Who remembers/misses Pineapple Upside Down Cake?
This dessert was common at our family potlucks and holiday seasons up to the early 70’s. I think my mother made them because the easy to follow recipe was on the side of the yellow cake mix box. They stopped appearing at our parties after she learned how to bake blueberry cheesecake. I’ve been craving a PUDC for a while but haven’t wanted to bake one myself because I’d be stuck with having to eat a whole cake by myself. That is way too much sugar for one person. Who else had a mom/relative that made these? LIFE HACK: I came up with a single serve waffle version of PUDC.
