It does feel like mostly the same stuff year after year, occasionally swapping out smash burger, hot chicken, and taco spots. But I guess thats just reflective of the LA food scene not evolving much in the last few years. A little sad I'll be missing the Italian sandwich spot since I didn't go last year.

Last year I made a smash burger power ranking for Baltimore and set out to try the places people recommended most. After an unreasonable number of burgers, I’ve landed on a clear winner: Dylan’s Oyster Cellar. Tucked into Hampden, they absolutely nail the fundamentals. The patties hit the perfect crispy, wispy edge level while most spots never quite get there. Funny enough, it’s an oyster bar and I still haven’t tried the oysters. I finally worked up the nerve to order the double smash and it completely delivered. If you’re in Baltimore and want a smash burger that actually lives up to the hype, this is the one. I was taught to never press or squeeze a burger when cooking it because that squeezes all the juices and flavor out. Why do so many places now smash their burgers? wouldn't that squeeze all the flavor out of it? Is it possible to cook a smashed burger rare? How could I tell if a smashed burger is rare? What is the point of smashing the flavor out of a burger? It just seems like a lazy way for low-skill cooks to easily cook crappy low quality meat. Why smash a perfectly good burger? The title really says it all. There is nothing redeemable about a smash burger and it actively makes burgers worse. A burger is a sandwich made with ground beef patties (ideally using 75/25 beef), with condiments, optionally cheese, and served on a split bun. So why in the world would I want a burger that actively gives me less of the main thing that makes it a burger? You know why every smash burger is a double? Because if you don't do that you can't even taste the meat. So it's clear that the people making smash burgers even know that it's not enough. On top of that the meat is just worse. It's a flat, half burned, disc, that has been smashed so thin and so spread out that there are literally holes in the middle of it. And what for? In the name of a "crisp crust." Guess what? If you properly cook a reasonable sized patty then you can achieve a crisp crust without having to make your meat as this as a piece of paper. It's called having actual technique and cooking it properly. I read every comment from my last post and I followed links or looked up and watched some great videos that were suggested. Thank you to all as I learned a lot. I got hungry after work and ended up going for it well before dinner and forgot to season the ground beef. Not actually upset about it. I ended up just seasoning with course salt (George Motz 💪). Things worked out great with burger shape which was my main frustration last time. My burger was still not truly charred/crusted (max heat this time so will wait longer next time). Tell me you can’t cook a burger without telling me you can’t cook a burger. It has taken cooking away from burgers and turned them all into McDonald’s but 5x more expensive. Have the courage to eat a burger rare to truly mid rare at most and actually taste the meat instead of a vehicle for toppings. Every time I get a smash burger at a restaurant and especially when it’s $20+ I wish I had just gotten it at five guys Edit: the food safety bit about rare burgers is fair.
