How to make really good black beans
Basically title. I'm a good cook, but there are a few things that elude me. One of those things is Mexican-style beans. I have only rarely had really good black beans, but on a recent trip to Phoenix I had some absolutely killer black beans. Full of flavor and just delicious - whole beans in a slightly thick to almost sticky sauce, and not much of it (but not just a pile of cooked beans with no liquid, either. It was one of those flavors though that wasn't distinct in any single element; I couldn't really determine what was in them just by tasting (for example, most of the salsas I had there tasted distinctly of Mexican oregano, a taste I can pick out of lineup reliably). Didn't detect massive amount of lard in there, for example but maybe that's hard to determine (I have had absolutely excellent pinto-based frijoles refritos with no lard, for example). Any suggestions on how to replicate something like that, or failing a replica of a flavor that's hard to use a lot of specific adjectives with, just really good black beans? the Best Black Beans I’ve ever had!
I listened to this great podcast with Dan Buettner & Andrew Zimmern where they discuss how to cook beans (among many other cool things). According to their decades of experience, the method that yields the best flavor: low and very slow cooking. Start from dry and add a few simple ingredients (salt and maybe a spice or two). Tossed in a thinly sliced shallot (soaked and rinsed to get rid of any harshness) and lemon pepper. Served with brown rice. AMAZING! The best black beans I’ve ever had. Just wanted to share this cheat code. I eat a burrito every morning with 240 calories worth of black beans and some cheese. Important: drain the beans and keep them whole! This contains enough fibre and sugar etc to prevent hunger until late evening. Losing weight has never been easier. Keeping the beans whole extends digestion time - which is why they’re great for weight loss. It works like a natural version of ozempic - your stomach is literally full for much longer. NSFW warning: the gas is bad. And full disclosure, for the first time ever, I clogged my toilet yesterday. Eating black beans = massive improvements in overall health
About a month ago, I started eating a cup of black beans on a daily basis to increase my fiber intake. I have always had major issues with falling asleep quickly and sleeping soundly, but a few days into eating black beans regularly my sleep improved drastically. I'd fall asleep within about 30 minutes, sleep restfully, and wake up refreshed. This is unheard of for me - normally, waking up feels like rising from the dead. I also feel okay when I've gotten insufficient sleep, when typically that would make me non-functional. Another thing I've started noticing is a huge decrease in anxiety, which I've struggled with for most of my life. I tend to have a lot of ambient anxiety, and a tendency to overreact to or overthink things. Lately though, stuff that would really upset me is fairly easy to ignore and move on from. Apart from improvements in sleep and mental health, my skin looks and feels very clear and soft, and my hair has gotten thicker. Before the black beans, my skin was super dry and my hair would fall out constantly. I've tried eating other types of beans (mainly pinto, cannellini, chickpeas and lentils) when I've run out of black beans, and haven't noticed the same effects. I haven't made any major changes to my diet apart from adding in black beans, probably don't consume as much produce as I ought to, and will occasionally eat plenty of sugar, fried food and processed food. That doesn't seem to affect me that badly, and cleaning up my diet (minus the black beans) doesn't have the same sleep-promoting or anxiolytic effects. I'm reading that black beans contain magnesium, tryptophan, B vitamins and potassium (along with the fiber and protein), but I've tried supplementing with all of these and never had such good results. Does anyone know why black beans could be helping this much? EDIT: Wow, this post blew up! I switched to dried beans recently because they're a lot cheaper, and buy mine in 25-pound bags at my local bulk food store (Smart & Final, since my Costco doesn't carry dried beans). I've been using the following Mexican black beans recipe to prepare them, you fry up 1/2 an onion and 2 cloves of garlic in 1 tsp olive oil, then dump in one can of beans (liquid included) with 1 tsp of cumin and 1/2 tsp of salt. Without added spices, the beans are bland enough taste-wise that you can eat them alongside whatever other meal you're having, kind of like you would with rice or bread. For those who want to make them plain with no seasonings, add 2 cups of dry black beans (after removing cracked beans) to 6 cups of water, then cook on high pressure in your Instant Pot. No soaking is required, just add the dry beans and cook for 20 minutes for firmer beans and 30 minutes for mushier ones. I'd recommend not overcooking though, because too much heat will destroy some of the nutrients. Once the cook cycle is finished, let the pressure release naturally for 20 minutes (aka, do not unvent the pressure cooker), then vent the remaining steam afterwards and eat. Steam-fried in evoo and veggie broth: chopped onion, celery, red bell pepper, sliced carrots, sliced yellow squash, mushrooms and minced garlic. When almost done I added canned petite tomatoes, kidney and black beans, dried thyme, bay leaf, black and cayenne pepper and fresh minced parsley, covered and let simmer before stirring in the cooked brown rice. I've been using the following Mexican black beans recipe to prepare them, you fry up 1/2 an onion and 2 cloves of garlic in 1 tsp olive oil, then dump in one can of beans (liquid included) with 1 tsp of cumin and 1/2 tsp of salt. Without added spices, the beans are bland enough taste-wise that you can eat them alongside whatever other meal you're having, kind of like you would with rice or bread. For those who want to make them plain with no seasonings, add 2 cups of dry black beans (after removing cracked beans) to 6 cups of water, then cook on high pressure in your Instant Pot. No soaking is required, just add the dry beans and cook for 20 minutes for firmer beans and 30 minutes for mushier ones. I'd recommend not overcooking though, because too much heat will destroy some of the nutrients. Once the cook cycle is finished, let the pressure release naturally for 20 minutes (aka, do not unvent the pressure cooker), then vent the remaining steam afterwards and eat. Eating black beans = massive improvements in overall health?
About a month ago, I started eating a cup of black beans on a daily basis to increase my fiber intake. I have always had major issues with falling asleep quickly and sleeping soundly, but a few days into eating black beans regularly my sleep improved drastically. I'd fall asleep within about 30 minutes, sleep restfully, and wake up refreshed. This is unheard of for me - normally, waking up feels like rising from the dead. I also feel okay when I've gotten insufficient sleep, when typically that would make me non-functional. Another thing I've started noticing is a huge decrease in anxiety, which I've struggled with for most of my life. I tend to have a lot of ambient anxiety, and a tendency to overreact to or overthink things. Lately though, stuff that would really upset me is fairly easy to ignore and move on from. Apart from improvements in sleep and mental health, my skin looks and feels very clear and soft, and my hair has gotten thicker. Before the black beans, my skin was super dry and my hair would fall out constantly. I've tried eating other types of beans (mainly pinto, cannellini, chickpeas and lentils) when I've run out of black beans, and haven't noticed the same effects. I haven't made any major changes to my diet apart from adding in black beans, probably don't consume as much produce as I ought to, and will occasionally eat plenty of sugar, fried food and processed food. That doesn't seem to affect me that badly, and cleaning up my diet (minus the black beans) doesn't have the same sleep-promoting or anxiolytic effects. I'm reading that black beans contain magnesium, tryptophan, B vitamins and potassium (along with the fiber and protein), but I've tried supplementing with all of these and never had such good results. I’d like to share a story that I just experienced this morning on my way home from work if y’all would please take the time to read it below. It’s about a little black-beaned girl named Spirit. (Sorry for my face I was crying)
Today on my way home from work in the morning, I saw a black kitten get hit from a car in front of my parking lot before I turned into it. She was paralyzed at her waist downward and she was possibly internally bleeding and was beginning to choke as she could be drowning inside her lungs. I didn’t know what to do and all animal vets and shelters were closed. I called my fiancé down and she knows cats better than I do and she said she believed she was dying. I cried so hard like I’ve known this kitten my whole life. She was so soft and so sweet. She didn’t hiss at me or drag herself away from me. She immediately crawled into my neck for some sort of sense of safety. It broke my heart and was extremely traumatic for me. I’m a massive cat lover and I have two cats of my own. With my own personal one being a female that I raised from a kitten so I was personally experiencing this a lot harder as it hit me more to home with thinking about my own four legged daughter. This little void kitten was slowly losing her life in my arms and she never screamed or scratched me. I tried to drive up north to find any place to get her in for help. As I drove, I spoke to her and gently rubbed her upper body. I told her my short life story about my love for cats and I gave her many affirmations. I told her all about my cats and my family. I even decided that she deserved her own name. I named her Spirit after my favorite childhood movie, Spirited Away. As I kept driving her breathing slowed, and so did her movements. As I spoke to her I began to cry intensely like I’ve never have before. It was because as I was petting her I felt the same sensations, sounds, and feelings that I felt from pet I’ve ever owned that had to be put down. So I was unfortunately aware of the passing of an animal. As I spoke her new name and told her I loved her, she took her last breath and left me there on that road. I then turned around, still in my work clothes covered in her fur, and headed back home. I laid her down in a field beside where I lived and curled her up into a little extra toasted cinnamon roll. I kissed her head and said goodbye. I may have known you barely two hours Spirit, but this experience you have given me will stay with me forever. You didn’t know who I was but you knew I wasn’t going to hurt you. And I am happy that I was the only one to have shown you what it feels like to be loved. And I will love you forever. Does this black bean burger look like it was cooked at all?
Ordered online - Black Bean (well), Pickles, Lettuce, Tomato. I did not select the option for cheese or special sauce. There there was no “remove” option or a place to add notes. I double checked my burger after I got to my car because I am lactose intolerant and cheese finds its way on my burgers regardless. There was cheese. Mistakes happen. I showed them my order and the receipt, and I am told I was wrong that there is an option to remove the cheese and add notes. I checked multiple times. There is not. I get my new burger (first picture) and it was only warm because the bun was warm. At this point I am just going home and grab a French fry. It’s cold. They didn’t bother to cook the burger so why would they even warm up the fries. I got home, wiped the sauce off, and pan fried it (2nd picture). It wasn’t the worst burger I have ever had, but damn does that place suck! I have never been given a raw black bean burger before 🤮 Their first attempt at least had pickles. Cuban Black Beans. They said "you will come back and thank me". I'm here to do it.
It's freezing cold and I'm looking for something good to cook and came across this legend of a recipe. Its one that I discovered on reddit a long time ago. I have made this countless times in the past. Holy shit are they delicious. And the recipe, well... chef's kiss just kind of speaks for itself. Anyways... this may already be out here somewhere on reddit and if it is, I'm sorry. But if it's not, then I'm not sorry at all. In these troubling times, the world needs this. And whoever you are that wrote it (and then sent me a copy after it got removed for some reason and i asked for one) - you've brought countless delicious bowls of Cuban Black Beans (or CBBs as I refer to them) to my belly and I'm grateful for it. I hope you're well. Here's the recipe: Oh my friend, it's called Cuban Black Beans. REAL Cuban black beans, not that shit they serve in restaurants. You get a lot of diced sweet onions and peppers (red is best balance of sweetness to price) and you cook them over medium heat in a lot of olive oil. How much olive oil? Say you have one big onion and two decent sized peppers, then I say at least a half a cup. Once the onions are softening up, you add garlic. How much garlic? ALL THE FUCKING GARLIC. Then you cool it down with some white wine (not too sweet, something middling). Let it steam off for a minute. What you're doing is killing the rest of that raw garlic taste and letting the alcohol in the wine bring out the rest of the flavors. Then you add black beans. I use canned, un-drained straight beans (don't get the kind that's labeled "black bean soup"). Some will tell you canned isn't as good. I say bullshit. I use one and a half times as much by volume as I have of the onion/pepper/garlic mixture. Simmer the beans for a bit, low-medium. Then you will add an ounce of ground cumin, a shot glass' worth of oregano, and a packet or three of Goya Sazon (if you don't know what that is, look in the Mexican/Spanish/Ethnic section and look for little boxes that say Goya). If you want to be a boss, add three or four bay leaves, but don't forget to pull them out later -- no one wants to eat a bay leaf. Mix it in well. Either move it to a crock pot or put it in a 225* oven. Check it every once in a while -- you want the beans to be soft. You do not want this to burn, so scrape the bottom. I'd sooner eat your shit than burnt black beans, and so would you. Now after a few hours taste it. More flavor? Add more cumin and Goya. Needs a kick? Add some lime. You know what? FUCK YOU, ADD LIME ANYWAY. Traditionally, this is served over rice. FUCK THAT. I serve it in a bowl. Maybe throw some shredded pork on that bitch. FUCK ME. If you use enough onions, peppers, and wine, these will be surprisingly sweet. (My Abuelita accused me of adding sugar, that bitch.) The beans, cumin, and oregano will give it a rich, earthy flavor. Goya is just magic. And the wine and lime will give just a hint of tartness. The beans, slow-cooked, are almost meaty (in a braised meat sort of way, not in a fuck-yeah-cow-meat kind of way). Once they cool down a bit, it will have a thicker texture, so let it sit for a little bit. Best? Eat it the next day after reheating. We make this in a four gallon vessel and gorge for a week. Now let's say you're having a party. You will get a bunch of dried peppers, chop them fine, and soak them in that wine (simmer it!). And you will add this goodness to the mix after the saute stage, so they soften and diffuse. And maybe some Sirracha, but only if you want to guarantee getting laid that night. Dip your immersion blender in there for a little bit -- get it half blended. Then you'll let it cool. Black Beans have become a staple in my diet
In early 2017, I switched to a primarily vegetarian diet, eating meat maybe 1-2 per month. After being a guy who ate meat multiple times per day everyday. I've easily managed to maintain my size and have enjoyed the transition so far. Being asked "how do I get enough protein," will probably always be there... For me, black beans in a simple breakfast burrito have become a staple in my diet. Legumes contain the highest fiber-protein concentration compared to any other food groups.
