I’m back. No I don’t work for Big Soup. It’s meal prep day. Behold: yer gran’s lentil soup.
Method: Gather ingredients. In this case, carrots, celery, leek, onion, garlic, butter, parsley, red lentils, Scotch broth mix, vegetable and chicken stock, salt and pepper. Chop celery, carrot, onion and leek to desired size (I like em real thick and chunky.) mince garlic. Take a few handfuls of red lentils and a couple of handfuls of scotch broth mix. Rinse a few times in cold water. We are now ready to begin. Chuck a knob of butter into your soup pot, set at medium low heat. Add a small bit of sunflower oil too to prevent the butter burning. Wait til it’s bubbly and all melted. Time to sweat the celery, carrot, leek and onion. Hover around stirring so nothing catches on the bottom. Don’t rush this bit. After 3-4 minutes, turn heat to low and cover. Let everything soften and sweat. Stir every minute or so just because. Now add in your garlic. Mix it through well. Sauté on low for another 2-3 mins. Chuck in your rinsed red lentils/scotch broth mix. Stir everything together. Stock cube time! I used one chicken, one veg. Actually added a second chicken because those legumes really need seasoning. Add enough boiled water to cover and then a bit more because the lentils and scotch broth mix a b s o r b. You can add more water later if you want to thin it. Stir the whole pot again. Add some pepper. Raise the heat to medium, pop a lid on. Stir from time to time. Make yourself a coffee and revel in the homey smells coming out of your kitchen. (In my case also consider the New York deli style caraway rye bread dough you are planning to cook in the air fryer because oven is broken.) After about an hour and a half you will have a VAT of delicious, nutritious homemade soup that you can eat for days, and it gets better every day. If it gets to thick next day you can thin it out with a bit more stock and water or embrace it as stew-adjacent. (Not shown - scattering of finely chopped parsley stirred through entire pot.) Did a meal prep day with a fitness instructor who teaches 20 classes a week and her approach completely changed how I think about it
She started with 5 different sides. Just got all of those going first before touching anything else. Then cooked 3 proteins separately while the sides were finishing up. Then rice and pasta. Then at the end just assembled everything into completely different meals. Breakfast burritos, chicken and rice bowls, full dinners. All from the same base ingredients. The thing that got me was how she seasoned everything. Sides were just salt and pepper, kept totally neutral. All the flavor was built into the protein marinades. So when you mix and match throughout the week nothing clashes and every meal tastes intentional even though it took no extra effort. The whole thing felt like watching someone think in systems instead of recipes. Never prepping the same way again. AITAH for refusing to help my brother and SIL while they're struggling by meal prepping a few meals a week for them and their kids?
I (17m) have an older brother "James" (28m) who's married to "Erica" and has three kids with another on the way. Me and James don't have a relationship. I feel like he resents me for being born or like I stole our parents from him or something because he was always a huge jerk to me. I'm talking putting stuff where I couldn't reach them when I was little, locking me in my room because he could and dropping me off at the neighbors house when he agreed to babysit and was getting paid for it me so our parents could go out. When James met Erica she was a jerk to me too. She made fun of the walk I talk because of my stutter and she ignored me unless our parents were there. For a while my parents and James had a bad relationship because of how he (and Erica later) treated me. But they made up and became close again and stayed close even when he didn't invite me to his wedding. He/they ignore my birthdays, they ignore me at Christmas, they never invite me to parties they throw and it's not an age thing because kids younger than me get invited. It's all a me thing. I asked James why he hates me and he ignored me and when I tried to push him to answer he laughed in my face and told me to get away from him. James and Erica have their three kids, who I don't know btw, and they've another on the way. Erica's had a rough pregnancy and my parents help keep their house clean and stuff on weekends and they have sent them money. But my parents don't really cook much. And I cook usually on Sundays and meal prep lunches for school and other stuff. I pay for the ingredients I use because I don't really like the stuff mom and dad sometimes buy and it's sometimes because we/they mostly eat takeout for dinner. James started asking for food so Erica and him didn't need to worry about that so much. My parents said I should do it since I meal prep already and James said it would be perfect. My parents said to use the stuff they buy and meal prep for James' family but I told them I won't put my time into making food for people who treat me like shit. My parents said they're still our family and James was like wtf why are you okay with hurting my family when our parents told him. Parents keep eating my meal prep

ok so i’m not one of those ppl w/ 20 containers and perfect labeled lids lol. i got 3 kids, small kitchen, zero energy. but i still gotta feed us without going broke or crying at 6pm this is the “system” i been doing: sunday 1hr prep: whole week of not losing my mind cook a pot of rice (10min handson): stretch for taco bowls, stir fry, random sides chop onions/peppers/carrots/apples : store in cheap containers. now snacks + dinners already half done roast sausages + veg on one tray (20min oven does the work) : thursday dinner DONE shred chicken (rotisserie or leftover) : half goes quesadillas, half frozen for end of week portion snacks: popcorn, apple slices, yogurt cups: kids grab n go, less whining actual dinners i get out of this mon: cheesy quesadillas + corn tue: pasta + jar sauce + chopped spinach wed: breakfast for dinner (eggs + toast + apple slices) thu: sausage & veg tray bake fri: taco bowls (using rice + chicken + beans + salsa) not fancy, not bodybuilder-prep-perfect, but it works and costs me like 40–45€ groceries for the week. what i need now: new ideas. i’m burning out on quesadillas what’s ur go-to “low effort meal prep that doesn’t taste like cardboard”?? submitted by /u/Objective_You_1658 to r/mealprep [link] [comments]

i have to meal prep for my dog for the rest of her life
my 13 yr (almost 14) old mini wienie got a bad gi infection which led to gi issues. she is used to some pretty expensive food but nothing compared to this (she is also on expensive medicine). i am in college full time and working full time. somehow managing to find two hours in my busy week to make her food still. may she live for many more. 30 day meal prep. I can finally sleep 😌😴
I ran out of meals from my previous meal prep so it was finally time to do the grand cook. I decided to use Jack Ovens recipes again while adjusting the recipe to my needs and nutritional and portion goals. From these that i tried they're overall really tasty, especially the meatballs (didn't think it would be all that but I was very wrong haha). One thing to note, if you are doing high quantities, the meatballs can be quite time consuming if you care for macros and portion sizes. AITA for getting upset that my wife keeps eating the lunches I meal prep for work
I (M55) work construction and like to prep my lunches on Sunday so I don’t have to think about it during the week. It’s a routine that saves me time and money, and frankly, I look forward to my food when I’m on site. I’m not trying to lose weight nor am I on a specific diet. It’s solely for taste and convenience. Lately, my wife has started eating my lunches. I’ll go to grab one in the morning, and it’s just… gone. When I bring it up, she shrugs and says she was hungry and didn’t feel like cooking. Almost everytime she gives me $10 or so “to make up for it,” but it doesn’t help when I’m left scrambling before work or have to spend money I didn’t plan on. It happened just today again. Thursdays are especially busy this time of the year. I’ve told her this is frustrating and doesn’t take into account the effort I put into planning for my lunches. She thinks I’m overreacting and says it’s “just food” and that I’m being selfish for not wanting to share. I feel like I’m being taken advantage of, but maybe I’m missing something. AITA? Edit: to clarify. She works from home 2-3x per week. These are the days she takes on of my lunches. What are the simplest, lowest effort meal preps I could possibly do?
Edit 3: Thank you to the people who gave helpful responses instead of ignoring the part about needing protein and vegetables. I will be unsubscribing from reply notifications because the notifications are overwhelming. I’ll go through the responses later and save anything helpful. PLEASE don’t respond if you’re just gonna suggest food that isn’t actually nutritious. I have a very physical job and I do actually need to eat healthy. The fact that I’ve been eating the overpriced garbage they sell at work for weeks is probably part of why I’ve been so tired. I don’t want to make it even worse by cutting out protein and completely eliminating vegetables instead of just not getting enough (which is what will happen if I eat noodles and butter or ketchup on bread every day). I don’t have the energy to do something as simple as the curry tofu salad meal prep from Budget Bytes, even though that’s literally just crumbling some tofu, mixing it with a few ingredients (the recipe calls for fresh cilantro but I use freeze dried because it’s so much easier and it isn’t so wasteful), and then putting it and a few other things in containers. Anyone know of anything even easier than that? (I can’t imagine what could possibly be easier, but…) I’m just so tired and I can’t keep spending $20 on food every day at work. And if you’re wondering, I don’t have the energy to do anything else I need to do, either, so I can’t even skip other things in order to make sure I actually eat healthy food that might help with my energy level. I can’t even get to work on time because I’m so tired. Edit: Must contain both protein and vegetables.
