Cottage Cheese Egg Muffins with Spinach and Feta (10 minutes + bake time)
10 minute recipe that made breakfast for me all week. 4 ingredients plus seasonings. Pretty simple (mostly scooping and stirring). I was searching for high protein breakfast ideas for my bestie and saw "egg muffins" made with cottage cheese, and I already had the ingredients. I was concerned that raw spinach would make them watery or runny, but they turned out perfectly. I think they'd be good with any combination of add-ins. Broccoli and white cheddar is on my list to try next time. Cottage Cheese Egg Muffins 1 cup cottage cheese 6 large eggs 1 cup fresh spinach (chopped) ½ c to ¾ c feta (crumbled; I used about 5 oz of Greek feta, not pre-crumbled) 1 tsp baking powder ½ tsp garlic powder ¼ to ½ tsp black pepper ¼ to ½ tsp sea salt Preheat oven to 375°F. Grease muffin tin (I used silicone muffin trays, a food service glove, and dab of butter). Mash cottage cheese in a bowl with a fork. Add all of the seasonings and mix. Use the fork to beat the eggs in a separate bowl, then combine with the cottage cheese. Add the feta and spinach. Fill muffin cups about ¾ full. This recipe is perfect for 12 standard size egg muffins. Bake 18-20 minutes, until muffins look set and center just springs back. Do not overbake! Cool a few minutes, then serve or store in the fridge in a sealed container. Microwave 45 seconds to 1 minute to reheat. Cottage Cheese Cake (Again!) (353 kcal whole thing)
Hey! I've already shared recipe for this cottage cheese based cake before, this time I'm sharing a version with another crust, that is half the calories of other one, bringing total calorie count for entire cake from 500 kcal to 350 kcal. And apparently this has to be said: this is a cottage cheese cake, as in a cake made with cottage cheese as a filling. This is not a "cheesecake". I thought all different ingredients and techniques would speak for themselves, but no... A. Crust (156 kcal / 8g protein / 0g fat / 29g carbs / 1g fiber) For the most part it is similar to what it was before, just with egg white instead of applesauce, making it more like some sort of angel food cake / sweet cloud bread. Ingredients 50g Egg Whites 0.5g Cream of Tartar 1g Liquid Sucralose Sweetener (can be any other, to taste) 24g AP Flour 12g Cornstarch 3g Baking Powder 10g Powdered Erythritol (preferably this, but can also be any other sweetener, won't make or brake it) 0.4g Salt 0.5g Xanthan Gum Whip egg whites with cream of tartar and sweetener until stiff peaks, pre-mix the rest of dry ingredients and gently fold them in with spatula until incorporated, do not overmix to not deflate egg whites. Transfer this substance to cake mold/springform and bake in pre-heated oven for 10 minutes at 190C, then 15 more minutes at 170C. Once done, let it cool on a cooling rack. B. Filling (197 kcal / 31g protein / 6g fat / 4g carbs) This is essentially unchanged from last time, with main difference that this time I whipped it more, so it is more fluffy (not necessarily better or worse, just different texture, although I usually prefer denser variant more). Low Fat Cottage Cheese 2g Liquid Sucralose Sweetener (can be any other, to taste) 0.3g Xanthan Gum 10g Powdered Gelatin 44g Water (for blooming) 44g Water (again) 8 Tablets of Sucralose Sweetener (can be any other, to taste) 0.5g Cream Of Tartar 4 Drops of whatever Flavoring (I used banana this time; any will do, or none at all, very optional) 0.4g Cocoa Powder (for decoration) Bloom gelatin in cold water for around 10 minutes, blend cottage cheese with sweetener and xanthan gum, then give it a good whip with electric whisk (not sure this is even useful, but why not...), set aside. Bring other water to boil together with sweetener and flavoring if using, add to bloomed gelatin and stir until dissolved, add cream of tartar and whip until stiff peaks. Add cottage cheese and whip some more, until fully incorporated. Whip for longer if fluffier texture is desired, otherwise dense and easily pourable is good as well. Put cake crust back into same mold/springform and pour cottage cheese marshmallow mixture over it. Shake/tap/slap against the table until it is evenly distributed, then refrigerate for a couple of hours until gelatin fully sets. To extract it safely from mold, I use hair dryer to lightly warm up mold walls and unstick filling from them without tearing. If desired, dust with cocoa powder or whatever else for decoration. tl;dr Whip egg white; fold in dry; bake Whip dense jelly water; add blended cottage cheese; whip some more; pour over crust It is for the most part sweetened raw cottage cheese, so don't expect it to taste like much else! Also I prefer the other crust I posted (one with whipped applesauce), this one is good for calories tho, just not as tender and cake-y, but it does the job. Also this time I used cake mold that is a bit smaller in diameter compared to previous post, but cake is taller instead. Kind of amazes me that when you punch the title of this post into the search bar, very few results show up. 1/2 cup 4% cottage cheese with 1 tbsp organic peanut butter (peanuts, salt) stirred in. Any NSA peanut butter will do though. 215 cal, 15g protein, 13.5g fat, 7.5g carbs. 342mg sodium, 160mg potassium, 0mg magnesium. Cut the recipe in half and tack it onto a smaller meal for dessert if you can't spend that many carbs. I've had over 100 of these in the past 6 months and they just don't get old to me. How far can I change the taste of cottage cheese while keeping it low calorie?
I'm on a diet, and cottage cheese for me is a literal nutritional treasure. It feels like an illegal hack for cheap protein source with low calories. The problem is, I never liked its taste. It has a very strong touch of acid/salt to it that I never got used to it. The only way I made it cool was by adding a ton of olive oil and za'atar, but my objective now is keeping it super low cal, and going with fats is the opposite direction. One other way I tried was by adding tomatoes, lettuce, black pepper, and cumin, transforming it into a salad. This did slightly hide the strong taste, but it was still there. Do you guys have some trick up your sleeves that I can use here to ease my daily pain? BTW, I know that Greek yogurt is the superior alternative in every angle, but it's just way more expensive where I live. It can be 5x the price for the same amount compared to cottage. Here's the recipe: cottage cheese 200g 2 eggs 1-2 tbsp sugar 2 tbsp sour cream 100ml milk 30ml butter or oil pinch of salt, vanilla Blend everything until smooth, then add: 120-130g flour 1 tsp baking powder Mix with a whisk and cook in a waffle maker. That's it. Today I swapped sugar for sweetener and threw in about 20g of whole wheat flour — tastes basically the same but a little less guilty lol. Back on my cottage cheese bs: high protein tiramisu
Adapted my cottage cheese pudding recipe to make tiramisu with 291 calories per serving and 21.5 G protein! I had half the tray as a serving. Recipe: Entire recipe (583 calories, 43 G protein): -10 lady fingers, soaked in 2 shots of espresso (300 calories) -290 grams 2% cottage cheese (I use Good Culture!) (211 calories) -12 grams sugar free vanilla pudding mix (42 calories) -1 cup unsweetened almond milk (I definitely didn’t use a full cup, just logged a full cup to be safe!) (30 calories) -Soak the lady fingers in espresso and layer 5 in the bottom of a small tray (2nd picture/coffee for size reference) -Blend together cottage cheese, pudding mix, and almond milk until smooth. Add the almond milk slowly until it’s at your desired consistency *I did not use the full cup of almond milk! I was eyeballing it and logged a cup to be safe *the pudding mix will make the mixture thicken over time, so consider that when blending to your desired consistency -pour about half the cottage cheese mixture over the first layer of lady fingers -layer on the last 5 lady fingers and cover with the rest of the cottage cheese mixture -top with a dusting of cocoa powder (I probably used 1-2tbsp of cocoa powder which I chose not to log, but it probably added 10-20 calories) submitted by /u/lyss1797 to r/Volumeeating [link] [comments]

Cottage Cheese is the New Egg?
Am I the last person alive who realized that cottage cheese is the perfect way to make eggs stretch out now that egg prices are astronomical? I used to eat a veggie scramble every morning with 2-3 eggs. I’ve since dropped that routine to maybe 2-3 times a week because (1) sourcing eggs is crazy and (2) paying an arm and a leg for eggs is crazy. I normally hate cottage cheese (it’s a texture thing for me), but figured I should learn to love it since it’s still a relatively affordable way to get vegetarian protein in. Someone suggested adding it to scrambled eggs in another sub, so I tried it. And ho-lee! SUCH a great idea! I cook the veg, then cook the cottage cheese to dry it out, then add spices (I like black pepper, cumin, chili powder, and Mexican oregano) and an egg and scramble. Add the veggies back in right before plating. It’s not super pretty, but it’s tasty and lets me have my morning scramble again! Before, 3 eggs alone were $1.125 for 18g protein per breakfast. Now, 1 serving of cottage cheese + 1 egg is $0.825 for 17g protein per breakfast. A $0.30 savings each breakfast, but almost more importantly: I don’t have to get to the store immediately after it opens and throw elbows to get eggs. Aside: Greek yogurt also FTW. Anyone use it in savory applications? I’ll sub it for half the mayo or sour cream in recipes, but am curious what else y’all got. Thanks. —- Cost breakdown: I can get a 48oz tub of cottage cheese for about $5. It has 11 half-cup servings. 90 kcals, 11g of protein per. $0.041/gram of protein. $0.45 per serving. If I’m lucky, I can get 24ea eggs for $9. 70 kcals, 6g of protein per. $0.063/gram protein. $0.375 per serving. I can get a 48oz tub of Greek yogurt for about $7. If you want a seriously low calorie but satisfying lunch, low fat cottage cheese with pepper, cucumber, and tomatoes. I have it with a premier protein shake midway through my work day and I crave it. Cracked the cottage cheese code (if you like hummus)
I do not like cottage cheese. My taste buds can’t be convinced into thinking it’s “just like sour cream” - it’s chunky and the word “chunky” is just a bummer. But I can’t deny how much protein is in it. And I really struggle to get 100g of protein each day. So I have tried blending it (I don’t like the texture, so all my methods included blending). I’ve made it into Buffalo dip (not awful. Maybe 5/10. But not worth the effort to make it. I don’t love Buffalo dip that much anyway). I’ve added PB2 powder and blended and hoped for a sweet companion to some pretzel sticks. That was the closest to sour cream it probably ever tasted like. I’ve tried blending it with Colby Jack as a cheese dip. I didn’t think anything was worth the effort of bringing out my blender and forcing myself to eat it. So I put it on the shelf. Enter taking out my blender to make hummus, which I do pretty regularly. (I can eat practically any veggie dipped in hummus) and had a lightbulb moment of adding cottage cheese. My thought being that the garlic is so strong it has to mask the cottage cheese taste, right? And boom goes the dynamite - it did. Found a random recipe through Google, here it is if you don’t wanna look it up yourself. 1 can chickpeas, rinsed 1 cup cottage cheese ¼ cup tahini 2 cloves garlic ¼ cup fresh lemon juice 1 teaspoon cumin ½ teaspoon salt I just ate 163 grams of it (maybe a 1/4 cup) and my Lose It app generated it as being 14g of protein. Made my carrots a lovely little experience. If you have any “yeah, that deadened the cottage cheese taste” recipes, I’d love to hear them. But hopefully this helps someone trying to up their protein. I want to like cottage cheese but just can’t get into it. Any good recipes to help?
I have tried it as is, blended, with honey, with herbs + spices and evoo, in baked dishes and more but it just has a kinda cheesy taste still that is not awful but not pleasant. I love cheese, plain Greek yogurt and most foods but this has been a hard one for me. Any tips or suggestions on uses? I just really like the protein content in it and feel like I may just not have found the recipe yet Edit: I have been trying the Good Culture Brand mostly Thank you all who have shared ideas. accidentally bought cottage cheese... how do i eat this

Your favourite ways to use cottage cheese?
I um... Don't love cottage 🙂 Along side okra it's probably the only food I don't particularly enjoy (don't hate, just meh at best) lol. BUT, before I completely give up on it I'd like to hear how others like using it and maybe draw some inspiration for new ways to utilize it. So if you love cottage cheese (for some reason) or got any good recipes or methods using cottage cheese see this as your place to go into detail about your foodventures ;) Edit: for any future cottage haters who may find this thread, awesome suggestions here, whipping it in the food processor absolutely transformed it for me and I highly recommend giving it a try! Cottage Cheese - do I hate it or is it misunderstood?
I got a pot of cottage cheese by accident when I meant to buy ricotta or something like that for a recipe. Anyway, I have this pot in the fridge and I hate to waste it, but I just can't think of anything I'd like to use it in. I think I don't really like it either. I googled recipes but nothing made me think it was worth eating. Am I missing something yummy to do with this? I'd rather not waste it, and maybe I'm missing a trick that will make me enjoy it? Eta: thanks for all the recipes! I had no idea this community felt so strongly about their cottage Cheese! I made this cottage Cheese casserole in the end and it was chefs kiss.
