Vegan ice-cream that tastes better than dairy ice-cream (according to me)
For a 800g base (which fits nicely in 1L machines): Ingredients 400g Silken Tofu (50%) 150g Oat Milk (18.3%), you can use any milk, but oats match the tofu flavor 50g Coconut Oil (6.3%), use neutral tasting oil 50g Glucose (6.3%) 150g Sugar (18.8%) 2.4g Commercial Stabilizer (0.3%), or any other stabilizer 1.6g Salt (0.2%) Procedure Smooth the tofu. Place the tofu in your (1L) curing container and whisk until smooth and even, then set aside in the refrigerator. Mix the dries. In a small bowl, mix the sugar, stabilizer, and salt. Boil the base. Place the milk, oil, and glucose in a medium heavy-bottomed saucepan over medium-high heat, and cook, whisking occasionally to discourage scorching, until it comes to a full rolling boil. Add and cook. Whisk the dry mixture into the pot. Reduce the heat to a low simmer and continue cooking for 2 minutes, whisking to prevent scorching. Remove the pot from heat. Chill. Immediately (optionally strain) the ice cream base in a shallow pan or ice bath. It is ready when the base is at least room temperature. Add the base to the container with the tofu and whisk (or use a hand blender) until evenly combined. Cure. Transfer the cooled base to the refrigerator to cure for 4 hours, or preferably overnight, or at most 3 days. Churn. Place (strain) the base into the bowl of an ice cream maker and churn according to the manufacturer’s instructions. The ice-cream is ready when it thickens into the texture of soft-serve ice cream and holds its shape, typically 20 to 30 minutes. Harden. To freeze your ice-cream, immediately transfer it to a container with an airtight lid and store it in your freezer until it hardens completely, between 4 and 12 hours. I've made this many many times, and the texure is as good as normal ice-cream. With this recipe you can still infuse the milk with anything you want, you can infuse the base while curing, or add swirls/toppings. You really can just treat it as any normal ice-cream. It has a slight "hay/soy/grain" flavor, which is think is delicious just as-is. But as soon add any flavoring this is overpowered and it thus becomes a perfect base recipe. I think I have a problem… this is just for me and my 7 year old 😂 Swedish glacé brought from Tesco 10/10 Valsoia from Ocado 10/10 Lidl ones not tried yet Ben and Jerry’s 8/10 Gelato bros, got these from the vegan shop “all carrot no stick” in Sheffield. I’d rate them 10/10 but my daughter didn’t like them. first time in life i can enjoy ice cream
my whole life (33) i’ve been allergic to whey. my parents thought it was lactose but when i was 18 i tried lactaid milk and still got sick (itchy throat pain in stomach). then i tried a bite of a whey protein bar and thought i was going to die. about 3 years ago i was listening to ‘how i built this’ on npr and it was about chobani. i never thought about yogurt until the founder described greek yogurt is the process of removing the whey. so i decided wth. bought a cup of strawberry chobani and was BLOWN away. couldn’t believe how good it was. mild reaction orally and a bit of an upset stomach but very mild. figured it was trace amounts of whey. next day tried again. and again. about three years later i’ve worked my way up to the final boss. ice cream. i can’t believe i went my whole life without this stuff. i feel like ive discovered life all over. i also don’t think im ever looking at the vegan milks and desserts again. sorry lol thought i’d share thanks submitted by /u/Acrobatic_Hat_7089 to r/mildyinteresting [link] [comments]

Strawberry SO Delicious ice cream blended with dehydrated strawberries, scooped into a Kroger brand brioche bun (I’m surprised these are vegan), and drizzled with Holy Kakow chocolate syrup. The deets: sugar cone (perfect crunch) with: —1 mini scoop of chocolate coconut caramel (“Chocolate, creamy coconut milk, and homemade coconut caramel.”) Tasty, but needs mix-ins. Very smoothhhhhhhhhh and amazing texture. 7/10 —1 mini scoop of mocha mud pie (“Coffee-infused ice cream with chunks of brownies, chocolate stracciatella, and a ribbon of salted caramel.”) I would never be able to tell this flavor is vegan. 11/10. Amazing smooth texture with delicious brownies. —samples tried: *Chocolate AF (“A rich, deep, dark chocolate ice cream laced with chunks of homemade chocolate ganache.”) Very yummy, 8/10 *Blonde vs. Brownie (“Big chunks of fresh homemade brownie & blondie fight it out in an arena of vanilla & scorched sugar ice cream.”) Sounded promising but not my favorite. 6/10 *Mango sticky rice (“Jasmine rice and coconut milk ice cream with a swirl of beloved alphonso mango.”) Yall can probably tell I go for chocolate flavors, usually if a dessert doesn’t have chocolate then I won’t eat it. However, this flavor was transcendent. I set a boundary today with a man who was flirting with me, and it felt HORRIBLE because I was raised to be a people-pleaser. But also, I bought myself flowers and vegan ice cream as a reward afterwards.
Some of you may remember my post from a couple of days ago, where I asked how to safely turn down a male friend who was being extremely inappropriate with me and making me feel extremely unsafe. Since dealing with that problem, I had a chat with myself about how I somehow seem to end up in these scenarios where certain men ALWAYS seem to push every single last boundary I've ever set in place. Which meant that I would sit around and just take it until I just couldn't anymore, and that's when I would either absolutely explode and tell the boundary-violater to f*ck off to hell, or scramble around looking for ways to keep myself safe because I was now terrified of them. Something clearly needed to change, and so I decided that I would start setting boundaries with men UNAPOLOGETICALLY from the get-go, unapologetically being the keyword here. Got the opportunity today, as it happens. There's this guy at my gym who has been chatting me up and honestly, while it's nice to flirt a bit with a good-looking guy here and there, I'm really not looking for dates at the gym. Happy to be friends, though, but that would mean I'm opening myself up to yet another situation with a guy who pretends to be my friend while secretly wanting to f*ck me. Anyway. So dudebro is chatting me up, and touches my arm in the process. I don't want him to touch my arm without my permission, so I stated as much. I was not angry. I was not upset. I didn't wait until he had pushed me to the point where I gave zero f*cks and exploded at him. I didn't like something, and said as much. "Hey, don't touch my arm without my permission." Unapologetic, just as I had planned. He was pissssssssed. Said something about not liking being told off like that and walked away. I think this is actually the first time in my life that I have ever set an unapologetic boundary with anyone WITHOUT actually being upset or pushed to a breaking point. And it felt AWFUL. I feel so guilty. Every ounce of my people-pleasing soul is on f*cking fire. I am in absolute agony. I've literally shot off voice messages to my best friend asking her for HER opinion on setting a boundary about MY OWN BODY. It's that bad. And yet, I shall persevere. Because as terrible as this feels, it's only because this is (probably) the first time I've done it. On my way back home from the gym, I bought myself a huge bunch of sunshine-yellow flowers and vegan almond Magnums to celebrate my small victory. The flowers are now sitting pretty on my breakfast bar and one of the Magnums in my stomach. Thank you for listening. ❤️ ETA: My best friend messaged me back and after a very long and wonderfully validating voice message, added, "I don't like this guy, he sounds like a d*ck." 🤣 Edit 2: This blew up!
