Four months in Thailand, finally stopped paying 180 baht for tourist pad thai
Been remote for two years. Did Barcelona, Lisbon, Berlin. Too expensive. Someone said Bangkok was cheap. Got here in September. First month was rough. Kept ending up at restaurants with English menus and other foreigners. There was a pad thai place next to my building, 180 baht. Probably the most expensive option on the block but it was downstairs. Went there like twelve times because at least I wouldn't get food poisoning again. Already got sick once in week two, spent three days feeling miserable. Tried working from my apartment, couldn't do it. Got a coworking space, 4000 baht a month. Full of people talking about their AI startups. Didn't renew after the first month. Around week five I figured out I should switch Google Maps to Thai. Suddenly saw a bunch of restaurant names I'd been scrolling past. Found a night market in Saphan Khwai, had to Grab twenty minutes out. Zero foreigners. Old lady selling som tam laughed when I tried to order. Food was 50 baht. Way better than anything I'd had. Too far to go all the time but I went back a few times. Moved to Chiang Mai in November. Everyone talks about the digital nomad scene. It's real but kind of exhausting. Same conversations everywhere. Found a cafe off Nimmanhaemin instead. 40 baht coffee, Thai students studying, good wifi. Worked there most days for like six weeks. Found a tam sang place near Warorot. 35 baht. Construction workers eating there. No English. I just pointed at what other people had. Started going once or twice a week. Owner recognized me after a while. Did a visa extension in October, 1900 baht at immigration. Took four hours. Had to do a visa run to Laos in December. Two days, 150 dollars, couldn't work. Should've planned that better. December was pretty lonely. Can't really have conversations beyond ordering food. The other nomads are friendly but everyone's leaving in a few weeks. Thought about going home but already paid rent and flights were expensive. The Instagram laptop beach thing is bullshit by the way. Tried it once. Couldn't see my screen, no power, sand everywhere. Some stuff that helped: stop using English for everything. Google Maps in Thai even if you can't read it. Screenshot locations with Thai text for Grab drivers. Find one cafe and one lunch spot and just stick with them. Boring but you waste less time. Budget is around 2000 a month. 500 rent (studio in Nimman, probably overpaying), 600 food (eating out every meal), 150 cafes, 200 transport, rest is random stuff and visa costs. Could do it cheaper if I cooked but I'm lazy. Work wise first month was bad, kept getting distracted. Now I have a routine, same cafe mornings, home or different cafe afternoons. Timezone sucks, sometimes 2am calls with US clients. But I'm saving like 1500 a month compared to Europe so it's worth it. Going to Japan in February. Nervous about the cost. If anyone's done Tokyo on a nomad budget let me know about SIM vs pocket wifi. Four months in and honestly not sure if this is sustainable long term. It's cheaper but also isolating. Not a permanent vacation like Instagram makes it look. But the food is good when you find the right places and I'm saving money. So staying for now. Edit: Getting a lot of questions so adding some info. Budget: 500 rent, 600 food (eating out every meal), 150 cafes, 200 transport, 500 random/visa stuff. Around 2000 total. Finding local places: Took me forever to figure out. Switching Google Maps to Thai helped. Started using an app called PawPaw around month two, it filters out tourist traps and has translation cards for drivers. Not perfect but better than juggling Maps and Translate. Been using it for Japan research too. Visa: Did 30-day extension first (1900 baht at immigration), then Laos visa run in December (150 USD total). Pad Thai is the weakest dish in Thai cuisine
Let me preface this by saying Thai food is excellent. This post is specifically about Pad Thai and the unnecessary hype it receives. Every Thai restaurant menu is stacked with way better options - pad see ew, prik pow, and drunken noodles, khao soi to name a few… yet Pad Thai is the one dish that became the ambassador for the whole cuisine. Pad Thai is okay, but it’s the most watered-down ‘intro’ plate in the lineup. Sweet, peanutty, and safe, which is exactly why it blew up. Mildly disappointing Pad Thai (a story in 5 pictures)
So, I’ll take half the blame for this one. This kit cost close to $10, which I thought was reasonable for Pad Thai for 2. I glanced at the front of the package and liked what I saw so I bought it. If I had paid closer attention I might have realized that this package only contains sauce & noodles. I judged the contents of the package based on the graphics on the front which, to me, indicated there would be some sort of chicken and vegetables mixed in with the sauce but sadly there really was none. I had some stuff on hand that I added to bulk up this meal and in the end it was honestly super, SUPER yummy. The sauce was fantastic and the noodles gad a good bite to them… that said, I wouldn’t buy this again. It’s not a good deal for $10, but I would like to find a nice Pad Thai sauce to keep in my pantry for when the mood strikes. Pad Thai almost destroyed my marriage
(The title is hyperbolic clickbait, my marriage was never really in danger. TLDR at the bottom) January 9, 6:30pm: My wife brings home pad Thai from our local favorite. January 9, 6:42pm: Having demolished the delicious plateful of heaven, I longingly watch my wife as she slowly eats her portion. January 9, 6:45pm: My heart sinks as I look at our bank account and family budget. I realize that at ~$15 an order, my desire for pad Thai is undoubtedly more frequent than our budget allows. January 9, 7:00pm: ”What if I made my own?” January 9, 7:00pm to January 10, 1:00am: I tear the internet apart researching how to make pad Thai at home, as well as the fascinating history of the dish. Most notably, I come across JuicyFarts’ recipe, Hot Thai Kitchen’s video, and Joshua Weissman’s video. I create a list of ingredients. January 10, 9:00am: I get almost everything I need at the local supermarket, including a jar of premade pad Thai sauce. January 10 through January 13: I eat LITERALLY NOTHING BUT PAD THAI FOR FOUR DAYS STRAIGHT. My first attempt, with the premade sauce, was a travesty. I gradually get better while making it 2-3 times a day for several days, making my own sauce with adjustments as needed. I now have four bunches of green onion growing in cups in the windowsill. My breath reeks of fish sauce 24/7. I might be Italian-American, but now I have tamarind paste running through my veins. January 13, 6:00pm: My wife comes home to pad Thai for the 4th time in a row. She’s upset, throwing around words like “health” and “obsession” and “why can’t you go back to making pizza?” It doesn’t matter. Even if she leaves me, I can still make a decent pad Thai. January 14: I realize I love my wife, probably even more than I love pad Thai. I stop making pad Thai for a few days. January 18 through January 29: I continue to hone my skills, but less frequently, and usually when my wife isn’t home. I get really good. January 30 (last night): I have ascended. I am now master of the noodle. I can make pad Thai just as well, if not BETTER, than the local place, and at a fraction of the price. My life is forever changed. The way of the noodle is not easy, but it’s worth it. TLDR: I became obsessed with pad Thai, made it all the time, then toned it down so my wife wouldn’t leave me. A few years ago, I broke the record for the spiciest dish eaten in one sitting at my local Thai restaurant. Pad Horapa Thai Hot x9 included some sort of mix of ghost peppers and Carolina reapers. I was told men twice my size had failed. I have since broken my own record with Thai Hot x11!
