Espresso Martini - Foam?
My espresso martini's are spot on for flavor. However they're lacking foam. I'm using cold brew concentrate, a real espresso is out of the question. It's a pretty basic recipe: 2 oz Vodka 1 oz cold brew concentrate (local coffee roaster) .5 oz Mr Black .5 oz simple syrup Add ice, shake like hell, strain. Like I say, it tastes great, but no foam. Right now my work around is a few dashes of Fee Foam. It's my understanding that it should foam, at least with a real espresso shot. Making Espresso Martini Foam Last?
Any tips on making more robust espresso martini foam? Mine usually come out looking great initially, but the foam dissipates relatively quickly. For context, was out at two bars this weekend (one high end, one a typical restaurant bar) and noticed that the foam at both bars lasted the duration of the drink rather than fading after a few sips. The foam at both bars was also more bubbly/had tiny air pockets compared to the smooth foam I usually get. My current process for making two drinks (almost always am making two at once) is: 1) Chill coupes in freezer 2) Combine 4 oz Vodka, 2 oz Hot Espresso (fresh from Nespresso machine), 1 oz of Kahlua (might swap with Mr. Black soon) and 1/2 oz Simple Syrup in small tin 3) Shake with two large cubes (picked this up from Reddit comments) 4) Double strain into chilled coupes 5) Serve with coffee bean garnish They come out looking great but the foam does not last. Have tinkered with reverse dry shaking/using a milk frother before adding ice, but have had little luck. Open to tinkering with the recipe or type of espresso used. Week 1: New Year, New Recipe - Espresso Martini “Rainbow” Cookies
These were fun! Super delicious in their own right, but unfortunately I can barely taste any espresso, which was sort of the whole point. I think I went too light on the coffee jelly between the layers, and I would amp up the espresso powder and coffee liqueur next time. Wish I got more distinction in the bottom two layers, color-wise. My espresso martini. Not sure what to improve on.
My recipe is chilled martini glass before starting, espresso (try to use fresh when it’s slower and I can brew it), espresso vodka 4 pour, kahlua 3 pour, vanilla vodka 2 pour. Simple 2-3 pour. Wet shake, dry shake, then double strain. Espresso powder swirled then beans. This is my 3rd month in bartending and my espresso martini has come so far from what it was. The foam seems to be very thick the beans don’t sink much at all. I can’t try it because I’m only 18 in NY I can bartender under age. Can’t wait till I can make these for myself. Give me suggestions please! And yes it is strong but my bar mates showed me a 3 pour of each vodka we have side by side. Espresso martinis -- seeking expert opinion
The context: my wife's favorite cocktail is an espresso martini, and I've seen, time and again, a lot of variations on different recipes, or contests with winning recipes, and they tend to involve cold brew concentrate or actual espresso. The problem: I don't stock coffee, or care about it, and espresso machines are expensive. 1) can I just substitute espresso for cold brew concentrate whenever I see it in a recipe? 2) if the espresso is really critical to the recipe, then I'm down to get her a gift for her birthday... so is there an easy way I could make espresso at home? I've researched it and come to two conclusions: aeropress (or a variation of it), or a manual press (like the flair neo) are probably the cheapest ways of doing it. Does it matter which one? Is coffee just coffee? What about which one makes a more stable foam? Bonus question: this video seems to indicate a lot of science going on when the alcohol is being added directly to the aeropress, is it BS? Standard espresso martini recipe
New bartender here. Tonight was my 5th shift behind the bar since i was moved up from serving, and I finally had a couple ask for espresso martinis. I winged it and made them with 2oz of vodka, one ounce cold brew, 1/2 ounce Bailey’s, and 1/2 ounce simple. It tasted good to me, but the customers said they couldn’t taste enough espresso, so I had to remake them. After that I checked here for a recipe, and it seems like everyone has their own thing going on. I need to know a standard recipe, so i can move forward with that and then tweak it and add my own flair later on if i want to. Can any of you help with this? EDIT: I used baileys because we were out of Khalua tonight. And cold brew instead of actual espresso because our machine is down.
