We also buy fairlife milk, some types of salad dressing, uncrustables (my kids swear they can tell a difference), several brands but not store brand frozen pizza, outshine popsicles, and only just bare nuggets. And Campbell’s soup and brand-name SpaghettiOs for the kids because they are suckered in by the Disney characters 😭

My chocolate chip cookies with walnuts
I’m getting really nice feedback on these cookies. I have a lot free time on my hands and like experimenting, so my concoctions can get complicated, but that’s part of the fun for me. I started with a good standard recipe and started making adjustments, like adding some cornstarch to reduce spread and keep it a little thicker. I also added some TJ’s Vanilla Bean syrup, which is an invert sugar and is supposed to help the cookies keep longer and stay moist. I also add a touch of cinnamon, and I’m using a mix of 3-5 kinds of chocolate, depending on what’s on hand. A mix of Nestle chunks, Ghirardelli, and Guittard chips. And I used some chopped up banana bread flavored walnuts. And this time I also tried vacuum sealing the dough in chamber vac and letting it “age” in the fridge for a few days. It’s amazing how different the dough looks as soon as it completes the vacuum, it completely hydrates the flour and changes color. Brownies never have a shiny crackle top ☹️
I use the Ghirardelli brownie mix and it rarely gets the shiny crackly top. It looks spongy like a cake. I heard that beating the sugar and eggs is what gives it that shiny top. I’ve tried over mixing, under mixing, mixing all the liquids first then adding the dry ingredients and vice versa. I’ve underbaked it, baked it at a higher temp, lower temp, etc. Made sure my ingredients were at room temp. But it never works, so frustrating!! 😫Please give any tips/advice. Attached are pictures. Ghirardelli chocolate chips have just jumped in price again😭😭
I was just at the grocery store yesterday and am kicking myself now for not stocking up on more chocolate chips. As of today, Ghirardelli bittersweet chocolate chips have gone up nearly $3 for a 20-ounce bag. My local Walmart is now selling them for $12.72, up from the $9.96 that they were still at yesterday. It doesn’t seem all that long ago that the 20-ounce bag was $6.99, then it went up to $7-something and then $9.96, but $12.72 for grocery store chocolate chips is downright criminal. The Ghirardelli bittersweet chips are the only ones that taste good in cookies or straight out of the bag anymore. I gave up on Nestle years ago when they changed their formula - they claim they didn’t - and every bag was full of sickly sweet, funky-tasting, not-very-chocolatey chips. Used Godiva semisweet for awhile after that until they disappeared from store shelves and Trader Joe’s until they changed formulas or manufacturers. Chocolate Chip Cookie Dough Brownie Bombs
These decadent treats combine chewy fudge brownies wrapped around mini chocolate chip cookie dough balls, all coated in rich dark and milk chocolate. Perfect for impressing at any gathering or indulging in a special dessert. Ingredients: Brownie 18.3 ounce box Chewy Fudge brownie mix, baked according to package directions for a 9x13 straight sided pan Chocolate Chip Cookie Dough 1 cup all-purpose flour ¼ cup unsalted butter, softened to room temperature ½ cup light brown sugar, packed ¼ cup granulated sugar 1 teaspoon vanilla extract 1 tablespoon heavy cream, cold ¼ teaspoon salt ¾ cup mini semi-sweet chocolate chips Chocolate Coating 20 ounces dark chocolate melting wafers, melted according to package directions (Ghirardelli brand recommended) 5 ounces milk chocolate melting wafers, melted according to package directions (Ghirardelli brand recommended) Method: Prepare and bake: Preheat oven and bake the brownie mix in a parchment-lined 9x13 straight sided pan as directed on the package. Use parchment with an overhang to easily lift brownies once cooled. Trim and cut: Once completely cooled, lift brownies from pan and trim edges (about ¼ to ⅓ inch) to remove crisp parts. Cut the brownie into 6 rows lengthwise and 8 rows widthwise to yield 48 squares of about 1¼ to 1½ inches. Heat treat flour: Preheat oven to 300°F. Spread the all-purpose flour evenly over parchment paper on a baking sheet. Heat for 5-7 minutes while carefully watching to avoid burning. Let the flour cool completely before using. Make cookie dough: Cream together the butter, light brown sugar, granulated sugar, and vanilla extract until smooth and fluffy using a stand mixer or hand mixer on medium-high speed. Calling all savvy bakers! What has years of baking experience taught you that you wish you’d known sooner? I have a little secret…
Pics included for cookie tax and street cred! As a hobby home baker (and r/baking lurker) I only bake for friends and family. They will sometimes say something along the lines of “you’re so talented” or “you should open a bakery.” While this is great for my self-esteem, my dirty little secret is that I don’t think there’s much talent involved in my bakes at all! I think my success really just comes down to a few simple tips that I wish I’d known early on in my baking journey. I see many people on this sub making the same common mistakes I’ve made, so I thought it would be fun to compile a list for the newer bakers out there! What am I missing? What’s on your list? Use a tested recipe by a trusted baker, and follow it exactly. If Sally says the dough needs to chill before baking, then the dough needs to chill. (Side note: Sally’s Baking Recipes is life-changing. I always joke if I did open a bakery, I’d have to call it “Opentochane18’s Bakery By Sally” because I basically get all my recipes from her!) Use high quality ingredients. It’s amazing what Penzey’s vanilla and Ghirardelli chocolate chips did for my baking. Temperature of ingredients matters. Shortcuts like melting butter instead of properly bringing it to room temperature will absolutely impact your results. (Many cookies spread and flattened in the making of this tip!) Buy a kitchen scale if you can. They are inexpensive and so worth it! Too much/not enough flour will destroy your bake. Don’t over-mix! The texture of your treats will thank you. Don’t over-bake! Nobody likes dry and crumbly goodies. I usually pull most bakes when they still look just the slightest bit underbaked. Nothing sucks the joy out of baking faster than doing it for money. Safeway prices are out of control
Are they trying to be the most expensive supermarket in the bay area, but without offering anything premium? Went to Safeway just now to get Ghirardelli 60% chocolate chips and C&H brown sugar (2lb). They had one bag chocolate chips (283g) for $7.99 and the sugar was $5.49. I needed another bag of the same brand of chips so I went to Piazza's Fine foods which had the chocolate chips for $6.49 and just because I'm a glutton for punishment, checked the prices for the sugar: $4.79. ’ve been baking this particular recipe for years. Unfortunately the mods won’t let me post the recipe because it’s not on a whitelisted domain. If you search “48 hour chocolate chip cookie alvin zhou” that’s it. I didn’t use toffee for this batch. I also used 3-4 different kinds of chocolate. I used Ghirardelli semi-sweet chocolate chips and Guittard baking wafers. I keep most wafers whole but chop some to make them different sizes. I was given 6 bags of food, and nearly all of it expired more than a decade ago
Context: Am poor, 'homeless' (in RV) A family friend made a big deal all weekend about bringing me six bags of food for me and my wife to go through and dump the rest off at the "blessings pantry".... This is some of it! The best part: The Ghirardellis mint chips and dumpling mix are so antique they don't even have an expiry date. Exciting, we love old food youtubes! The sun-dried tomatoes (2009) are congealed into a whole new product, may patent it... Thought about eating that 2008 dark chocolate because damn! The caviar has no date, not sure if it's even that old, but... no. The rancid smell coming off that Crisco (2007) was intense.
