AITA for accidentally ruining my autistic boyfriends safe food [Concluded]
This is a repost. The original was posted in /r/AmItheAsshole by userstewlessinseattle. I'm not the original poster. Status: Concluded Editor's Note: I added paragraph breaks for readability Original January 2, 2025 My boyfriend loves stew, he wants to eat it every day for every meal. His favorite stew is beef tips and vegetables from a local place, but it’s really expensive. Like $47 for a big bowl (they don’t do small orders for takeout) and he is grossed out by leftovers so more than half of it gets wasted. We’ve had a couple of arguments about it, he says I don’t understand his brain, I say he doesn’t understand our budget. recently I looked up some recipes, including doing a dissection of the takeout soup, and tried my hand at making a home cooked replacement for stew night. He loved it for a few days, and then one night he was hanging out with me in the kitchen and saw me put tomato paste into the pot, he was really upset and demanded that I make the soup without the paste. I told him it wouldn’t taste the same and he said it would be better because he hates tomatoes, they’re not a safe food for him. So I made the soup with no tomato paste and big surprise, something felt off about it to him. Instead of admitting that the tomato paste was necessary he threw a fit and told me he didn’t want home cooked food anymore if I was going to “play with him” and not take his safe foods seriously, he thinks I changed more than just the tomato paste in an effort to get him to admit he was wrong. $400 in stew orders later I had an idea to ask the chef when we were picking up the order if there was any tomato products in the stew, and lo and behold there is tomato in the recipe, fucking tomato paste. In my mind this was great because I thought he would get over it if he knew his original perfect stew had tomato paste like “oh I guess tomato paste isn’t so bad then” but it was the exact opposite. He walked out of the restaurant without saying anything and then refused to eat the stew that night and hasn’t ordered it again, and he’s been ignoring me while sulking around the house, using his whiny voice a lot, and slamming things. His sister also texted me to tell me I’m a selfish asshole for needing to “get back at him” by taking his favorite food away. I literally just wanted to stop spending insane amounts of money on stew, I wasn’t trying to hurt him or ruin his life. I’m not autistic, I can’t really wrap my head around caring this much about a single ingredient, I genuinely didn’t see this reaction coming. We’ve been together for four years and he’s only had three other fits like this, the other ones were pretty reasonable. Those were also a little less intense and didn’t include input from his family, this is the first time anyone in his family has EVER spoke to me like this. So I’ve been back and forth between “yall are overreacting” and “what have I done”. AITA? It sounds so dumb when I write it all out but living it has made me feel physically sick with regret, I can’t think straight anymore. ETA: I’m getting ready for work right now so I can’t respond to individual comments but there’s some recurring confusion/questions I wanted to clear up because it might effect the answers: 1/ The stew place is a catering place with a mini-restaurant, so every time we order takeout we’re ordering a catering amount pretty much, it’s not stew made of gold lol 2/ We order from there 2-3 nights a week, it’s not the only thing he eats it’s just the top 5 foods for him, he doesn’t eat this unreasonably every single day. 3/ He has a job and contributes with money, I’m not funding his entire diet. We do mix money, so even though “he” pays for the meal half the time it does still feel like “we’re” losing money. He works part time and I work full time, bills are probably split 70-30. Consensus: Not the asshole Commenters point out this isn't autism, this is him being a prick who weaponizes his autism. Some of the comments by OOP: When he first blew up on me about putting tomato paste in the stew at home I told him that pretty much all of the recipes online included tomato paste, that I wasn’t trying to mess with him I was just trying to make it as close as possible to what he likes. He told me that was a bullshit excuse because “what I like is the stew from the catering place, if you can’t make that then don’t bother” and I told him that the catering place probably makes the stew the same way. He told me that he would be able to tell if there was tomato in that stew and we had sort of a “We’ll see” ending to that argument. We didn’t do a pickup order for a few weeks but when we did is when I asked about the ingredients, we were both present and i was under the impression that we would eventually ask, but i did blurt it out without warning him from his perspective if he wasn’t expecting it. He had a “if there’s tomato in it I guess I’m crazy and I like them” attitude during the argument so I thought he’d be more accepting of the answer. It was kind of an I told you so moment either way because I was right, but I didn’t say anything to him before he stormed off, it was pretty much instant. His mom cooked a lot of his food before we moved in together, and he trusts her without question because she knows what he likes. He first tried the stew at his brothers wedding, his mom served it to him on a shallow plate (so not a lot of broth and you could see the ingredients pretty clearly) and told him “you’d like this” and he just kind of dug in. We’d already been dating for a year and a half by then so I was used to his quirks but in retrospect it is a little annoying that she got to intentionally feed him a not-safe food and I’m catching all this flak later on about it. He doesn’t like cooking because of how often he has to wash his hands while handling food, he also hates washing dishes and is very messy in the kitchen. So if I do make him cook he’ll be very overstimulated the whole time and I end up with the huge mess afterwards, which is its own issue. It’s just easier for me to cook or for us to eat out. I’m not sure what his official diagnosis is, he got all that figured out through the school when he was younger and they only talk about his autism now. His parents had him in therapy for a while but he doesn’t like being “professionally grilled” so once he turned 18 he started declining that sort of stuff. If he’s OCD he doesn’t know it and he won’t want to find out. He doesn’t really care how the tomatoes come, he hates the entire idea of them. He had them as a kid and has hated them ever since, I’m not sure what the original delivery of that was (maybe chunky pizza sauce? I can’t remember). The issue is that for the first two years things weren’t like this at all before he moved out of his parents house. His needs were being met really well at home and it gave him a very “whatever” attitude when we would hang out because if I didn’t have his food/clothes/soap etc at my house he would just wave it off and say he’d stop by his house and get it. But now it’s like no matter what I do I can’t replicate that for him and he’s constantly overstimulated and bothered by something, most recently the stew. For a long time it’s felt like if I can get things to that perfect environment back for him then he’ll go back to being the way he was, but I don’t know if I’m humanly capable of doing that lately His parents do pay for some things for him but not any shared bills. Lots of his clothes, electronics etc are gifts from his mom, and she definitely feels entitled to a snippy comment here and there because of that. I was honestly taken aback that his sister was the one to text me though, we’ve gotten along really well in the past because we’re similar in age. Now it feels like even though he’s calming down about the stew my relationship with his family is fractured and awkward. He’s not very good with money (obviously) so we started a shared bank account when he moved in. I plan to figure out moving the money and closing the account but there’s a lot going on right now and it’s been pushed to the back burner. Therapy is not an option. His parents would buy the stew a few times a month, he buys stuff like that more often now that he’s on his own. He was in college while living with them and wasn’t working so lots of his life was dictated by them, now that he’s got his own money he’s very much into treating himself and doing whatever he wants. I would say he has the ability to be “functional” when he’s not frustrated or overstimulated by something. For a long time he was completely “typical” and I didn’t even know he was autistic. I’m not dating someone who has like, the mind of a child. Just wanted to put that out there lol I wasn’t trying to “teach him a lesson” I literally just don’t want to go broke over stew. Leaving it alone was going to bankrupt us, that’s not really something I could have done. I tried making it cheaper at home, I tried reasoning with him at the restaurant, I’m not a magician like what am I supposed to do at that point. I don’t know what “flexing” on this would have been other than actually letting us become homeless. I didn’t say he’s acting whiny, I said he’s using that kind of voice. It’s a specific voice he turns to when he’s in a bad mood and it’s the best way to describe it. But honestly, he IS being whiny. Weeks of huffing, slamming doors, and snapping at me every time I try to talk to him all because I told him there was tomatoes in his takeout stew, maybe you’re right and I’m not being empathetic enough but I think I deserve better than this kind of behavior. Maybe a more empathetic person would be able to take it with a smile on their face, maybe im just not that guy. I said it in another comment somewhere but the only reason I actually asked the restaurant about the tomato paste was he seemed like he would have accepted it being an ingredient. During our initial argument (when he “caught” me with the tomato paste) he was in such disbelief that they WOULD have that as an ingredient that he was saying stuff like “I guess if there’s tomatoes in that stew than all these years I really have liked tomatoes” and acting like it was so impossible that it was almost funny to imagine tomatoes being in that stew. I didn’t realize at the time that he was being like, rhetorical. If he does move back with his parents after this we won’t be continuing a relationship, it’s part of the reason why he moved out in the first place. While he was living there they were all very intrusive in our relationship and it was causing problems for us at the time. He wasn’t allowed out past 10pm, I wasn’t allowed over overnight, he HAD to be home for Sunday dinner etc. it was like dating a high schooler. So it’s definitely something both of us are trying to avoid, it would be the end. He did move from his parents into my apartment this time, but he’s lived alone previously when he was younger. He lived pretty far away from them at the time and was doing an okay job surviving on his own, he looks back on that time fondly. 70% my income 30% his, rent, utilities, food, streaming services etc included. We have a mutual account where checks get deposited that bills autopay from, and then we each have a private account for savings and debt. He makes less money than me and he also has more debt from prior to our relationship (school, car, private loan) so he puts in a lot less. There’s no such thing as “his fun money”, he makes less than we pay in food overall. If I told him to pay his own way he’d starve to death, it just wouldn’t work. He also refuses to work more hours, he’s trying to run a side gig that takes up a considerable amount of time and working full time on top of it would squash that. He’d rather move back in with his parents than work full time, it’s something he’s drawn a line in the sand about. He thinks I changed the stew to fuck with him because he couldn’t accept that tomatoes were the secret ingredient of the catering stew, that’s literally it. I’m not in the habit of secretly screwing around with his food. He obviously wouldn’t have even tried it in the first place if that was a regular occurrence at our house. I’m not sure what else I could be doing to support his needs at this point, I’m not an ATM or a robot butler I’m literally just a person trying my best. Idk. He just graduated and he’s looking for full time work but it’s been difficult, we don’t live in an area super booming in the field he’s trying to get into, he’s doing part time work for now so he doesn’t have to commit to something serious while he waits for interviews. We’re into the same hobbies/fandoms, we used to go to lots of conventions and events before he moved and he actually did lots of the planning/guiding for stuff like that. Date nights binging tv and getting takeout (ironic), really sentimental gifts, he would plan and execute that sort of stuff 100% himself. So he can do the boyfriend thing when he’s at his best, he’s just at his worst lately. I’m 26 and he is about to turn 33 [if she would stay with him if he keeps being like that] Definitely not if nothing changes, but part of the issue is that this IS the change. For half of our relationship he was perfectly agreeable and we were really happy. Then he moved in and slowly over time things have become less and less like that. Now I’m sitting here wondering if the OLD him is the real him or if the NEW him is the real him. Like maybe I can get that old vibe back. Or, maybe this is just the tip of the iceberg and he’s going to get even worse. Trying to figure that out so I know where to go from here. Update May 22, 2025, about 5 months later I still get messages about this sometimes so I thought I would do an update post instead of responding to everyone individually, it’s nothing really interesting. I had to basically kick him out right after I made the first post, he lived at his parents house and then moved in with a friend. He has a job and his attitude is a little bit better. We went to couples counseling for three weeks but then had an argument and stopped going because it felt like it was doing more harm than good sometimes. We’re not really together anymore but we’re more than just friends, it’s a weird nebulous thing that I can’t put into words. He really wants to make things work again and I’m trying but it’s hard to see him the same after everything, I have a few months to feel things out and decide for sure. Probably not what everyone was hoping for but it’s just the way things are rn. Update 2 September 17, 2025, about 9 months after the first posting and 4 months after the last I forgot this acc existed but I’ve been getting comments on my update from forever ago out of nowhere. I’m really trying to get over this so I’m just going to let you guys know what’s up and then delete this acc off of my phone I think. We’re not getting back together, I haven’t even talked to him for months, we tried to take a break to get into a more healthy relationship dynamic and he pretty much went insane. I have him blocked on everything and I am moving back home at the end of this year and scrubbing his existence and this entire relationship from my brain. I feel like this has been a huge waste of my life and my time and my energy, everything I put into building my life these past few years feels like hot garbage that fell on my face. Idk. He was doing really good for a while and then started drinking again because he’s living with a very enabling friend and went off the fucking rails. He’s not autistic, he has bipolar disorder. He apparently got diagnosed with this in highschool and felt ashamed of it because he thinks it’s feminine, so his ENTIRE FAMILY decided to start telling people he had autism instead. I cannot explain to you the sickness I felt when he was explaining this to me, I felt like someone hit me with a car. I feel like a psycho. Everything I know about the facts of his life are supported by half truths and outright lies. I literally feel so fucking played it’s insane. The embarrassment I feel anytime I have to talk about him, or my life AT ALL the past few years, it’s crazy. I’m going home and I’m going to stay with my sister and sub and pretend like none of this literally happened at all. I went to college, I graduated, I moved back home, the parts in between are going to be deleted from my brain. I have had a therapist here for a few years now that I’ve seen on and off and I have been seeing her more this year to talk about everything that happened, but I mostly feel talked-out on the subject, so I’m not sure if I’m going to get another therapist when I move. Part of me feels like I’ll be dragging it all there with me if I start seeing someone new and have to explain everything again, but I don’t feel great about moving somewhere new and going “cold turkey”. If anyone has advice on that that would be great. I'm not the original poster submitted by /u/Schattenspringer to r/BORUpdates [link] [comments]

Do any soup broths use FILTERED water??
Do any store bought en broths use FILTERED WATER? It suddenly dawned on me as I was sipping some spicy beef broth by Swanson, that I almost thought I tasted chlorine... I looked on the ingredients list and it just says beef stock/water nothing about it being filtered could be found... I tried googling and it found nothing... I will be calling them come Monday with an update. I am very against tap water for plenty of reasons .. all the chemicals, and it making food taste like a pool. I have my own reverse osmosis machine, and I literally use it to boil my noodles even. Im very strict about this. What do you think? Do they use tap water? I'm assuming so if it's not labeled 'filtered water' under the ingredients. It seems like it would cost a lot more for the huge pipes in the factory to filter. All that broth. I checked a few organic broths online and even THEY aren't listed under filtered. This is absolutely disgusting and disappointing and means from now on I'll be making my own broths, if that's the case. I'm surprised more people aren't concerned about water filteration. I do not need my beef broth with a side of pool water chlorine and other free radicals. submitted by /u/Raibean to r/CookingCircleJerk [link] [comments]

What are the most unforgettable food you’ve tried while traveling?
Hey everyone! -- UPDATE -- WOOW !! I didn't expect that kind of response, so much advice and food, amazing! Let's use it to do something awesome. Please keep adding your favourite food, and give me a few days, and I will build a map including all of your recommendations, so all of us can benefit from it on the next trip! Try to be specific about the location so it will be easier to put on an interactive map. -------------- I’ll start first. Please share your favourite food memories from your travels, too! 😋 Whenever I visit a new place, I’m always curious about the local cuisine. Before I go, I usually research some recommended spots, but honestly, the best food is often hidden. I check some forums, YouTube vlogs, or ask local people. Here are some of my most memorable food experiences from my trips. P.S. Sorry if I missed some details, I tried my best to provide an accurate location and description :) Img 1) Philippines, North Palawan - Socorro Hills View Lomi soup - a thick, savory noodle soup, with Egg, pork, topped with chicharon (crispy pork skin) Img 2) Philippines, Manila - Jim’s Pares & Mami Beef Pares with Rice and Bone - a beloved Manila comfort meal of tender, sweet-savory braised beef with rich bone marrow, paired with rice and a warm beef broth. Very local experience and taste. Img 3) Philippines, El Nido Mixed seafood platter - For me, always a good idea when you’re this close to the sea! Img 4) Singapore - Hill Street Tai Hwa Pork Noodle (Street food with Michelin Star) Guo Liao Tang - a noodle soup with several kinds of meat and delicious liver, flavorful and totally worth trying. Img 5) Singapore - Haig Road Putu Piring One of the simplest yet most unique desserts I’ve ever had. Made from rice, coconut, and brown sugar. Prepared by a family who’s been perfecting the recipe for generations. Img 6) Singapore - one of the food hawker Dry noodle ramen, very tastyImg Img 7) Singapore - one of the street restaurants Hot Pot with Frog - Very popular local dish Img 8 & 9) Cambodia, Siem Reap - HAVEN Khmer Amor - A must-try traditional coconut curry with fish (or chicken). We also had a tasting menu with a few appetisers, can’t remember what exactly, but it was all delicious. Img 10) Thailand, Bangkok - Ann Tha Din Daeng Creamy Tom Yum Goong - A lovely local spot packed with Thai people. I’d had Tom Yum before in Europe, but this version was on a whole new level - rich, spicy, with loads of chilli and lemongrass. Locals usually share one soup and two rice portions; we ordered two soups and one rice… mistake! It was so spicy we needed a ton of drinks 😂 But it was amazing! Img 11) Thailand, Bangkok Mango sticky rise - Perfect for breakfast, such a simple dish, yet so hard to find in Europe with the same authentic flavor. Img 12) Thailand, Bangkok - Don Mueang Airport Some crab in a different form, pretty good, like for the airport, very good value. Unfortunately, I don't have a photo, but the food at Singapore airport is another level. They had a food hall with street food with amazing quality and the same price as in the city. Img 13 & 14). Vietnam, Ha Giang - random village. Pho soup - Best I ever ate. The family made their own noodles and cooked everything on a traditional wood-fire stove. No English, no menu, just pure taste and tradition. Img 15)Vietnam, Ha Giang, North Okay, I know it was just Chinese soup noodles from the market and the cheapest frankfurter, but with this view, I don't remember much about taste. Overall, it was a good food experience. Img 16) Vietnam, Sapa Hot pot with black chicken - Traditional Sapa dish. The black chicken has less meat and a chewier texture than regular chicken. Unique and flavorful, but not for everyone, I definitely discovered a new taste. Img 17) Vietnam, Sapa Sturgeon fish - Another local speciality. It is a quite rare fish that you find fresh in a few places around the world.Very delicious and fresh, they basically catch it in a basement tank when you order it. Img 18) Vietnam, Hanoi Vietnamese spring rolls - I made myself in a cooking class, somehow the best I've tried (probably great teacher), but to be honest, it is the best way to discover local cuisine - do it with local people. submitted by /u/vim-meo to r/travel [link] [comments]

These are just for me. No one else is allowed 😂 they’re made just how I like. The beef stew has no potatoes, double onions and carrots, with a few peas in bone broth. The French onion soups have Swiss, Parmesan and Gruyère melted into bone broth oniony goodness. I also have 2 dozen crusty French bread rolls frozen, ready to go. Perfect to reheat in the air fryer! Harira is a popular soup from Morocco and North Africa, which combines a silky smooth broth with chickpeas, lentils and meat. It has a hearty winter spiced flavour and extremely satisfying texture. Full recipe for this bowl of joy inside
In the Middle East, we love soup! Most households will have soup at least once a week, and that even holds true for some people in the hot summers. One of the most popular soups throughout the region is Harira which has Moroccan and North African origins. It's essentially a tomato based soup that is made with meat, chickpeas and lentils, as well as a number of herbs and warming spices. Once cooked, the soup is thickened, and the result is a warmly spiced soup with a silky smooth texture and a chunky array of meat and legumes. What is Harira (الحريرة‎) Harira is a soup that hails from Morocco as well as Algeria and Tunisia, and it's regarded as one of the most important foods in the Maghrebi Kitchen. It's one of the most well known soups in the Middle East other than Lentil soup (see my recipe) and Orzo soup, and it's popularity ranks it alongside Couscous and Tagines as significant culinary exports. One of the main reasons why Harira is so popular, is it's warm flavour profile which it gets from Ginger and Cinnamon, they give it a flavour that is distinctively North African. Apart from the actual heat warmth of the soup, the spices leave a long lasting savoury warm flavour similar to the Libyan Mbakbaka I made a few months back, if you tried that and liked it, you'll definitely enjoy this. The great thing about Harira is that it can be considered a complete nutritious meal, thanks to the well rounded proteins and carbohydrates it contains. Alongside the flavours, the texture of the soup is a really important characteristic of Harira. The meat used in the dish is cut into tiny pieces so they match the size of the re-hydrated chickpeas (about 1 cm or 3/8" cubed). These along with green lentils provide a pleasant chunky texture to the soup and give it some chewable substance. The base of the soup also contributes significantly to the texture. Once the soup is fully cooked, a slurry of flour and water is mixed in, which thickens the soup up slightly to give it a silky texture that is similar to a cream based soup. Vermicelli noodles (broken vermicelli) are also added to the soup which adds even more texture to the final dish. Cooking Harira is actually a really straightforward and easy process. You'll first need to start off by soaking chickpeas overnight. Obviously canned chickpeas can be used here, but dried chickpeas always taste better than canned when re-hydrated. The lentils that go into this recipe are Green Lentils (the ones with a greenish brown colour), when cooked they have a firm outer shell with a soft pasty inside similar to the chickpeas. In terms of the herbs, you'll need to finely mince Parsley, Coriander and Celery leaves. The celery leaves are an important part of Harira, and if you've never tried them before, they have a very concentrated celery flavour with a delicate texture that allows them to completely dissolve in the soup. If you can't get hold of celery leaves, just use about 1.5 times the amount of celery stalk and dice it into very small cubes. The final thing that needs to be prepared is the tomatoes and onion. These need to be diced fairly small so they dissolve into the soup. I would recommend using canned tomatoes if the ones available to you don't have a strong flavour or they aren't in season. To make the soup you start off by searing the tiny pieces of meat until well browned and a frond forms in the pot. Then the onion is added and the pot is deglazed while the onions saute. Once they turn translucent, the tomatoes, lentils, chickpeas, celery and seasonings are added to the pot alongside 1.5l of water and the pot is brought to a boil. After boiling the heat is reduced and it simmers for 45 minutes until the chickpeas, lentils and meat are cooked through. At this point the tomato paste is added and mixed through the soup (I believe this is done at this stage to keep the tomato flavour a bit acidic). Once it has dissolved, a slurry of flour and water is mixed into the soup and allowed to cook for a few minutes. This thickens the soup from a runny watery texture to a slightly thicker creamy texture. Finally the vermicelli, parsley and coriander are added in and allowed to cook for 10 more minutes. When the time is up the vermicelli will have cooked through and softened, and the Harira is ready to be served. Harira is always served with fresh lemon wedges, and these allow the person eating it to control the final acidity of the dish. Once the lemon is squeezed over the harira, the flavours will be in perfect balance. If you want to add them right to the serving dish then you can do that as well, but don't add it to the pot as you want the brightness of fresh lemon and not the sourness of cooked lemon. Harira is commonly eaten in Morocco with a fried sweet pastry called Chebakia/Chebakia-2048-x-1536-57c503535f9b5855e53c5df2.jpg), which is made from fried dough covered in a sweet syrup. If you want to make this there are many recipes for it online, but the soup still tastes amazing without it. Cultural context Harira serves a very important role at the table during the month of Ramadan, when Muslims fast from food and drink from dawn until dusk. During the holy month, a large number of people spend entire evenings at the mosque praying, and Harira is often served as a quick nutritious meal that can be eaten before prayers begin. A lot of Moroccans will break their fast daily with a bowl of Harira to hydrate themselves. I've also read that it's popular amongst the Moroccan Jewish community who sometimes break their fasts with it as well. One opinion on the naming of Harira, is that it got it's name from the Arabic word for silk (Harir حرير). The theory goes that it was called Harira because of the silky texture of the broth. The recipe does differ slightly when moving around North Africa, and in Tunisia it is most commonly made with seafood or fish as well as harrissa or chili powder. There it is served with crusty bread or Brik(crispy stuffed pastries). Flavor Profile Harira has a very warm flavour profile, I'd even go as far as saying it's winter spiced. The combination of the Ginger, Cinnamon work together to give it a delicious warming flavour and it harmonizes perfectly with the meat and legumes. Using lamb here, you'll get a very slight gamey flavour which I think is perfect for this dish, but if you use beef, chicken or even vegetables in it's place I'm sure it will be delicious. Another major flavour in this soup is celery, it really compliments the warm flavour of the spices as well as the parsley and coriander. The tomatoes give the soup some depth, and while it is a tomato based soup, they are more of a background flavour. The texture of the soup is equally as important as the flavour. The soup itself is silky smooth to the point that you may mistake it for being cream based. Then you've got all the little pieces of Meat, chickpeas and lentils which give it a chunky texture. The meat should be extremely soft, while the chickpeas should have a little bit of bite. The lentils have a slightly pasty texture, and all together it's an extremely pleasant eating experience. Ingredients Makes 4 Large portions * 250g (9oz) Finely diced Lamb or Beef. Substitute with other vegetables if making this vegetarian * 200g (7oz) Finely diced tomatoes. I recommend canned * 75g (2 3/4 oz) Green Lentils * 75g (2 3/4 oz) Dried chickpeas * 75g (2 3/4 oz) Vermicelli Noodles (Wheat not rice) * 70g (2 1/2 oz) Tomato Paste * 25g (3 Tbsp) All Purpose Flour * 1 Medium Brown (Spanish) onion * 2 Small pieces cinnamon bark or 1/2 Tsp Ground Cinnamon * 1/4 Cup Minced Celery leaves * 1/4 Cup Minced Parsley * 1/4 Cup Minced Coriander * 1 Tbsp Butter * 2 Tsp Salt * 3/4 Tsp Ginger Powder * 1/2 Tsp Black Pepper * 2 Lemons for serving Directions Weigh out your chickpeas and give them a thorough rinse, then place them in a large bowl and cover with water. Soak your chickpeas overnight until they have doubled or tripled in size The next day remove the chickpeas from the water and rinse briefly before using. You should also wash the lentils as well Mince your celery, parsley and coriander very finely. Remove any large stalks before mincing and keep the celery aside as we'll use it first Dice your onion and tomatoes to a small dice so that they can dissolve into the soup Dice your meat into very small cubes about 1cm or 3/8in Place a pot on the stove over high heat and add the butter Once the butter is melted, add the meat and sear stirring occasionally until a deep brown colour and a browned fond has formed on the base of the pot Turn the heat down to medium and add the diced onion. Saute with the meat until it is translucent and softened Add some water or stock to the pot and deglaze the fond Once the pot is mostly cleaned, add the tomatoes, lentils, chickpeas, celery, cinnamon, ginger, black pepper, salt and 1.5 litres or quarts of water Bring the pot to a boil and once it boils reduce the heat to medium and cover the pot with a tight lid. Allow to simmer for 45 minutes. Once the 45 minutes are up, check the chickpeas, lentils and meat for doneness. The chickpeas and lentils should be soft but not falling apart, and the meat should be soft and cooked through. When cooked mix in the tomato paste Make a slurry with the flour and 1/2 a cup of water and stir into the pot (make sure there are no clumps before adding it in). Mix it with the soup for 2 minutes stirring the whole time to prevent it from clumping up Once the soup has thickened, add the vermicelli as well as parsley and coriander and allow the vermicelli to cook for 10 minutes, stirring regularly to prevent burning Check vermicelli for doneness and then serve the soup with fresh lemon wedges Variations There are recipes for vegetarian harira that forego the meat and start by sauteing the onions. If you want you can replace the meat with any other vegetable Beef and Chicken are commonly used in place of the lamb, and some coastal cities also make a Seafood version of Harira Some people make their Harira spicy, if you'd like to try that, you can use Harissa or some cayenne pepper to add heat submitted by /u/ObiEff to r/Cooking [link] [comments]

After cooking all week I had just odds and ends in my fridge: half a container of beef stock, half a bag of celery, a few baby carrots, and a sad little zucchini. Chopped it all up, mixed it together with some rice noodles and made a delicious soup 🍲

Sick? Tired of chicken soup? Try Beef soup
or as we call it in Mexico and around some parts of latin america "caldo de res". I know what your thinking: "isn't it just beef stew?" . Similar, yes, but simpler. Beef stew is of course thicker and has more complex flavors, while caldo de res is simple as can be. I recommend caldo de res over beef stew when one is sick because of it simplicity and its easy digestion. It's great for most gasternal sickness, colds, flu and of course covid-19 (mild). There are different methods in Mexico and Latin America for preparing this dish, but this is the most common and simplest. you can serve it alone, or with arroz rojo, which is a simple spanish rice. I like it with arroz rojo, but if you up for the challenge you can make both for the same time. I usually have some arroz rojo ready from another dish as a side. There are several ricipes and its pretty easy and inexpensive. Ingredients: Beef stew meat 2lbs (or beef shank but its a bit more expensive) Beef short ribs 1 lbs (bones add more flavor) 3 to 4 carrots 3 potatoes (small russet, red or golden) 2 celery stalks 2 cobs of corn (cobs or ears? idk I forget) head of cabbage 3 mexican squash or 2 zucchini squash (depends how big) half a medium onion white or yellow 3-4 garlic cloves salt (to taste) chayote also known as mirliton squash in english. Not really found in American stores but more in Mexican. (optional) beef stock (optional) 1 serrano pepper (optional)if you have stomach flu/sickness skip this or this might upset your stomach) lemon (optional, but tastes better with it) corn tortillas (optional, but again tastes better with it) medium sized stock pot 7 to 8 quart Prepare the beef. If the beef has to much fat trim as much as you want off, leave some for flavor. Fill the pot 3/4 of the way and put the beef in with half a table spoon of salt and a clove of peeled garlic. Set to medium high flame to boil. the boiling process will take about an hour, but about 20 minutes in skim off the impurities that have float to the top with a ladle, this will make a cleaner broth. 20 minutes later clean the rest that is still on the top. In the last 20 minutes prep the vegetables that are going in. Long vegetables chop to bite size pieces (peel carrots), peel and half the potatoes and garlic. Peel the onion and chop big chunks. put the potatoes in bowl with cold water so they wont blacken. I use about half a cabbage head, but if you can fit the whole thing go ahead! At this point, the water has boiled for about an hour, and you will noticed that the water has evaporated. Put the chopped onions, carrots, celery, garlic cloves. There are three steps you can choose next: One, you can refill the evaporated water with liquid beef stock. Two you can refill it with water and powder beef stock or Three, you can fill it with just water . Add salt to taste at this point as well. Be aware that beef stock already has a lot of salt in it. Cover the pot and let these cook for a bout 45 mins. After those 45 minutes pass, continue wit the rest of the vegetables (and optional pepper) and cook for 30 minutes or until the chayote and potatoes are tender. cook some tortillas, put a little lemon or lime in the middle and salt, roll it up and eat it with the soup. Tastes great! Enjoy! submitted by /u/SirMandudeGuy to r/EatCheapAndHealthy [link] [comments]
