons cumin, divided 4 teaspoons paprika, divided 4 teaspoons garlic powder, divided 2 teaspoons cayenne powder, divided (more or less to taste) 1 tablespoon butter, optional 1 large onion, peeled and diced 1 jalapeño, trimmed and diced 1 cup quinoa, rinsed 6 cups chicken stock 1 15-ounce can black beans, drained Salt and pepper to taste Garnish (Optional): Sliced radishes Diced avocado Cilantro leaves Sour cream Cheese Scallions Tortilla chips Method: Marinate the Chicken: Pat the chicken thighs dry and place in a bowl. Drizzle with 1 tablespoon extra virgin olive oil. Season with 1 tablespoon chili powder, 1 tablespoon cumin, 2 teaspoons paprika, 2 teaspoons garlic powder, 1 teaspoon cayenne powder and toss to coat. Transfer to the fridge as you prepare the remaining ingredients. It really only needs to marinate for 15-20 minutes giving you time to prep the remaining ingredients and prep your garnishes. Fry the Chicken: Heat the remaining 1 tablespoon of oil in a large pot over medium-high heat and cook the chicken, in batches, for 5 minutes per side until browned and charred all over. Transfer to a cutting board. Note: The chicken will not be cooked through when you remove it from the pan. It will continue to cook in the broth. Drain off all but a teaspoon or two of oil in the pot. Cook the Aromatics: If using, melt the butter into the oil in the pot. Add the onion and cook for 7-8 minutes until it begins to turn golden brown around the edges. Add the jalapeño and cook for 1 minute. Add the remaining chili powder, cumin, paprika, garlic powder and cayenne powder and cook for 45 seconds until fragrant. Add the quinoa and toss to coat and cook for 1 minute more. Simmer the Soup: Pour in the chicken stock and add the black beans. Bring to a boil and then reduce heat and simmer. Season to taste. Finish the Soup: Dice the chicken into bite-sized pieces and add it to the soup. Simmer for 30 minutes or until the quinoa is tender and the chicken is cooked through.
