AITA for not sharing my chocolate chip cookie recipe.
I (22F) recently broke up with my boyfriend (28M). It’s only been a couple of days. The list of reasons why could go on, so I’m just going to skip that. While we were dating, I would often bring over my baking. It’s my passion and my way of showing love. I often brought my favorite cookie recipe, which has been in my family for decades. Salted chocolate chip cookies
Hey y’all! Here is my salted brown butter chocolate chip cookies. If you haven’t tried, add malted milk powder to the flour. I use about 50-60g for this recipe. Ingredients: 340g flour 227g butter 200g brown sugar 100g white sugar 60g malted Milk powder 2 eggs 1 tsp salt 1 tsp baking soda 1 tsp vanilla extract 100g chopped Chocolate bar 100g semi sweet Chocolate Chip Flakey sea salt Directions: Brown butter and set aside til room temp. Combine dry ingredients and set aside. Cream sugar and butter. Add in dry ingredients and mix til almost combined w some flour streaks left Add chocolate chips n chopped chocolate Refrigerate minimum 1 hr Bake at 375 for 9-10 minutes To get the cookies thin, while the cookies are baking, about 6-7 minutes in, take the tray out and bang it against the counter/baking rack in the oven to help flatten out the cookie. Once the cookies are done baking, bang the tray against the countertop again to create more spread. The results of my unscientific study of nine other chocolate chip cookie recipes
About a month ago, I posted about a chocolate chip cookie baking frenzy and general impressions about the various recipes. In response, this great baking community suggested trying other recipes, so I did. Nine cookie recipes later, here are the scientific results. (All cookies were chilled for at least 24 hours before baking; and all were topped with Maldon salt.) 1) The Joshua Weissman recipe is EXCELLENT. The recipe itself is very easy, but something about the sugar/fat/flour ratio, and the potato chips, yielded a very delicious and addictive cookie. Crispy, chewy, and perfectly salted. 2) Not surprisingly, the test subjects also enjoyed Sally’s Brown Butter Chocolate Chip cookies and Handle the Heat’s Brown Butter Toffee Chocolate Chip cookie recipes. These are solid recipes and yielded very beautiful cookies with attractive bumps and ridges. 3) The Claire Ptak recipe with all egg yolks was our second favorite in this batch (with Weissman’s being our favorite). You can taste the richness of the three egg yolks, without feeling like it was too much. Also, FWIW, these cookies tasted even better the second day. 4) I hate to say it, but none of the test subjects loved the Alton Brown cookies. Perhaps I messed up the bake somehow, but the cookies tasted too biscuit-y. I was tempted to make another round of these cookies to see if my results were off, but decided to move on. 5) The Dominique Ansel cookies were polarizing. Some test subjects loved them and gobbled them up; while others were underwhelmed, stating they were a little boring. All agreed these cookies are absolutely gorgeous and impressive looking because of their size. 6) If you are looking for an oatmeal chocolate chip cookie, the brown butter Ambitious Kitchen one is very good. The nutty, toffee notes paired well with the chewy, oaty texture. 7) Our unscientific top three of the seventeen recipes tried? 1) Jacques Torres; 2) Claire Saffitz; 3) Joshua Weissman. The results of my unscientific study of eight chocolate chip cookie recipes.
I spent the last two+ months in a chocolate chip cookie baking frenzy, much to the delight of my family/test subjects. They are the recipes from Jacques Torres, Claire Saffitz, Vaugh Vreeland, J. Kenji Lopez-Alt, Stella Parks, Joanne Chang, Alison Roman, and Millie Peartree. Here are some takeaways based on our tasting notes. I made several batches of three favorite recipes from Jacques Torres, Claire Saffitz, and Vaugh Vreeland. For me, Jacques Torres’s recipe is truly the GOAT. Buttery, decadent, notes of toffee, mostly chewy, some crispiness on the edges, and an overall satisfying mouth feel. The world feels better after eating one of these with a cup of hot tea. Claire Saffitz’s recipe is a close, close second, with one subject (aka my son) preferring it over JT’s recipe. This is an absolutely fantastic cookie. The edges slightly ripple on their own (no pan banging necessary), resulting in crispy edges, a chewy inner circle, and a soft, molten (when still warm) center. It’s also mich smaller than the JT cookie and feels like less of an event to eat, which is nice sometimes. I will have this one on constant rotation. Vaugh Vreeland’s recipe, which has homemade toffee, is a winning recipe as well. The toffee is super easy to make. I was worried it would err on the too-sweet side because of the toffee, but it doesn’t. The combination of toffee, brown butter, salt and chocolate is delicious. The other recipes were quite good, but didn’t sing (at least for me and my test subjects) the way the aforementioned ones did. Some general comments: The JKL one, while delicious, seemed a bit similar to the JT one in terms of style, and we preferred the JT one. The Joanne Chang recipe from Pastry Love is definitely the one for people who like crispy, thin cookies. I expected not to like them (as I like chewy cookies), but they were very tasty and made me see the argument for this style of cookies. In terms of recipe execution, I tried to follow the recipes as closely as possible, though I didn’t splurge for Valrohna feves. Instead I used Callebaut callets, and chopped Trader Joe’s pound plus dark and milk bars. And EVERY recipe was topped Maldon sea salt because that’s just mandatory! Best chocolate chip cookies ever- seriously this is what replaced my grandmothers recipe.
They should be sort of wet (almost done looking) when pulled out of the oven, let cool and enjoy a gooey soft cookie! 🍪 Instructions Preheat oven to 375 degrees Fahrenheit (190 degrees Celsius). Line three baking sheets with parchment paper and set aside. In a medium bowl mix flour, baking soda, baking powder and salt. Set aside. Cream together butter and sugars until combined. Beat in eggs and vanilla until light (about 1 minute). Mix in the dry ingredients until combined. Add chocolate chips and mix well. Chill dough! Roll 2-3 Tablespoons (depending on how large you like your cookies) of dough at a time into balls and place them evenly spaced on your prepared cookie sheets. Bake in preheated oven for approximately 8-10 minutes. Take them out when they are just barely starting to turn brown. Let them sit on the baking pan for 5 minutes before removing to cooling rack. Finally perfected my chocolate chip cookie recipe
Inspired by “The Cookie” at Metropolitan Market in Seattle - this recipe is 6 years in the making: 2 sticks (one cup) salted butter, softened 1 cup dark brown sugar 1/2 cup fine granulated sugar 2 eggs 1 tbsp vanilla (I like using vanilla bean paste) 2.5 cups all purpose flour 2 tsp cornstarch 1 tsp baking soda 1/2 tsp baking powder 1 tsp salt 1 cup Belgian dark chocolate callets (I used Callebaut) 1 cup chopped bittersweet baking chocolate 1 cup semisweet chocolate chips 2 cups toasted chopped pecans (toast at 410 degrees F for 8 minutes or so, but watch closely as they can go from toasty to burnt quickly) Maldon smoked sea salt Preheat oven to 410 degrees F. Cream together butter and sugars. Beat in eggs and vanilla. Add in flour, salt, cornstarch, baking powder, and baking soda and mix. Stir in chocolate chips and nuts until incorporated. Scoop into fairly large cookies (I use my cookie scoop, but I’d say it’s about 1/4 cup of dough) and sprinkle with smoked salt. After a bunch of testing, I finally found the best Chocolate Chip Cookie Recipe
Over the past few months, whenever I saw a recommended chocolate chip cookie recipe, either here on Reddit or online elsewhere, I saved it so I could try it next time I was in the mood for cookies. Well, my list of recipes to try eventually ballooned to over a dozen, so I figured I’d bake them all at the same time and compare them head to head, so I can definitively find my preferred chocolate chip cookie recipe. Most chocolate chip cookies are made using the same basic ingredients, but differ slightly in the ingredient ratios, techniques, and baking method. After comparing the ingredients list on each recipe I had compiled, I narrowed my list down to 8 recipes since some recipes were nearly identical. I also made sure not to deviate from the specified directions on each recipe. Some used weight measurements for ingredients while others used volume measurements. I made sure to use whatever the recipe called for, but in the event that both weight and volume were specified, I went by weight to measure ingredients. My goal was to find my ideal cookie: flavorful, well-balanced, a little cakey, and chewy - I do not like crispy cookies. After a few days of baking, here’s how I would rank each recipe from my most favorite to my least favorite: The Ranking Sally’s Baking Addiction (Brown Butter) Sally’s Baking Addiction (Chewy) Anna Olson BROMA Bakery Mom’s Recipe (from Reddit) Hilton Hotel Cookies America’s Test Kitchen New York Times (Jacques Torres) Thoughts on each recipe Sally’s Baking Addiction (Brown Butter & Chewy Versions) – Both versions nailed the texture I prefer, but the brown butter version has a slight edge for its richer, nutty flavor. America’s Test Kitchen – I had high expectations since these were highly rated by others, but unlike other brown butter recipes, this one doesn’t allow the butter to cool before mixing, resulting in a crispy and thinner cookie. If you like crispy cookies I can see why this would be a favorite choice. BROMA Bakery – Better than America’s Test Kitchen, but not as good as Sally’s. Hilton Hotel Cookies – Surprisingly good! However, the unusual ingredient list and odd measurements make it harder to recommend as a go-to recipe. Anna Olson & Mom’s Recipe (from Reddit) – If you’re looking for a solid, classic cookie without extra steps like brown butter or extended chill times, these are great options. Simple, reliable, and delicious. New York Times (Jacques Torres) – This was the only one I wouldn't recommend. The cookies are huge, don’t bake evenly, and don’t taste as good as the others. Final Verdict 🏆 Best Overall (my new go-to recipe): Sally’s Baking Addiction: Brown Butter Chocolate Chip Cookies 🍪 Best Classic Recipe (easy, quick, and delicious): Anna Olson or Mom’s Recipe ⭐ Honorable Mention: Hilton Hotel Cookies This was such a fun experiment, and now I have a definitive favorite cookie recipe! I use both dark and milk chocolate in mine and chill overnight. Add some flaky sea salt post baking. AITA for not sharing my full cookie recipe with my family, particularly my sister?
I (21F) LOVE to bake. I've been creating my own recipes since I was 11 and have created a few really great ones. When I was about 16, I created a chocolate chip cookie recipe that has a pretty standard base. This basic recipe is terrific and my family has access to it. What sets my batches of cookies apart from theirs are 3 very specific secret ingredients that I don't want to share. These ingredients make my cookies "almost crack-level addictive", according to the people who regularly pay me to make cookies for them. My recipe has won a few baking competitions and I am extremely proud of it. My family, on the other hand, aren't great bakers. My father is, but doesn't do it often. As I stated previously, they have access to and use my basic recipe, minus my special ingredients. Everything else on the recipe is exactly the same, and tastes amazing, just not exactly like mine. My family, in light of me finally moving into an campus apartment, have been insistent on me giving them the full recipe. I don't want to for a couple of reasons. The first being that my sister, who is the one who makes the other recipe the most, has a really bad habit of claiming ideas that aren't hers. She's passed a few of my other original recipes, that I've taught her to make, off as her own recipes and will brag about how long it took her to create the recipe, then give it away. The second is that I want to have a secret recipe book to pass on to my children. A tradition that is in my extended family is to create a book of original recipes to pass on and be the sole provider of that dish for holidays and whatnot. No one else knows about what's inside until the creator shares it, dies, or gets married. I want to open a bakery when I'm older with those recipes. The last reason is I don't want to lose my little cookie business. My sister has made "jokes" that if she ever gets the recipe, she's giving it to everyone I sell cookies to so that they don't have to pay me anymore. That weekly order-filling session is sttess relief for me and I don't want to give it up. I know it sounds incredibly selfish of me to want to keep it to myself, but I really want this to be my thing. I've been hearing a lot that I'm selfish and should share with family and I shouldn't ever have secrets. So I've started second guessing my decision.
