I've been on this diet for 6 months. Here's a list of meals I rotate through regularly.
Chicken recipes: stir fry with ground chicken (very similar to this recipe, but add more veggies, cut the sugar, and use chicken) sheet pan chicken meatballs sheet pan chicken thighs with veggies chicken shawarma plates chicken tacos turkey chili enchilada casserole with black beans (with chicken, optional) thai green curry with brown rice (with chicken, optional) Seafood recipes: baked salmon coconut green curry cod baja tilapia plates or tacos cod/tilapia/tuna salad with potatoes, red pepper, olives, artichoke hearts, and greens nola style saucy shrimp poké bowls shrimp tacos Vegetarian recipes: red beans and rice (omit the sausage, double the vegetables) harissa chickpeas with caramelized onions and greens creamy tomato white beans with arugula harissa eggplant, chickpeas, and tomatoes whole wheat flatbread pizza loaded sweet potatoes acorn squash stuffed with mushrooms, grain, veggies, cheese pumpkin black bean soup kale and white bean soup minestrone curried red lentils fried tofu zucchini/veggie fritters with yogurt sauce channa masala (curried chickpeas) roasted chickpea, broccoli, sweet potato, quinoa bowls bruschetta vegetarian tacos I've noticed some beginners posting on this sub about how to add variety or what recipes to make so I thought this list may be helpful. Can anyone recommend some good, easy recipes for beginners?
(26 y/o male) Earlier this year I weighed 250, down to about 215 when I weighed myself Thanksgiving weekend. I was always very skinny, but gained a lot of weight at my last job sitting at a desk all day. I’m currently working in a warehouse, but feel myself reverting to a sedentary lifestyle and unhealthy stress eating habits (shoutout depression and hating my job). I have high blood pressure, and high cholesterol runs in my family, and I’m not trying to have a heart attack by 30. I’m not much of a chef, but I love Mediterranean food and would love to switch to a mostly Mediterranean diet. I don’t have any experience prepping Mediterranean meals, so I’d take any help I can get! Feel free to share links or tips! Thanks! Finally tried a recipe from Elena Paravantes’ Mediterranean Diet Cookbook!
I posted here a while ago about my fascination with this dietitian and her amazing Tedtalk on Mediterranean food. Finally I made this risotto like dish from her book. It was healthy, quick to make, and delicious. I feared it was too watery at first so I strayed from the recipe a bit in uncovering the pot and having higher heat to reduce moisture. I did not have freshly shaved parmesan but I did have powdered so that was all I used. I also only had a quarter of an onion and the recipe called for one full onion. I will say the 1/3 cup of olive oil was a bit much as it resulted in a greasiness in the mouth. Mediterranean diet cookbooks that are meant for beginners and simpler recipes/recipes for busy work weeks?
I have a few cookbooks that have recipes that could be considered Mediterranean but the ingredients lists are either way too long or it takes forever to make the meal. My boyfriend and I want to make the switch for a healthier diet as it was recommended to him by his doctor, but with both him and I working salary positions that are requiring extra hours, it’s been a bit difficult meal planning. Middle Eastern/Mediterranean for beginners?
I'm about to move away for graduate school and never learned how to properly cook anything other than ground beef and rice. Middle Eastern is my favorite cuisine with delicious spices, high protein options, lots of vegetables, and falafel. Learning to cook was intimidating, but I'm actually quite motivated now that I've thought of a cuisine that I'd actually like to cook (rather than steak and potatoes... bland). How hard would this be to accomplish? I'm not looking to make my own baba ganoush or grind my own chickpeas.
