I been freezing leftover tomato paste in ice cube trays and it change my life
Maybe everyone already know this but I was wasting half the can of tomato paste every single time.. it just sit in the fridge and go bad after few days, such a waste of money What I do now is scoop the leftover paste into ice cube tray and freeze it. Each cube come out to about one tablespoon. Once they frozen I just pop them all into a ziplock bag and they last for months in freezer When a recipe say "2 tablespoon tomato paste" I just grab 2 cubes and throw straight into the pan.. no thawing needed, it melt right in there while cooking I stop wasting almost whole can every time now. Querida Mia Verde - okay, so this is probably one of those items that people are hesitant to pick especially since walang meat at all dito, but believe me, it's so freaking good! Medyo weird at first pag naisip mo na its just a mix of tomato sauce, cheese, lettuce, onion, tomato, jalapeno, sour cream and guacamole lang andun but the way it all blends in together is just chef's kiss 🧑🏻🍳. Match it with Caracoles hot sauce, to elevate it on the next level! Beef Birria Quesadilla - If you have tried yung beef birria taco nila, and enjoyed it but somehow find it wayyy too heavy, you should try this one out. It's still very filling, and sobrang sarap neto. Perfect lang din every bite, hindi din ganon ka-hassle kainin since mas madali hawakan kesa sa Beef Birria Taco. Classic Burger (Add Cheese) - You can't go wrong with Classic burger, it lives up to it's name and there's a reason as to why isa din talaga sya sa most ordered. What do you do with leftover Chipotle in Adobo sauce?
I am not a chef, so this might be a really stupid question. Every recipe I look at seem to call for Chipotle in Adobo sauce, and gives the spicific instruction to use the sauce, and maybe half a pepper. That seems terribly wsasteful. My original thought was to blender it all togheter, then freeze it in separate portion that I can toss in recipes later on. When I was a little girl growing up in the Sonoran desert— RECORD SCRATCH God I hate corny recipe backstories. Here's the best smoky chili ever AND it's actually quick and easy, despite the long ingredient list (scroll to the end of the instructions to see all the "secret ingredients¹" I didn't use): CHILI ULTIMO CINCO ESTRELLAS Ingredients: 5 strips uncooked bacon chopped 1 large yellow onion diced (about 1 cup) 4 jalapeno peppers, diced (deseed if you prefer less spicy) 3 cloves garlic minced (about 1 Tablespoon) 1 lb ground beef (455g) ½ cup tortilla chips, food processed to a powder (1 big handful) Dry spice mix: 1 Tablespoon brown sugar 1 Tablespoon chili powder 1 Tablespoon ancho chili powder 1 ½ teaspoons smoked hot paprika 1 teaspoon cumin 1 teaspoon onion powder 1 teaspoon mexican oregano 1 teaspoon cocoa powder ¾ teaspoons ground black pepper ¼ teaspoon cinnamon ½ teaspoon salt ½ teaspoon MSG ¼ teaspoon curry powder ⅛ teaspoon cayenne pepper Liquid mix: 1 cup beef broth (236ml) ¼ cup ham bone broth² (59ml) 1 cup espresso or strong black coffee (236ml) ½ teaspoon fish sauce 1 tablespoon peanut butter (creamy, not chunky) 1 dried chipotle plus 1 dried ancho pepper, chopped fine ¼ cup tomato paste (66g) 1 Tablespoon worcestershire sauce 1 tablespoon apple cider vinegar Cans: 15 oz can dark red kidney beans, undrained (425g) 15 oz can black beans, undrained (425g) 14.5 oz can diced fire roasted tomatoes, undrained (411g) 7 oz can chili peppers in adobo sauce, undrained (198g) 4 oz can fire roasted green chilis, undrained (113g) Additional Ingredients: 1 cup roast leftover roast (beef or pork), cubed (optional) Preferred toppings, particularly mexican crema (or sour cream), shredded queso fresco (or cheddar) cheese, avocado, and corn chips Instructions: Chop onions and jalapenos, combine, and set aside. Chop garlic and set aside. Prepare dry spice mix detailed above, mix together thoroughly, and set aside. Crumble/process tortilla chips and set aside. Open all the cans and set aside. Prepare liquid mix detailed above (including chopping dry peppers to add to liquid mix) and set aside. Place chopped (uncooked) bacon in a large pot or Dutch oven and cook over medium heat until crisp and cooked through. Remove bacon to a paper towel lined plate and drain half the grease. Add onion and jalapenos, stir quickly, and undercook them (thanks Kevin) for just one minute. Add garlic and cook until fragrant (about 30 seconds). Add beef, breaking apart with a spatula as you cook. Once meat is partially (about 50%) browned, add ground chips and prepared dry spice mix and stir well, cook for about two more minutes. Add all remaining ingredients — liquid mix with dried peppers, all cans, and your cooked bacon (and optional cubed roast), and stir well. Bring to a boil and cook 1-2 minutes, stirring frequently. Reduce heat and simmer, uncovered, stirring occasionally. Simmer for 30 minutes, stirring occasionally, allow the flavors to really get to know each other in the pot. Use the side of your metal stirring spoon to cut any oversize chipotles from the can into smaller bits as you stir. For best results, let cool and refrigerate overnight. Warm back up the next day and serve. Serve with preferred toppings (mexican crema (or sour cream), shredded queso fresco (or cheddar) cheese, avocado, and corn chips are a must!) ¹ If you think I have too many ingredients in this recipe, here are other "secret ingredients" that I decided against: Guinness beer, miso, celery (wtf), black garlic, cloves, coriander, carrots, onion soup mix, mole, turmeric, soy sauce, red wine, whisky, frank's red hot, marmite, berbere, molasses, cilantro, green olives, olive juice, hominy, italian sausage, cheddarwurst, gochujang, mushroom powder, pureed pumpkin, star anise, dried mint leaves ² Ham bone broth: I do this every Thanksgiving, or every time I buy a ham. It's just a ham bone, plus all the fat trimmings from that ham, thrown into an instant pot and not quite covered with water, and pressure cooked for 2 hours. Basically turns into a jelly-like consistency when done cooking and cooled, I store it in a big pickle jar in my fridge. Keeps for months, through the whole cold season. It's a wonderful addition to any soup or stew (red beans and rice, split pea soup, ramen, lentils, stroganoff, this chili, casseroles, pretty much anything savory). If you don't have this available, maybe don't drain the bacon fat, and maybe add a little more beef broth and a tiny bit of lard or butter. I had Hidden Valley Ranch made out of a packet instead of a bottle for the first time, and I get it now
I've only ever had the premixed bottled/packaged junk and never understood this American obsession with Ranch. Really? This is the salad dressing hill you wanna die on? But no. Buttermilk, mayonnaise and sour cream mixed with what I can only assume is dill and garlic-infused powdered crack cocaine make an entirely different beast. I'm in danger, aren't I? What other Ranch secrets have I not discovered? What else can I do with these little paper packets of culinary narcotics? Edit: Y'all are some proper ranch heads. I love it. You can freeze your herbs! Mint, cilantro, and spring onions can be chopped, put in little bags, and put in the freezer.
Whenever I buy cilantro, the bunch it comes in is way too much for me to use at once. Instead of letting it go to waste, I was it, dry with paper towels, chop it up and freeze it! The flavor decreases slightly, but it works perfectly well for sprucing up quick meals, and saves a lot of time to have them prepped in the freezer! I honestly wish I knew this sooner, I wouldn’t have had to throw out so many herbs (and lose $$). Don’t know how well this works with other herbs! Edit: I use the frozen herbs to top off soups, rice, tacos, omelets, pizza, chowmein, literally everything. It works fine for my lazy college student taste buds although i get that the limp texture might make it unappealing to some folks! Freezing in olive oil or some other liquid sounds like one of the preferred methods and though I wouldn’t be able to grab and dump cilantro on pizza that way, I’ll have to try that method out!! Lots of different ways people store their herbs!! thanks for all the tips y’all!! Edit2: Some redditors mention that Rosemary, thyme, sage, basil, parsley, dill, lemongrass, and curry leaves work well frozen too! One person mentioned that mint may not work well with this! Other solutions also include vacuum sealing them before freezing, drying herbs by leaving them hanging at room temperature for a few days, flash drying them in the microwave, putting them in a cup of water with a plastic sandwich bag over the top, or growing them yourself if that method is accessible to you. Another user had success with putting a dry, flat layer of herb in between paper towels, rolling that up, and storing the rolls in a ziploc bag in the fridge until needed. Also freezing as pesto in ice cube tray or freezing as an herb butter is an option, as well as making vegetable stock from herbs and other vegetable cuttings. Non-herb stuff that some folks enjoy freezing include ginger (unpeeled is ok! or minced), the juice and zest of lemon and lime, minced garlic, chillies, tomato paste, canned chipotle in adobo sauce, peppers, and onions! That’s a short summary in case you don’t want to scroll through everything! I’m reading every new comment and updating the summary with new info! Edit3: To clarify, I store mine in a ziploc bag in the freezer! Didnt mean to imply to put them straight in (: Literally so many unexpected things can go in the freezer, like cheese, tofu, baked goods, rice, meats, curries, nearly all fruits and veggies, it’s worth mentioning that next time you have something that’s going bad soon, you can google to see if you can freeze it to use later!! You’d be surprised at how many things are freezable and could potentially reduce your food waste! The tricky part is that if something has a high water content, it will come out more mushy when thawed, but then you can learn what dishes they’ll work in and what dishes they won’t pretty quickly! Chipotle peppers in adobo sauce. The secret to working with this great stuff.
If you've ever used this stuff you know how great it is. But you also know that you can't possibly use the whole can. so for years I struggled. Then I read online (sorry internet source it was a while ago) that you can take the contents of the can, throw it in a blender, puree it and use it like that. And when you've used what you want you freeze the rest. They say to put it in tablespoon sized (or teaspoons for the faint of heart) on wax paper or parchment paper on a little tray. Freeze it and then transfer to a plastic bag. I think it's even easier if you just spread it out in a thin layer and then cut it into squares. Then put those in a plastic bag. When you want to cook just throw them in a hot pan and they're liquid in no time. I think you get about 10-11 tablespoons worth, enough to flavor a bunch of stuff. Ground beef, rice, I like it in eggs. Anything you want to add some heat and Mexican flavor to. And you'll find it in the Mexican aisle, in a small pull top can.
