I made cinnamon rolls using the tangzhong methode for the first time and here are my thoughts
I've read about the tangzhong methode on this sub a while ago. Since I love cinnamon rolls (who wouldn't), but wish they would stay soft for more than a day, I thought I should give it a try. I was a bit sceptical because this methode of baking cinnamon rolls was quite different compared to my usual recipe. Rolling the dough was tricky, because it was so soft and sticky, but overall they looked okay. For being my first try I like how they turned out! They are indeed very soft (although I'll have to wait until tomorrow so I can see, if they actually stay soft). What I miss are the little caramelised sugar crystals that I get using my usual recipe. I don't know, if they didn't form because this recipe uses less butter or because it uses brown sugar instead of white sugar. I'll definitely bake these cinnamon rolls again, but I'll swap out the brown sugar for white sugar to see, if it makes a difference. And I will use less salt (I don't know who thought adding 11g of salt to the dough was a good idea, but they are too salty for my liking). First attempt at cinnamon rolls
(Any specks you might see in the dough or frosting are vanilla pod pieces from my vanilla paste) I’m a pro at cookies - cookies are my thinggg. I was able to retire off of my retail cookie business… but anything involving yeast or starter… I immediately cower and run away. I’ve always failed. Like at a laughable level. So I’ve never attempted cinnamon rolls. I woke up this morning and said let’s do it….. turned on my favorite playlist and made a mess in the kitchen. I used Sally’s Baking Addiction recipe and realized I had active dry yeast and not instant or rapid… so I laughed and warmed up my milk and butter, added the sugar, and poured the yeast in. A few minutes later it started to smell yeasty and had a foamy consistency.. I poured it into the flour, egg, and added homemade vanilla paste. I used a scale for everything and realized I needed more flour because of the additional paste… but I let it rest. Crossed my fingers, rolled it out. Measured. I mixed the filling into a paste to make it easier to handle.. and then cut while in a rectangle and rolled the cuts up to make things more clean. No idea where I saw this but thanks to whoever suggested it. I let them rise for about 75min, or until they tripled. I also tried to freeze 3 before rising… no idea why I think I’m a pro all of a sudden…… Anyways… i feel like I did everything right. They tasted decent. I think the temperature should’ve been brought down to 360 from 375 for my oven. I baked them for 25min. So I’ll attempt that temp reduction next time. They weren’t sweet… which was okay. I definitely need to add more to the frosting. Otherwise the recipe was sort of dull(? If that’s the word I’m thinking of) but a great base! I’m not really a cream cheese fan - not sure why I went with a cream cheese frosting so that’s my thing lol. And I’m glad this was a successful introduction to cinnamon rolls. Am I Overreacting for being miffed about my bf's cinnamon rolls?
FIRST AND FOREMOST: I am not angry and I am not mad at my bf for fucking up cinnamon rolls. I did not rush to him demanding an apology. I made this post because I wanted to know if my initial disappointment was valid or not. Even before this post blew up I talked to him and explained how it kinda made me sad. I know some of you will still be upset, but I made this post thinking it would reach like 4 people tops. I am not PR trained Idrk how to react to this situation. This is not a massively huge deal. If there was something actually bad happening in my relationship I would not turn to reddit. So my (f19) boyfriend (m20) likes to cook and bake. So I've been begging him to make me pumpkin cinnamon rolls for over a year now, since he made them once at the beginning of our relationship, and they looked and tasted perfect. Well, he decided to make them. This is the picture that he sent me. He tends to do stuff like this where he kinda half-asses stuff I ask him to do. The pack of pillsbury that he got started with 8 cinnamon rolls. I'm trying to play off my upsettedness as a joke but I think he can tell I'm kind of miffed. He's shown me he's capable of better before, so idrk what he's doing this time. Is this kind of a nothing burger? Are my standards too high? And if they are, how do I lower them?? Am I being a choosing beggar?? just feel kind of crazy ig, and I don't want to nag him for nothing when I can just let it go. Am I overreacting? TLDR: My bf made me cinnamon rolls. He's made them perfect before, but now he's made 4 big balls of sadness. Should I be upset or should I let this go? UPDATE: we talked and he agreed they were shit. He gave me a very heartfelt apology and said he'd try again this weekend. Just to answer some questions: He made these before with pumpkin puree in the beginning of the relationship and they turned out beautiful. He made these by taking a can of pillsbury cinnamon rolls and mashing the dough together, rolling it into one big ball and putting it on the tray. This is a picture of them precooked, thats why they look raw. Unfortunately, I can't add a picture of them cooked but I can tell you what it was like. The bottom was completely burnt and the top was almost raw, the sauce was burnt also. He made these in 30 minutes. I asked him to make them for me instead of making them myself because A. I hate baking and he likes it and B. I wanted a romantic gesture, just like asking your partner for a handmade bracelet by them. Food is a love language for me. I know that not all of you are going to read this far, but please be nice. There is really no need for name calling BOYFRIEND NOTE: "HEAR ME YE ACCOUNT HOLDERS OF THE REDDIT I AM THE CREATOR OF THE PUMPKIN SHITS AND I WAS JUST HAVING A REALLY BAD FUCKING DAY! Cinnamon roll recipes/tips you swear by?
I have been using this recipe for over a year now: Sally's Baking Addiction Easy Cinnamon Rolls From Scratch https://sallysbakingaddiction.com/easy-cinnamon-rolls-from-scratch/#tasty-recipes-66508 I have made a few tweaks here and there, like making a little more filling than recommended, and not using cream cheese icing(cream cheese is very expensive where I'm from) I also tried browned butter in the filling which was well worth it. Not to toot my own horn or anything, but I think I've near perfected cinnamon rolls at this point. But I'm wondering if maybe anyone else has found recipes that make a big difference in taste, texture, etc. And any tips on things you've tweaked and tried that made it even better. Something I've been considerimg is making them bigger, with the dough rolled thinner so there are more layers But I struggle to get the dough to cooperate sometimes when it comes to rolling it out nice and thing. I don't know, anyway, I just want to hear all your thoughts on cinnamon rolls. Please share, thank you! My son ate the middles out of every cinnamon roll before I got to the table this morning.

Made nontouching and touching cinnamon rolls as I couldn't figure out why people don't do individual ones. Turns out it just creates more exterior "crust" tried both, was greedy, ate 2. Never going to eat my tea now!
