My crazy MAGA coworker flips out when I talked to her 10yo daughter about Mulan
I (19F) work part time in childcare at my church with a middle aged woman (I’ll call her Amy) who I thought was very sweet at first, until her true self started to show. She has a 10 year old sheltered, homeschooled daughter who absolutely adores me (I’ll call her El), and I’m essentially her only friend. Here are some things that I’ve learned about this family when I went over for a “play date” with El - El co-sleeps with her parents and doesn’t have a bed of her own - They use reuseable, cloth toilet paper in the bathroom - They’re all vegan and the house reeks of spoiled vegetables - El isn’t allowed to watch certain movies and shows, for example, Frozen 2, because it contains spirits - Amy is borderline racist; you know, one of those people who thinks that they aren’t because “they have friends who are black!” But I noticed that kids in our classroom with different ethnicities always got in “trouble” way more when I was working with Amy, even if it very clearly wasn’t their fault. So yeah, kind of weird and kind of nasty. I started distancing myself from her, but again, her daughter loves me, so it was difficult. Anyway, one day at work, El asked me who my favorite Disney princess was, and I said it was either Belle or Mulan. She said “who’s Mulan?” And I started explaining her story, because Mulan one of my favorite movies of all time. Amy overheard and pulled me aside, telling me that El wasn’t allowed to watch Mulan because it promoted feminist and cultural ideals that she didn’t want in their household. What. I just kind of laughed and shrugged it off, thinking that was it, until the next morning, when I received the following text: Good morning:) | just wanted you to know that I absolutely adore you [my name] :) Our views on political/some social issues are completely opposite, and that's ok! You have been raised a certain way, and I've lived a whole life at this point lol, so our views and beliefs have been shaped differently. Despite that, none of those beliefs change our salvation status with the Lord, and that's what's most important! El isn't exposed to a lot of things for good reason, and some might not make sense to you, which again is ok :) Just know that although we differ in views on certain things, we love you for you, and not your political or social views. And I am always open to conversations about both, when it's between you and me. El doesn't need to be around for those chats :) You are loved! I hope you have an awesome Wednesday! Oh man. I genuinely feel bad for El, because she’s a sweet kid and loves to read just like I did at her age, but she’s extremely limited in what forms of media she’s allowed to consume, and she’s completely homeschooled, so the only information she’s getting is from Amy; no outside opinions or other kids to socialize with. Where are you on Frozen Vegetables?
I avoid frozen vegetables, even single-ingredient, due to risk of cross-contact. If there is one that's labeled gluten-free, I would use that. But, I am yet to find any in the U.S., and I don't think it exists. (Please correct me if wrong!) I've seen celiac people go either way, so I wanted to ask you all where you stand to get a feel for general community stance. BTW, I understand that this decision ultimately comes down to personal circumstance, like sensitivity and risk tolerance. So, do you eat single-ingredient frozen vegetables that are not labeled gluten free? Also, if you have experiences with specific brands, I'd love to hear that too. For me: pearl onions. I simply can not be bothered to peel the "fresh" version given that all of the applications I have for them are also labor intensive (the Beef Bourguignon I'm making tomorrow is front of mind). The slop I have been eating every day for the last two years.
About 950 calories 110 grams of protein 35 grams of dietary fibre Edit: Since people are asking for the recipe: Ingredients 2 Onions 650g lean beef mince 1kg chicken breast 1kg mixed frozen vegetables 1kg black lentils 1) Cook the lentils by simmering in beef stock for 15 minutes (I would advise washing them first but I don’t judge) 2) While that is going cut the chicken into bit size pieces. I butterfly the breast, cut length wise into strips, cut those strips into cubes. 3) Season the chicken 4) Dice the onion 5) Brown the onion to soft 6) Add the mince and season it 7) When mince is brown add the chicken 8) When chicken is cooked add the frozen veges with some water and close the lid 9) Once the veges are steamed and finished add the lentils. 10) Leave lid off until as much liquid has evaporated off. Seasonings: salt, pepper, cayenne pepper, paprika, chilli flakes, garlic, ginger. If you want to cut out unnecessary calories ditch the onions, I added them as a treat to myself :) Edit 2: To answer some commonly asked questions Do I enjoy it? Yes. Am I autistic? Not to my knowledge. Price? About R300/$17 for 7 meals. Is this much protein bad for you? This thread has given me reason to do some research, but it seems like definitely yes. Do you not get sick of this? No. Are you jacked? Not yet. Why? This is not just protein or nutrition maxing. I enjoy cooking (although I am still in a phase of improving), I just do not like cooking every day. I am not sick of this meal. Getting all of my health goals down in one meal allows me to splurge in other meals. I do enjoy eating, I am just wired in a way that I do not have to enjoy every single meal. Do I hate myself? No. Am I a dog? Woof. Why did you make it so dry? I did not know there where other options... Why ziploc bags? Easy. Edit 3: Why are you eating out of a dog bowl? This is a cooking pot my grandmother gave me ): Are you in jail? Not yet. I AM NOT AUTISTIC OR A DOG I AM A HUMAN BOY Edit 4:People are asking why I started doing this. I got depressed and gained 20kg in less than 6 months. Then I got depressed because I was overweight. So I decided I was going to try gymmiing. Did not do it very smartly. An hour of cardio a day (incline treadmill max height big speed), 6 days a week of strength training. I ate very little. Mostly ate chicken breast - however much was needed to reach protein goal. When I had to money I would instead do biltong. Of course there were meals basically every day that I couldnt get out of. Most days I would do my best to eat only 4 chicken breasts and nothing else. I lost the weight very quickly and started chasing a number on a scale. Did not help with the being depressed part - especially as I was malnourished. Ended up hating chicken breast, I could feel myself actually getting stupid (brain fog), in the gym if I could do 20 reps in the first set I would be lucky to get 3 reps in the second. Got to a point where I just said fuck it and stopped eating healthy and gymming altogether. Gained about 5-10kg again after the fact. Then I did not like how I looked in the mirror. Decided to do things more healthily. My relationship with food, although unorthodox, is healthy now. I realize now that I was probably on my way to an ED. And do you know what stopped me from developing one? I FUCKING HATE CHICKEN.I could not do it anymore. I am now healthy and happy... Edit 5: I will not lie to you guys, the farts are bad and it is a problem. Edit 6: Autistic people are real, can be boy, and are not dogs, and I also support the gays. LPT: Frozen vegetables is the ultimate shortcut in cooking
I have been dealing with depression for a long long time in my life. Sometimes I wouldn't think about feeding myself for weeks. But, this one thing has changed things moumentarily. Don't get me wrong. All those microwavable meals and instant ramens are always in my pantry. But there is one thing that really helped me to break my depressive routine. I could so easily cook meals and prepare a main dish without thinking more. I don't have to make sure that the vegetables haven't gone bad by sitting in the fridge for too long. I don't have to think about if I can use the whole head of cauliflower before it goes bad. I don't have to think about chopping the vegetables. And I don't have to think about dealing with the rotting remains of the vegetables. I just want to highlight something that has really worked out wonders for me. Hope some of you can benefit from it. Love to all. EDIT: For those asking for some easy recipes, here a few of my tried ways: One pan rice and veggies: Fry some Onion, Garlic and Spices. Add frozen veggies, I use cauliflower, green bean, peas. Add some washed rice along with water or stock. Cook at low flame or in pressure cooker. Vegetable soup: Fry Onion, Garlic and spices. Add frozen veggies, Stock and let it simmer. Daal: Fry Onion, tomato and spices. Add canned lentils and frozen veggies and water and let it simmer. Am I bad mom for feeding my kid frozen vegetables and leftovers several times a week?
So my mom group got on the topic of toddler meals at our play group today. We were all talking about how to get kids to eat veggies and toddler meals. I said that I feed my daughter quicker meals usually and lots of leftovers in a new form. So think tacos from scratch one night and then quesadillas for another meal a day or two later. I also mentioned I feed her lots of frozen veggie mixes and she seems to like that because of the variety and that some days she eats different veggies and doesn’t eat the rest but she still eats all of them depending on the days. The other moms were horrified that I feed her frozen vegetables and not make everything from scratch with fresh veggies. I’m the only single mom and I think they’re being a little harsh. Maybe they don’t understand how hard it is to make elaborate dinners with no one else there to keep an eye on their kids. I also know they can afford to shop at like Whole Foods and buy only organic fruits and veggies. That’s just not possible for me. I’m on food stamps and while I’d love to be able to afford that, I just can’t. I already spend more on certain items to accommodate for my daughter’s food sensitivities. But am I wrong? Are frozen vegetables bad for kids? Edit: Thanks to everyone who responded! I gave up responding to everyone. Just a lot more responses than I expected. I feel much better and am trying to be more confident in my parenting choices. I’ve learned a lot from ya’ll about frozen veggies and organic vs regular produce and I’m thankful for everyone who helped educate me. I will continue to buy whatever food I want for my kid and be thinking of ways to stand up for myself to the other moms. I’m definitely rethinking my friendships with them and whether I really need petty judgements in my life. It’s hard to make mom friends, but it might be better in the long run to find my tribe instead of people who don’t support me. That’s what mom friends are supposed to do after all. Is it okay if 90% of my vegetables are frozen?
For practical & financial reasons, I've more or less stopped buying fresh vegetables. Aside from my Costco-sized weekly tub of spinach, the occasional cheap cucumber, onion (that gets cooked anyways), and canned tomatoes, all the veggies I eat are from a mixed bag of frozen veggies, thawed overnight in the fridge. Is there any issue with this? Healthier: I recently learned that studies have found that some frozen vegetables give you MORE nutrients after being frozen, while others give you less. But overall, frozen vegetables that come in big packs will give you nutritional value that is equal or greater than "fresh" vegetables from the supermarket, which have gone through transportation and nutrient loss. (BBC science investigation) Cheaper and time-saving: If you buy a big pack, you can get 4 or 5 different items already prepared for a very low amount. I bought two big packs of frozen vegetables for 30 to 50 meals each for about $8 at Costco. It is very difficult to waste vegetables that are frozen, and yet vegetables that you buy yourself and keep in the fridge can spoil rather quickly if you don't have a well-rehearsed routine. Having a variety pack saves you so much prep time, as well. Microwave? It seems that still too many people either scoff at the microwave, or have unscientific beliefs about it. Actually, microwaving vegetables is healthier than steaming, which is often regarded as the healthiest way to eat vegetables. (Harvard Health) Using a tiny bit of water with vegetables in the microwave, you are essentially steaming the vegetables inside out, very rapidly. Of course, it is more delicious to stir fry your vegetables or bake them, but what if you don't have the time? A microwave takes only 4 to 5 minutes to cook, and the only prep is putting it in a dish, adding a small splash of water, and covering it. Cheaper: even though canned vegetables seem cheap because they’re a dollar per can or less, frozen bags of veggies typically offer a greater quantity for an equivalent price. Pro tip: buy in bulk! Frozen veggies last a long time. Separate into meal-size portions before freezing to avoid the “single huge lump of frozen peas” problem. Healthier: if you look at the ingredients on canned vegetables they will usually contain preservatives and added salt, whereas the ingredients on frozen bags of vegetables almost always are just the vegetables themselves. There is also a small long-term health concern with acidic canned foods (like tomatoes) sitting in your pantry for too long, meaning like 18+ months. (Not a food expert, maybe someone can explain.) Fresher: because veggies are frozen at peak freshness they remain that way until they’re cooked and eaten, and don’t need preservatives to stay that way. This means their color is usually more vibrant and their flavor more intense and natural, and it also means you will receive more nutrients from them. As for cooking veggies, the water you cook them in is what saps them of their nutrients. This is why, in general, the less water you cook them in the more nutritious they will be. So, microwaving or steaming is better than boiling. (And go easy on the oil and dressings. TIL that there is as much vitamins and nutrients in frozen vegetables as in fresh ones. This is due to the fact that they have been quickly frozen after picking to preserve their properties, unlike "fresh" ones that can stay for days in a storage or display.
