My dad has cancer and cannot chew his food, any recipe ideas?
As the title says, my dad has stage 4 pancreatic cancer and chewing makes him gag. The main foods he can eat right now are: top ramen (crushed up so he doesn’t have to chew it), yogurt, protein shakes, and spaghetti-os for some reason. He is repulsed by milk, cheese, and ice cream, yogurt seems to be the only dairy he can eat, he is sensitive to smell, allergic to onions, and meat overall seems to be a no-go. I’d like to be able to make him some good tasting food that also is very high in calories as he is struggling to take enough in right now. Any ideas at all would be so appreciated, thank you ❤️ Addendum: His doctors simply want him to consume as many calories as possible right now, the specific vitamins and nutrients come secondary to that from what I have been told. submitted by /u/cam956 to r/Cooking [link] [comments]

Has anyone else noticed that every major food brand quietly changed their recipes between 2019-2022 and nobody is talking about it?
I'm not talking about shrinkflation. Everyone knows about that. I'm talking about the actual ingredients and formulas changing across dozens of major brands in a very narrow window of time, with zero announcement. I started noticing because my kid refused to eat Goldfish crackers about a year ago. He'd been eating them his entire life. Wouldn't touch them. Said they "taste weird now." I thought he was being a picky kid. Then I looked at the ingredients on an old box I found in our pantry versus a new one. Different. Not just rearranged. Different ingredients. So I started going down the rabbit hole. Coca-Cola. Ritz crackers. Oreos. Doritos. Hellmann's mayo. Brand after brand after brand, people online are saying the same thing — "this doesn't taste like it used to." And in almost every case, if you compare the ingredient panels from 2018 to now, something has changed. Here's where it gets interesting. During COVID, the FDA quietly relaxed a bunch of labeling and ingredient substitution rules to "keep supply chains moving." Companies were temporarily allowed to swap ingredients without updating their labels. That "temporary" flexibility was supposed to end. Did it? Has anyone actually confirmed these companies switched back? I can't find a single article in any mainstream outlet investigating this. Not one. You'd think a consumer journalist somewhere would find it interesting that virtually every major packaged food in America tastes different than it did five years ago. But nothing. Complete silence. I'm not saying it's some grand coordinated conspiracy. Did you have a "Poor Person" or "Just Getting By" recipe when you were young that is still a comfort food or favorite now, as an adult?
I will start with mine. When I was young, my Mom and I had just moved to a new town and she was going through a divorce with someone that did not want to pay child support, so times were tough. She made several recipes that were off the cuff, but good. One that I remember fondly is "Potato Chip Sandwiches". 2 Slices of bread a Handful of potato chips, preferably ruffles a little spread of mustard At the time I did not know that we were having problems. But to this day, about fifty years later, I will still make these sandwiches for myself. I like them and the bring back fond memories of the togetherness we shared. This is a life saver for those who have big families at home.) There is actually a recipe for bisquick on that link above. For the lazy: 8 Cups Flour 1 1/4 Cups Nonfat Dry Milk Powder 1/4 Cup Baking Powder 1 Tablespoon Salt 2 Cups Shortening Combine flour, milk, baking powder, and salt in a very large bowl. Cut in shortening until it resembles coarse cornmeal. Store in tightly closed covered container in a cool place. Makes about 10 cups. If you are going to make your favorite Red Lobster's Old Cheddar Bay biscuits: Use 4 cups of Housemade Bisquick Mix "Add 1/4 tsp. garlic powder to the mix, cut 6 tbsp of cold butter (for 4 cups) into the mix, use 1.33 cups milk instead of water, 1-1/2 cups of shredded cheddar cheese, no need for the onion powder with the butter, and you're spot on ;)" - former RL employee Also if you wanted to taste like in the restaurants: After baking the biscuits from the oven. 1/2 cup butter, melted + 2 tbsps garlic powder or dehydrated garlic granules (for a more concentrated) flavor and 2 tsps parsley flakes. Mix them together until well combined. Then brush them on warm biscuits. ***** This may be the old Olive Garden's Alfredo Sauce: Olive Garden Alfredo Sauce. Ingredients 1 1/2 cup milk 1 1/2 cup heavy cream 1/2 cup imported Parmesan cheese, grated 1/2 cup imported Romano cheese, grated 6 egg yolks from fresh jumbo eggs Salt and black pepper to taste Procedure HEAT milk and cream in a heavy bottom saucepan until it begins to simmer. Turn off heat. Slowly whip in cheese, then remove from heat. PLACE egg yolks in a separate bowl and slowly whip in a portion of the hot milk and cream mixture. Slowly add egg yolk mixture back into remaining cream mixture. Place back on very low heat and continually stir until simmering. Take sauce off heat so it thickens. (This will increase temperature of egg yolks, known as tempering). SEASON to taste with salt and black pepper. nobody has ever oversalted food from using salted butter in a recipe
gtfo. There is ONE-THIRD teaspoon PER STICK of butter. If your food was ever made worse by salted butter, that was a YOU problem. When taste is sub-par on anything it's almost always LACKING salt. Don't give me the "bUt MaH bAkED gOoDs" crap. You can double, if not triple the salt content in many recipes with zero issues (miss me with these 5 cups flour but 1 tsp salt bread recipes) Edit to add: I'm an experienced from-scratch great cook/baker. Let's play a game. List a food/ingredient that you absolutely hate, and someone else replies with a recipe that might change your perspective on that food/ingredient.
For example, I hate liver. To me, it has a nasty bloody, mineral-y flavor and the texture is akin to an eraser. Surely there's some dish out there that might make me like it? Also, if you can't eat a certain food due to allergic or religious reasons, don't list it. Making shrimp 50 different ways will still kill you. But it will be delicious no doubt. edit: If you have the cilantro soap gene then there’s nothing we can do for you. Sucks to suck I guess.
