It’s the slow season and I’ve been on a sandwich journey. Just wanted to share somewhere that may appreciate it.
Okay so for starters I went on this absolute “stuffed chicken nugget patty” TEAR for a hot minute this winter. It started with the idea of making chicken cordon bleu but sandwich style. So I made essentially a giant chicken nugget filled with Swiss & ham, breaded it, fried it, and the rest is history. But pictured here: Coconut shrimp burger- chopped shrimp folded into a shrimp mousseline with lime zest and scallion. Breaded with desiccated sweetened & unsweetened coconut and a bit of panko (I did multiple breading testers and this was the final). Served with shredduce, coconut crack & a preserved lime and Thai chili mayo. jalepeno popper- chicken nugget seasoned with house grown fermented peppers & other stuffed with Mozz/american/roasted jalepenos. Patty is dusted with same fermented stuff, and then a candied jalepeno cream cheese mayo. Chicken Parmesan- nugget stuffed with mozz/provalone/ roasted tomato. Patty is seasoned after frying with a dehydrated tomato powder salt. Sandwich is built with tomato aioli, shredduce, Italian dressing. Chicken cordon bleu- this pic was my tester and the first stuffed nugget I made. I sadly didn’t get a pic of the final sandwich. But stuffed with Swiss & ham. PEA- Lafel- essentially a falafel made entirely with dried & fresh peas, tons of herb stems, and the bottoms of scallions. This one is kind of my favorite because it’s super unsuspecting as a veggie burger, but crispy, bright green, super herbaceous, and easily made gluten free or vegan if you sub the bun. Best part is? A batch making 30 coats around $5. Bosses love the profit margins! Every day I will eat one Jersey Mike’s sandwich and post proof. I will continue doing this until Jersey Mike’s buys me a Lamborghini. Day 10 sandwich: Today since it was the national launch, I went with the HOT ITLIAN. After gaining experience - and taking advice from the community over the past few days - I had to revisit this sandwich with everything I've learned so far. It was good the first time, but this time I needed it to slap. I chose Rosemary Parmesan because it pairs perfectly with hot subs, and I added bacon for that extra savory crunch. For toppings, I went with everything except tomatoes and juice. The onions were grilled, and then I added the real game changers. hot chopped pepper relish and chipotle mayo. This combo is absolutely goated. I'm honestly struggling to think of a sandwich where I wouldn't want to use CPR and chipotle mayo together. They blend into a unique flavor that soaks into the bread, the chopped meat, and the cheese, complementing everything perfectly. There was so much packed into this sandwich that there was barely room for the lettuce, but it added great texture and helped soak up all those flavor-packed juices. I annihilated this sandwich in record time. I should probably start recording how long it takes me. After a year of research, debate, and help from many of you in your home regions, I’ve finished a national map of 78 U.S. food regions. Each area is based on distinct culinary traditions shaped by geography, culture, and history, from Gullah and Tex-Mex to Monroe BBQ and Crucian cuisine. I’d love your feedback: Did I miss something obvious? Should a region be renamed, removed, or split further? A version of this map’s headed to print next year as part of a national cultural atlas, so this is the last round of tuning before it gets locked in. Methodology note: This map is interpretive rather than purely statistical. Regions were defined using a mix of historical settlement patterns, agricultural zones, immigration history, regional dishes, and feedback from locals across multiple revisions. This is the 5th major revision, and I’m posting here specifically to invite critique before it goes to print as part of a larger cultural atlas. We call this Mafia Beef, my mom taught me recipe 20 years ago.
Over the years I found certain similarities between and Italian beef and that Mississippi mud roast, pot roast. Basically you throw a beef roast in a crock pot, dump a whole jar juice and all of peperoncinis, add a pack or two of the dry Italian salad dressing seasoning, and I usually throw some cut up red, green, yellow, and orange bell peppers with a whole sweet onion chopped up, cook it for hours until it falls apart. You can season and change it up, but that’s magically it! Just drain to taste and try not to over salt. I like to throw some dry beef bouillon and a tiny pinch of red chili flakes if I want it spicy. We set this on low and all day everyone will just eat sandwiches. All the fam will come eat. The think is you gotta find the harder rolls, like French bread rolls. It’s easy to squeeze and see. The softer ones will just disintegrate from all the juices in this. Try to throw it open faced with a mix of provolone and mozzarella and Parm, crisp that up under a broiler a bit, it is amazing! Amazing Italian sandwich like the description below?
My partner recently told me that the best sandwich he’s ever had was the Godfather from Graham Avenue Meats and Deli in Williamsburg which closed in 2015. I would really like to get him something similar for Father’s Day but all the “best Italian sandwiches” seem to go heavy on the meats which I know he doesn’t enjoy. So here is a description of the sandwich, in case anyone has any leads. It starts, as all great sandwiches do, with a perfect loaf of bread—crusty enough to stand up to the fillings, but fresh and tender enough to bite through easily. This is cut in half and sprinkled with garlic, pepper and basil, then drizzled with oil and balsamic vinegar. Roasted peppers and chopped spicy peppers are arranged on each half, followed by layers of paper-thin provolone cheese, mortadella, gabagool (capicola), tomato and onion.
