Irish soda bread?
Does anyone know of a place that sells Irish soda bread similar to the one Jackson's bakery used to sell? That was always my favorite and I haven't found one I liked since they closed. If you never had it, it was a soft texture, not dry, more like a yeast roll than bread and had a sweeter flavor to it. I loved their version with currants. I am not a fan of caraway seeds at all. I’m Sorry (to you Irish soda bread lovers)
I have been baking Irish Soda Bread, one week a year, for decades. And… I hate it. I’ve tried it from so many places and played with the dough to try and make it better but it’s always the most unimpressive item. It’s like the “cinnamon roll focaccia” everyone’s making, I don’t just not like it, I’m mad at it for looking like it’s going to be good and delivering disappointment. It’s simply my opinion and good or all you guys for finding joy in it but I just never have. I add currants and caraway (because plain scones?) and I love the flavor profile of the sweet and savory with the buttermilk… it’s just a giant biscuit that has to be baked too long so the crust is too thick and after a day it’s just a crumbly mess. Again, I’ve been a professional baker my entire adult life but this one, I have never beaten and I just don’t know what else there is but to give up… not that I can stop making it, customers love it and I don’t need pitchforks at my door but I just don’t get it. submitted by /u/Bagain to r/Breadit [link] [comments]

A Recipe Request: Irish Soda Bread
The back story: My grandmother immigrated to America from Ireland as a young girl. She was pure Irish, born and bred and took great pride in her heritage. Each year, without fail, for St. Patrick's Day, she would set out to baking in her small kitchen countless loaves of Irish Soda Bread which she then pass out around the neighborhood. It didn't take long before her soda bread became something of a legend to neighbors and family. It's not that her Irish Soda Bread was amazing-- in truth it was absolutely terrible; a completely dense brick tasting of nothing but baking soda and sawdust. Notoriously awful-- and yet each year, when St. Patrick's Day came near, she busied herself again, baking in the kitchen. And each year, it tasted of the same sawdust and soda as the last. When my grandmother passed, we discovered, tucked away in a cabinet, her recipe box, jammed full over the years with hundreds of recipes passed to her from friends and clipped from newspapers. To our surprise, we discovered that each and every recipe within the box was for Irish Soda Bread. The box was stuffed full of nothing but hundreds of Irish Soda Bread recipes. As we laughed at our discovery with the mirth and twinkle of which the Irish are known, we realized that despite our years of countless polite efforts to persuade her that we believed her creation to be delectable and unmatched, she had seen through our act. It was her sheer Irish pride that gave her the conviction each March to brave yet another year of baking, new recipe in hand. LPT Make Irish Soda Bread if the Grocery Store runs out of Bread
Irish soda bread takes less than an hour to make and it's a very forgiving bread. Unlike some bread/pastries it still tastes good even if you mess it up. Here is the recipe I use : https://www.recipetineats.com/no-yeast-bread-irish-soda-bread/ I substitute buttermilk for 2 cups milk and 1.5 teaspoons of lemon juice (you can also use vinegar) The bread rises through the release of gas cause by the baking soda reacting to the lemon juice. As such, it's important to get it in the oven quickly (within 3 minutes) once you mix the wet and dry ingredients. I recommend prepping everything you need before you start mixing. Good luck, and stay safe! ETA: u/shesaidgoodbye gave a good recipe for beer bread in the comments that may also work if you are wanting a sweeter bread. 3 Cups Flour (wheat if you prefer and want additional fiber) 12 Ounces Beer ¼ Cup Brown Sugar ¼ Cup Butter (softened) 1 Tbsp Baking Powder 1 tsp Salt How to make it: Sift the three cups of flour into a medium size mixing bowl (make sure that you don’t use 3 packed cups or you’ll have a much less moist bread). Add all of the rest of the dry ingredients and mix well, then add the beer of your choice and the room temperature butter and blend again. Lightly dust a bread pan with flour or coat it sparsely with grease and distribute your dough evenly throughout, smoothing over the top. Bake for 60 minutes at 375°.
