I finally found the perfect cookie recipe.
This is my new recipe and the best one so far. 2 eggs. 163g brown sugar. 155g sugar. 254g butter. 390g flour. Vanilla (i don’t measure tbh but i add a lot). 1tsp baking powder. 1tsp baking soda. I start by browning the butter then let it cool completely. I add the sugar and vanilla then eggs then flour… this is the base recipe the i add flavors depending one what i want ( i can really use some flavors ideas) . my apologies for not adding the recipe the first time i posted - i didn’t see anywhere that it was against the rules. i added recipe screenshots from my notes app since that’s where i keep a lot of my recipes, but i’ll also add the recipe here in case this is easier to read: brownie cookie dough: 56 grams unsalted butter 90 grams chocolate chips 12 grams dutch processed cocoa powder 1 tsp espresso powder 90 grams light brown sugar 1 egg, room temp 80 grams all purpose flour 1 tsp baking powder 1/4 tsp salt espresso chocolate chip cookie dough: 113 grams unsalted butter (browned, then cooled) 125 grams light brown sugar 20 grams granulated sugar 1 egg, room temp 2 tsp espresso powder 1 tsp vanilla 160 grams all purpose flour 1/2 tsp each (baking powder, baking soda) 1/4 tsp salt 110 grams of chocolate chips + more to top brownie cookie dough: microwave the butter with the chocolate chips and stir until smooth. add in your cocoa powder with espresso powder. then add in light brown sugar with 1 egg and whisk vigorously. lastly, fold in your all purpose flour with baking powder and salt. cover and let sit in the fridge until the other dough is done. now the espresso dough: brown your butter and let cool completely, then combine with both your sugars. whisk in 1 egg, espresso powder, and vanilla. then finally, fold in your flour with baking powder, baking soda, and salt and 110 grams of chocolate chips (i sometimes like to use a mix of dark and semi sweet). now combine and marble the dough by alternating bits the espresso and brownie dough into a 3 tbsp cookie scoop. repeat until all the dough is done and add extra chocolate chips. then stick in the fridge for about an hour. bake at 350 for about 14-17 mins (if you make using a smaller scoop, they’ll likely need less time so just keep an eye on them until golden). let it cool for about 15 mins on the pan after removing from the oven. then transfer to a wire rack to let cool completely and top with flakey sea salt (optional, but recommended). The results of my unscientific study of nine other chocolate chip cookie recipes
About a month ago, I posted about a chocolate chip cookie baking frenzy and general impressions about the various recipes. In response, this great baking community suggested trying other recipes, so I did. Nine cookie recipes later, here are the scientific results. (All cookies were chilled for at least 24 hours before baking; and all were topped with Maldon salt.) 1) The Joshua Weissman recipe is EXCELLENT. The recipe itself is very easy, but something about the sugar/fat/flour ratio, and the potato chips, yielded a very delicious and addictive cookie. Crispy, chewy, and perfectly salted. 2) Not surprisingly, the test subjects also enjoyed Sally’s Brown Butter Chocolate Chip cookies and Handle the Heat’s Brown Butter Toffee Chocolate Chip cookie recipes. These are solid recipes and yielded very beautiful cookies with attractive bumps and ridges. 3) The Claire Ptak recipe with all egg yolks was our second favorite in this batch (with Weissman’s being our favorite). You can taste the richness of the three egg yolks, without feeling like it was too much. Also, FWIW, these cookies tasted even better the second day. 4) I hate to say it, but none of the test subjects loved the Alton Brown cookies. Perhaps I messed up the bake somehow, but the cookies tasted too biscuit-y. I was tempted to make another round of these cookies to see if my results were off, but decided to move on. 5) The Dominique Ansel cookies were polarizing. Some test subjects loved them and gobbled them up; while others were underwhelmed, stating they were a little boring. All agreed these cookies are absolutely gorgeous and impressive looking because of their size. 6) If you are looking for an oatmeal chocolate chip cookie, the brown butter Ambitious Kitchen one is very good. The nutty, toffee notes paired well with the chewy, oaty texture. 7) Our unscientific top three of the seventeen recipes tried? 1) Jacques Torres; 2) Claire Saffitz; 3) Joshua Weissman. I didn’t originally share the recipe because I posted that late at night, just wanted to see some love for my cookies! Not a bot or with the AI slop, promise you. Here is the recipe though, since a lot of you clearly disliked the OG flair! INGREDIENTS - 1 cup (2 sticks/226g) of softened SALTED (this makes them so much better i swear!) butter - 1 cup (200g) of granulated sugar - 1 cup (200g) of dark brown sugar (chewier end product, can use 2 cups of white instead) - 2 room temperature eggs - 1 tbsp (15ml) vanilla extract - 3/4 cup (80g) of dutch-process cocoa powder - 2 cups (250g) of AP flour - 1/2 tsp (3g) salt - 1 tsp (5g) baking soda INSTRUCTIONS - Preheat the oven to 350* - Cream the butter in a bowl (i used a stand mixer), then add the sugar and cream till just combined - Add the eggs and vanilla, mix till lighter color and smoother, fluffier texture - In a separate bowl, mix the dry ingredients then slowly mix with the wet ingredients. DO NOT OVER MIX!!! The dough will be the same texture as the insides of a cooked fudgy brownie! - Scoop tablespoon ish sized balls onto a baking pan and bake for 10 minutes. I find that turning the pan halfway through results in a more even, beautiful bake! -Once baked, allow them to slightly cool on the pan, transfer to a wire rack once they easily come off the pan. They should be sort of wet (almost done looking) when pulled out of the oven, let cool and enjoy a gooey soft cookie! 🍪 Instructions Preheat oven to 375 degrees Fahrenheit (190 degrees Celsius). Line three baking sheets with parchment paper and set aside. In a medium bowl mix flour, baking soda, baking powder and salt. Set aside. Cream together butter and sugars until combined. Beat in eggs and vanilla until light (about 1 minute). Mix in the dry ingredients until combined. Add chocolate chips and mix well. Chill dough! Roll 2-3 Tablespoons (depending on how large you like your cookies) of dough at a time into balls and place them evenly spaced on your prepared cookie sheets. Bake in preheated oven for approximately 8-10 minutes. Take them out when they are just barely starting to turn brown. Let them sit on the baking pan for 5 minutes before removing to cooling rack. Hey guys! I visited some friends this weekend and wanted to bring them something homemade. I searched for Biscoff-like (or speculoos-style) cookies and found a recipe online, but I ended up making some changes. I was really satisfied with the results! Here’s my version 100 g (3.5 oz) Butter, room temperature 125 g (4.4 oz) Brown sugar 216 g (7.6 oz) All-purpose flour 33 g (1.2 oz) Almond flour 1 large egg 50 g (1.8 oz) Powdered milk Salt to taste Ground cinnamon to taste Ground cloves to taste Ground nutmeg to taste Ground ginger to taste Mix the butter with the brown sugar until smooth and creamy. Add the rest of the ingredients and mix until it forms a dough that doesn’t stick to your hands. Shape the dough into small balls of about 11 g each (0.4 oz, roughly 1 tablespoon), roll them in sugar, and press them with mooncake molds. Bake at 200 °C (392 °F) for 10–13 minutes, until golden around the edges. I added the powdered milk to dry the dough a little bit, because I rolled it out and pressed it with mooncake molds, so I needed the dough not to stick to my hands. I also didn’t want it to taste too floury, but if you can’t find powdered milk, you can just add a little more flour to reach the same point They turned out crispy on the edges with a nice spiced flavor and a slightly chewy center. Finally perfected my chocolate chip cookie recipe
Inspired by “The Cookie” at Metropolitan Market in Seattle - this recipe is 6 years in the making: 2 sticks (one cup) salted butter, softened 1 cup dark brown sugar 1/2 cup fine granulated sugar 2 eggs 1 tbsp vanilla (I like using vanilla bean paste) 2.5 cups all purpose flour 2 tsp cornstarch 1 tsp baking soda 1/2 tsp baking powder 1 tsp salt 1 cup Belgian dark chocolate callets (I used Callebaut) 1 cup chopped bittersweet baking chocolate 1 cup semisweet chocolate chips 2 cups toasted chopped pecans (toast at 410 degrees F for 8 minutes or so, but watch closely as they can go from toasty to burnt quickly) Maldon smoked sea salt Preheat oven to 410 degrees F. Cream together butter and sugars. Beat in eggs and vanilla. Add in flour, salt, cornstarch, baking powder, and baking soda and mix. Stir in chocolate chips and nuts until incorporated. Scoop into fairly large cookies (I use my cookie scoop, but I’d say it’s about 1/4 cup of dough) and sprinkle with smoked salt. AITA for letting MIL botch my cookie recipe
My MIL and I have failed to get along. She seems to think she’s gods gift to mankind, she never apologizes when she does something wrong, and everything is a competition. I personally don’t prefer her cooking because she uses low fat substitutes for everything, even stuff you probably shouldn’t (like cheesecake). Anyways, I make really good cookies. I enjoy baking, and everyone I know likes what I make a lot. MIL and her boyfriend came over, and he tried to convince me to make some chocolate chip cookies to take home. MIL said she could make them way better than I could. I said ok go for it. I don’t care to compete with her. So she goes in my kitchen and whips up a batch of cookies for her boyfriend. I was watching her do it, and she did some stuff that I personally wouldn’t have done. She only used cold ingredients, she overused the mixer for a long time, and she didn’t chill the dough after mixing. The cookies came out pretty bad. She also burnt them slightly. Her boyfriend and my husband were both visibly disappointed. I want to say now that I didn’t gloat. When she asked everyone how they turned out I said they were alright. Her boyfriend frowned and my husband said mine are better lol. She was angry and asked what I would’ve done different. I explained the above. She then ranted to me about how I shouldn’t have let her ruin them, and blamed it on how my oven and mixer are different than hers. Guys, I’ve used her stuff before. It’s not the oven or mixer. AITA for letting my mil ruin cookies? Recipe: Chocolate chip ½ cup granulated sugar ¾ cup brown sugar, packed 1 teaspoon salt ½ cup unsalted butter, melted 1 egg 1 1/2 teaspoon vanilla extract 1 ¼ cups all-purpose flour ½ teaspoon baking soda 1 cup milk chocolate chunks or chips 1 cup semi sweet chunk or chips, your preference Mix sugars, salt, butter until well mixed. You can use an electric or regular mixer. Add egg and vanilla Mix flower and baking soda in a separate bowl. Then combine mixtures. Do it slowly, and don’t use a mixer. You don’t want the dough to be over mixed. Once flour is incorporated add chips or chunks. Fold them in with a spoon or something. Wrap up dough in plastic wrap and put it in the fridge. Chill it for at least 30-60 min. Pref 2+hours. Bake at 350 for 10 minutes ish, till the edges are golden brown.
