If it helps anyone interested in a thread like this, the site/app called Trainline saved our bacon in Italy and Spain a couple times. It's like Google Flights for trains, and the discounts (especially well in advance) can be incredible. They take a small cut if you book through them, but it's convenient. You can save the fee by booking direct but might not even be worth the hassle.

You can actually do a lot of this directly in Google Flights Put in your origin airport (or up to 7 multi-airports separated by commas), leave the destination as "Europe" or a specific country, and filter by "Nonstop only" It will show you a map of all available direct flights for your chosen dates
