Insanely easy and insanely good Mac n Cheese
My wife’s Mac n Cheese recipe Ingredients: 2 cups uncooked macaroni 16 oz. cheddar cheese (Rose uses half sharp and half mild - Don’t use low fat cheese in this recipe.) ½ stick butter 4 cups whole milk Salt & Pepper to taste Preparation: The cheese can be either grated or cubed in ½ inch cubes. Preheat oven to 350. Put the butter in the casserole and place it in the oven as it preheats so that the butter melts. After the butter melts, take the casserole out of the oven and add the uncooked macaroni followed by the cheese. Then pour in the milk and add some salt and pepper. DO NOT STIR. Just put the casserole back in the oven and bake for 60 to 75 minutes, depending on how brown you want it. That’s all there is to it! I can’t believe how well this comes out with uncooked pasta. GF Fried Chicken and GF homemade Mac&Cheese
I was craving chicken tenders for supper and my roommate doesn’t do gluten. So I got GF flour and GF noodles. For the best recipe I can give. Mac&Cheese. One box Barilla GF noodles. Two cups of Colby Jack cheese. 1/4 cup of heavy whipping cream. 1/4 cup of milk. Seasonings - salt, pepper, paprika, garlic powder, Tubs Buttery Garlic and Herbs. Season to your liking. I don’t measure with tablespoons and such. I go until my ancestors say stop. Fried Chicken. Bobs Red Mill all purpose baking flour, use as much as needed. Four eggs, 1/4 cup of milk/heavy cream. All the same seasonings as used in the Mac&Cheese, again season until the ancestors tell you enough, and go just a little more. And im not smart enough to say what temp and time to cook for. I have just cooked the chicken until it gets golden brown. Then I cook for a bit longer, and then throw in the oven at 200f for around 20 minutes to cook all the way through. Mac and cheese, needs advice.
Im from a country where mac and cheese is not a dish people normally make. But pasta and cheese is normal. I found a recipe using local (Swedish) cheese, and it seems good. But it comes out…dull. No edge. Like flour with spices and salt. No depth, no nothing. I do fix that by adding sweet chili sauce, but to get it to taste nice I need like a cup or more. It feels silly. Also, it makes the dish more spicy than I think was intended. Hubby is from UK and they had mac and cheese from boxes, and he agrees with me regarding this version. With a huge amount of sweet chili sauce it’s great, without it it’s like the most boring cheese porridge you can imagine. And we both love cheese! Im wondering if there is something else I can add. Recently I got into fancy vinegars. Im thinking a proper dash of some sort of white vinegar - I have a champagne one? - could work. Do you guys have any thoughts? PACKED WITH VEGGIES mac and cheese for toddlers.
Whenever I feel like my 2 year old is surviving on puffs and spite, I make this. LITERALLY 1/2 a cup of veggies in each 1 cup serving size! That’s half their recommended daily intake! This makes 4 servings. Ingredients: 2 cups of steamed or boiled veggies* 1.5 cups dry macaroni 1/2 a cup of broth (I use chicken) 1 tablespoon of butter 1 tablespoon of flour 1/2 cup of whole milk 1 cup of fresh grated sharp cheddar cheese 1/2 tsp salt, or to taste other seasonings to taste* *I have the most success if I make this mostly consist of cauliflower, since it’s mild in taste. Other great additives are squash, sweet potato, 1/4 an onion, a garlic clove... If I don’t use garlic and onion in the initial veggie boil, then I like to add a dash of garlic and onion powder. Instructions: Steam or boil the veggies until soft enough to mash with a fork. Drain and set aside. You should have 2 cups total. Boil water and add 1.5 cups of dry macaroni. Cook to package instructions. While pasta cooks, add the 2 cups veggie and 1/2 cup broth to a blender. If it’s not loose enough, add some water. Blend until smooth. Make a roux: in a separate sauce pan on low, add 1 tbsp of butter. Once it’s melted, sprinkle in 1 tbsp of flour. Whisk constantly, and cook until it’s bubbling, 2 min. Raise the heat to medium. One splash at a time, add in 1/2 cup of milk, constantly whisking. Cook until combined and bubbling, 3-5 min. Slowly pour in the blended veggie mix into the roux. Stir continually, and cook until combined and hot. Turn off the heat. Slowly add in the shredded cheese, stirring and melting it in as you go. Combine the drained pasta and the sauce, and mix. So finding a way to create a dairy free mac and cheese that didn’t taste like garbage was top priority. My kid actually says he likes this version better than with actual cheese. I make it the same way I would make a dairy version, just swapping out the dairy. 2 tbsp dairy free butter and flour to make a roux. 2 cups of oat milk, garlic, salt, pepper, nutritional yeast. For this version I used a block of Rebel Cheese’s sharp cheddar cashew cheese, but I’ve also made it with Miyoko pub cheddar. Topped with crispy onions and panko, drizzled with Kensington’s garlic everything sauce. My boyfriend has always teased and encouraged me to eat more but it's always been playful before. I used to tease him about his mammoth sized portions (seriously where does it go) because I had to start making date night dinners that should serve 4! To be clear he constantly underestimates his calories and is often shocked when reading nutritional information. I don't know where he got the idea he's knowledgeable enough to be judging what I'm eating but there you go. Lately he's become very fixated on this idea I'm going to start starving myself without his guidance. I don't have a big sweet tooth, I don't snack on the regular, I only eat about 1/2 of my restaurant entrees (we usually split an appetizer), I'm a lightweight, and I prefer a light lunch. These are all things he's starting to criticize on the regular. I want y'all to understand I'm really not depriving myself. I don't go hungry, I just don't enjoy stuffing myself. He doesn't listen when I tell him he's constantly ruining my appetite by forcing snacks on me. Yesterday we woke up late and I knew we were going out to lunch so I only had one slice of thick brioche French toast (powdered sugar, syrup, butter), 1/2 a peach, and two slices of summer sausage. He had five slices of French toast with all the toppings and whipped cream, 1&1/2 peach, the rest of the summer sausage, and an egg. I ended up eating a third slice of his summer sausage, dipped in his egg to get him to stop nagging me. He made another two comments about how little I ate before lunch. Then at lunch he had new fights to pick. He didn't want me to order plain iced tea or a diet soda. I don't like overly sweet drinks. He didn't want me to order an entree salad (ranch, bacon, avocado, egg, etc). We negotiated my lunch to a breadstick, a side salad add avocado, and two slices of pizza that he nagged me to finish until his dad told him to layoff because he didn't want me too full for gelato later. The whole meal was pretty embarrassing for me. Of course my boyfriend wasn't happy that I wanted a small gelato, cup instead of cone (I don't have a sweet tooth, remember?). We knew we were going to have a late dinner so we stopped at a gas station later that evening to get him a snack. I just wanted water but picked up a small package of corn nuts in the hopes of making him happy and we still had a minor spat so I picked some candy too (he didn't notice he was the one to end up eating it). He claimed we disagreed because I was irritable from hunger. We picked up dinner at a buffet style place that charges you by weight for to-go containers. He decided I had to use a medium container instead of a small. Admittedly I just filled the difference with varieties of salad but I also had a very rich Mac and cheese and some fried foods in my container as well. He was bothered by the small portions I was serving myself but I was taking many more varieties than him (think sample platter). My container was full. This is where we had our first real fight about my eating habits. He decided to make a third container of food to make sure I ate enough when we got home. The restaurant we were at was not cheap! I refused to back down on not blowing a bunch of money on food that we'd just end up picking at and throwing away. A lot of the things he picked are foods I don't like reheated. We've been working hard on being more frugal together lately so I was pretty pissed when he ignored me and paid for the extra food. In the car ride on the way home the argument continued until it got to the point where he was very frustrated and teared up as he shouted "I work so hard to take care of you and you're always fighting me to hurt yourself!" He then proceeded to give me a long, condescending guilt trip. I was pretty enraged tbh. Once we were home dinner went cold while we google fought over how calories, protein, sugar, my BMI work, you name it. No matter what I showed him he wouldn't back down on not "feeling" like I don't eat enough because "muscle weighs more than fat so you're actually underweight and hiding it by lifting weights". I don't even know what to say to that so I went home. He texted me twelve times because I left the (cold) dinner at his place. I was ignoring him while I made food but finally caved and told him I was eating something else. He asked me to text him a picture of my food. I never responded and he texted me another three times. This morning he texted to ask if he could bring me breakfast. I said no. I'm kind of bewildered and annoyed. I'm not really sure how we can resolve this one? Tl;dr: My boyfriend is unwilling to accept any proof I'm healthy and I don't feel like living the rest of my life being nagged and force fed. Because your weight is almost exactly in the middle of the healthy range for your height, and it sounds like you're perfectly capable of picking out balanced meals for yourself. There is zero justification for counting every calorie or measuring portion size the way he's trying to do. If you want to try and placate him, tell him you'll make an appointment with your doctor and discuss healthy eating while you're there: until then, you don't want to hear another word about meal choices, and if you're given the all clear, this discussion is done. But personally, I think I'd just bail. His obsession with this is just too weird. OOP I'm not sure. He says he likes my body the way it is but thinks I'd be skinnier if he wasn't around to nag me. I'm pretty happy with the way I look right now. Then, with him being aware of what you're doing, log your calories for a day. Let him see that you're not undereating. It's ridiculous that he's policing you like this, by the way. I would have a very serious talk with him about respecting you. Refuse to eat the food he's badgering you about. Tell him it's not taking care of your, it's being an asshole. I'm tempted to tell you to constantly tell him to eat less. OOP I downloaded a calorie counter app last night and entered what I would've eaten yesterday without his influence and came in well over my daily requirements but that devolved into him picking apart how calories and the BMI work. I know this is absurd behavior but he doesn't seem to have a malicious intent so I'm more puzzles than angry now. He eats a lot but he's in great shape so it works for him. I eat less and I'm in good shape, he just doesn't accept it works for me. Update Sept 30, 2016 (40 days later) So in case anyone is wondering turns out my (now) ex's mother and two sisters had him convinced I had some kind of eating disorder and would nag at him about it and make him feel like crap for "letting" me hurt myself. All three of them are obese so idk why he weighed their opinion on nutrition so heavily. I pointed that out (with more tact) and we had a much better conversation about why he needed to lay off on how I eat. He did make a lot of effort to keep his opinions to himself but could never completely let his worry go. Officially this isn't why we broke up but it was kind of like the shattering illusion from HIMYM that kind of made me start noticing how he's quick to be arrogant, condescending, and patronizing when he thinks he's right and how he buys into every dumb thing his family tells him without question. Arguably the gooey-est and cheesiest Mac n Cheese ever!
I know it looks like it’s too much cheese but I PROMISE that it’s not. It’s also the only Mac n Cheese I’ve ever had that reheats perfectly and doesn’t become a weird texture. 10/10 would recommend. Here’s the recipe y’all: (you have to hand shred your cheese or else it’ll curdle) 3 tbsp flour 3 tbsp salted butter 1 tsp chicken bouillon 1 tsp smoked paprika 1 tsp garlic powder (NOT GARLIC SALT) 1/2 tsp black pepper Salt, to taste 12oz can evaporated milk 1 tbsp spicy/brown mustard 2 cups heavy cream 1 pound mozzarella, shredded 1 pound Colby Jack, shredded 8oz sharp cheddar, shredded 1 pound of the pasta of your choice, cooked and ready to go Directions: 1.) In a separate bowl, combine all of the seasonings and set to the side. Then, in another bowl, mix together all of the shredded cheese and set aside. 2.) Over medium heat, melt the butter and add in half of the seasonings and allow to get bubbly, then mix in the flour, stirring continuously for two minutes as you don’t want to burn the flour. 3.) Then, slowly add in the evaporated milk and heavy cream while WHISKING continuously. Then add in the rest of the seasoning mix and the spicy mustard. Allow this to cook on medium, stirring occasionally, until it has thickened slightly, and start adding HALF of the shredded cheese mix, one handful at a time, stirring and allowing it to completely melt each time. 4.) Once the cheese sauce is done, add in the COOKED pasta and mix until evenly coated. Then, pour half of the mac n cheese into a deep 9x13 pan, and take half of the remaining shredded cheese mix and evenly spread it over top. Then, add the rest of the mac n cheese, and top it with the rest of the shredded cheese. 5.) Bake at 350° for 25 minutes until the top and edges are nice and bubbly. 6.) Broil on low until the top is slightly browned (5-ish minutes) and serve. After being refrigerated, why is Mac N Cheese not creamy and luscious?
Recipe I followed was 1 stick of unsalted butter, 2 tablespoons of all-purpose flour, 2 cups of evaporated milk, make into a roux. Then, threw in a few velveeta cheddar square slices (for it's sodium citrate), square slices of: smoked cheddar, white cheddar, pepperjack. I did not put any packaged pre-shredded cheeses as I know those have a lot of anti-caking agents, which may result in grainy cheese. When I finished this batch fresh, it's perfectly creamy and luscious, as expected. However, after I put it in the refrigerator and microwave it to eat, it's not creamy anymore. But a little clumpy like how cheese behaves when cold. My favorite store-bought Mac N Cheese is Panera's white cheddar from Costco, and theirs is still perfectly creamy and luscious, even after being in the refrigerator and after microwaving. Hidden veggie mac and cheese because my 5 year old won't touch a vegetable
Hidden veggie mac and cheese 1/4 cup butter 1/4 cup flour 1 cup milk 1 cup mashed Hubbard squash (butternut or sweet potato works as well) 1.5 cups cheddar cheese or other orange cheese Salt, white pepper, onion, and garlic powder to taste 1lb cooked pasta Prepare bechamel with butter, flour and milk, season. Add Hubbard and mix thoroughly. Throw in the cheese and remove from heat, stir till melted. Add cheese sauce to cooked noodles and stir until well coated. It's very good fresh out of the pot, or also baked. My first (successful) Mac and cheese
I tend to try new recipes without looking them up first and so before this I had a few unsuccessful Mac and cheese attempts but I looked up a recipe this time (the roux was the game changer) and it turned out phenomenal. I used cavatappi and 21 oz of a shredded cheese blend consisting of Gouda, sharp cheddar, and Gruyère. I also substituted one cup of the required 4 and 1/2 cups of milk for heavy cream. I did however foolishly forget to save some cheese to sprinkle on top and my girlfriend told me it was lacking in salt (I have a tendency to sometimes over salt so I generally reserve salting when cooking for others as something they can add) but I did top it with buttered Italian and herb bread crumbs and I achieved that creamy, gooey consistency that I had been searching for. I made the best Mac and Cheese my mouth has ever tasted
Imagine a Mac and cheese that tastes like a seafood boil / chickies and pete’s crab fries. 🤤 Southern Baked Mac & Cheese Seasoning: - ½ tsp old bay - ½ tsp tony c’s - ½ tsp chicken bouillon - ½ tsp smoked paprika Mac & Cheese - 1 lb pasta of choice, (I like Shellbows) - ¼ cup butter - 6 garlic cloves, minced - ¼ cup AP flour - 1 can evaporated milk - 2 ½ cups half & half - 1 tbsp hot sauce - 6 oz deli American cheese, roughly chopped - 4 oz vermont white cheddar, shredded - 4 oz pepper jack, shredded - 3 oz Parmesan, shredded - 8 oz mozzarella, shredded (for topping) - Smoked paprika, for sprinkling - Parsley, for sprinkling Directions: 1. Preheat oven to 350F. Combine seasoning in a small bowl; set aside. Cook pasta to al dente. Drain and rinse to stop cooking. In a large sauce pan over medium heat, melt butter. Add garlic and half the seasoning. Cook until fragrant. Add flour, one tablespoon at a time, stirring constantly and cook until lightly golden. Add evaporated milk, stirring constantly followed by half and half. Add hot sauce and remaining seasonings. Bring to a gentle simmer. Reduce heat to low. Stir in American cheese until smooth followed by parmesan. Once melted, stir in cheddar and pepper jack. Stir pasta into sauce and transfer to a buttered baking dish. Top with mozzarella cheese and sprinkle on paprika and parsley. Bake for 20 minutes. Broil for a few additional minutes for a crunchier top. Seems like a lot of work for a Mac and cheese, but I promise it’s worth it! Use freshly shredded cheese except for the mozzarella. I just used a pre shredded bag. *feel free to switch out the seasoning. This is a good base for pretty much anything. Looking for German-friendly Mac And Cheese recipe
I'm from Germany, and mac and cheese isn't a thing here. You don't get to buy or order it anywhere, but I am curious. For years I've tried various mac and cheese recipes, but I never liked the result. The problem is, I don't know how its supposed to taste, but my results clearly can't be the stuff everybody loves. So, I hope you can help me. First, the cheese: I learned that you should shred the cheese yourself and that cheddar is the most popular choice. However, there is only one brand of cheddar to buy around here, and it's the super orange type. I don't know if this is an acceptable choice, the resulting dish is always very orange as well (not at all how it looks in the photos). Second, the pasta-cheese ratio: The ratio of pasta to cheese varies wildly in each recipe, and the 'cup' measurements do not help one bit. Please, help me in metric units. I don't like it too cheesy, so what ratio/consistency would you recommend? And third, stove-top and/or oven: At which point should I transfer the dish to the oven? Some recipes swear that stove-top is better and it should never be baked. I don't know what to do anymore. Help me, reddit, you're my last hope. I'll appreciate any help or experience! (And sorry for my English bla bla) EDIT: After getting way more answers than I expected, I learned some things: - I think I'd like the creamy stovetop kind - The key to good cheese sauce is to mix different kinds of cheese, and I never did that.
