Previous post Yes, I do realize that St. Patrick's Day was a few days ago. This smells delicious, but I'm bringing it to work tomorrow so will have to wait until then to taste it. Will serve with Kerrygold butter and a selection of Bonne Maman jams. I love this flour so much. I think I'm on my 3rd bag. One of my favorite things to make with it is Ballymaloe bread which I first had at Simon Pearce in Vermont. Happy St Patrick’s Day- Gluten free Irish soda bread using my mom’s recipe
IRISH SODA BREAD 2 large loaves. 4c. unsifted 1 to 1 gluten free flour 1/4 c. sugar 1/3 c. melted butter or margarine 2 c. seedless raisins, optional 1 Tbsp. baking powder 1 tsp. salt 1 tsp. baking soda 1 Tbsp. caraway seeds 11/2 c. buttermilk or sour milk (to sour milk take 1 1/2 c. milk and add 1/4 c. lemon juice or vinegar)* (I’m DF so used almond milk +lemon juice) 1 beaten egg (I added one more yolk) Blend together flour, sugar, baking powder, salt, and baking soda. Cut in margarine or butter until mixture resembles coarse meal. Add raisins, caraway seed, buttermilk or sour milk and egg and stir until blended. Knead on floured board until smooth, about 1 minute. Shape dough into 1 or 2 balls and place in 2 greased 8 inch round cake pans. Flatten dough to fill pans. Cut a deep cross on top of each loaf. Bake at 375° about 40 minutes or more, until done. (Sometimes takes 1 1/2 hours.) You can tap the bottom of the loaf of bread to hear a hollow sound. That means it is done. If it sounds like a "thud" it is not done. *Buttermilk is best. Mom moved from Los Angeles to Queens after getting married in the early 1970s. Her next door neighbor was a kind old Irishwoman that taught her how to make authentic Irish Soda Bread. Mom proudly told this story and made this bread every year with and for whomever she could. She tried to help me this year but got overwhelmed and fell asleep. Mom has advanced Alzheimer’s and can’t share her tradition, her story, or her recipe. She just can’t do what she used to anymore. Irish Soda Bread: Underbaked?
Hi everyone, I made my first loaf of soda bread (in preparation for St. Patrick’s day) and I am wondering if I underbaked it. I went 10 mins longer than the recipe and the top started to get quite brown so I tented with foil. A butter knife starting come out clean but there seems to be some stodgy bits in the middle. I’m afraid I may have overworked it slightly which led to the bread being somewhat tough. I would appreciate any advice from more discerning bakers. Does anyone have a good Irish soda bread recipe? I figure I should make a test run before next week. I have had great success baking regular loaves using the Loopy Whish Dutch oven steam then bake method, so bonus points if your recipe works that way. I'm open to any suggestions/advice! Destroy me I deserve it
I literally can't handle myself, what is this 😭😭😭 Tried baking my first loaf of bread using this perfectly fine recipe (https://www.recipetineats.com/no-yeast-bread-irish-soda-bread/) but it all went horribly wrong as you can see. Sad to say that honestly I know where I went wrong,,, instead of real buttermilk I used oat milk and vinegar cause thats usually what I do for cake and muffin bakes. The dough was really wet but I freaked out cause of the golden time of fizz after adding in my milk and just shoved it in the oven. I knew it was a gamble but I did it anyway and now I paid the price!!!!!!! Please point and laugh all you want. Cause I deserve it. A Recipe Request: Irish Soda Bread
The back story: My grandmother immigrated to America from Ireland as a young girl. She was pure Irish, born and bred and took great pride in her heritage. Each year, without fail, for St. Patrick's Day, she would set out to baking in her small kitchen countless loaves of Irish Soda Bread which she then pass out around the neighborhood. It didn't take long before her soda bread became something of a legend to neighbors and family. It's not that her Irish Soda Bread was amazing-- in truth it was absolutely terrible; a completely dense brick tasting of nothing but baking soda and sawdust. Notoriously awful-- and yet each year, when St. Patrick's Day came near, she busied herself again, baking in the kitchen. And each year, it tasted of the same sawdust and soda as the last. When my grandmother passed, we discovered, tucked away in a cabinet, her recipe box, jammed full over the years with hundreds of recipes passed to her from friends and clipped from newspapers. To our surprise, we discovered that each and every recipe within the box was for Irish Soda Bread. The box was stuffed full of nothing but hundreds of Irish Soda Bread recipes. As we laughed at our discovery with the mirth and twinkle of which the Irish are known, we realized that despite our years of countless polite efforts to persuade her that we believed her creation to be delectable and unmatched, she had seen through our act. It was her sheer Irish pride that gave her the conviction each March to brave yet another year of baking, new recipe in hand. If you haven't made soda bread before- learn how
Irish soda bread is a free form quick bread traditionally made with buttermilk and baking soda providing the rise. But you can easily make this bread by substituting milk with some vinegar, including powdered milk. A while ago, I bought some powdered whole milk that, besides having the most ridiculous directions for reconstitution (1.5 c powder to 1.25 quarts water makes 1/3 gallon wtf), had a nasty, chalky taste that made it completely undrinkable. But put in this loaf that taste disappears and it makes a delicious loaf of bread. Here's a great recipe: https://recipeforperfection.com/soda-bread-without-buttermilk/ And if you use powdered milk, all of these ingredients can be easily stored without refrigeration or yeast. It's super easy to make, and you can add all sorts of stuff to it. LPT Make Irish Soda Bread if the Grocery Store runs out of Bread
Irish soda bread takes less than an hour to make and it's a very forgiving bread. Unlike some bread/pastries it still tastes good even if you mess it up. Here is the recipe I use : https://www.recipetineats.com/no-yeast-bread-irish-soda-bread/ I substitute buttermilk for 2 cups milk and 1.5 teaspoons of lemon juice (you can also use vinegar) The bread rises through the release of gas cause by the baking soda reacting to the lemon juice. As such, it's important to get it in the oven quickly (within 3 minutes) once you mix the wet and dry ingredients. I recommend prepping everything you need before you start mixing. Good luck, and stay safe! ETA: u/shesaidgoodbye gave a good recipe for beer bread in the comments that may also work if you are wanting a sweeter bread. 3 Cups Flour (wheat if you prefer and want additional fiber) 12 Ounces Beer ¼ Cup Brown Sugar ¼ Cup Butter (softened) 1 Tbsp Baking Powder 1 tsp Salt How to make it: Sift the three cups of flour into a medium size mixing bowl (make sure that you don’t use 3 packed cups or you’ll have a much less moist bread). Add all of the rest of the dry ingredients and mix well, then add the beer of your choice and the room temperature butter and blend again. Lightly dust a bread pan with flour or coat it sparsely with grease and distribute your dough evenly throughout, smoothing over the top. Bake for 60 minutes at 375°.
