FineTune is a lightweight menu bar app that gives macOS the audio controls Apple never built. This was my first time making sourdough in a stand mixer and I actually don’t think I can go back to mixing by hand 😂!! It was also my first time not doing a fermentolyse. I used a recipe by @bakingbyluke where he laminates the dough very thin right before bulk fermentation. I can’t believe how thin I was able to get the dough without it tearing 🤯. My fiancé said this was his fave plain loaf so far. It cuts so nicely, I was so happy with the crumb and it was super soft 😍. Ingredients: Bread Flour 500g, Water 330g, Starter 156g, Salt 12g. Mix the ingredients and rest for 30 minutes, then machine-knead for 3 minutes on slow and 3 minutes on medium before resting for another 30 minutes. Take your aliquot sample, perform some slap and folds (6-7 sets) and rest for 30 minutes. Laminate the dough as thin as you can get it then place in a bowl for bulk fermentation. Once the aliquot is done pre-shape and let it bench rest for 20 minutes. Final shape and refrigerate overnight. Preheat oven to 240c, place DO on middle rack at 240c for 33min lid on, lower temp to 230c and place on lower rack for 20min lid off. Hey everyone, I was frustrated that macOS lacks a native Volume Mixer. Specifically, I couldn't route Spotify to my external speakers while keeping other apps on my MacBook speakers. Existing solutions were either buggy on new macOS versions (BackgroundMusic) or expensive ($50+, like SoundSource). So I built FineTune. It’s a native menu bar app (SwiftUI) that provides: Volume Control & Boost Per App Audio Routing (send apps to different devices) Per-App EQ with Pre-defined Presets Real-time VU Meters & Persistent Settings Current Status: It’s open-source and I’m working on this as much as my free time allows. Two loaves made a few days apart but damn near identically besides mixing/ kneading. 360/40g bread/ww flour 295g water (76-77%) 80g starter 8g salt Levain 1:5:5 night before and then slightly past peak 45 min Fermentolyse Pic 1: Add salt, stand mixer on speed 2 until dough fully pulls from bowl, about 8-10 mins. Pic 2: Add salt, rubaud method (relatively new at this), about 5-6 mins 30 mins rest, strong fold, repeat same Coil folds every 30-60 mins until its holding shape satisfactorily (probably 1-2) 75-78F bulk til 50% rise Pre shape round, 30 min rest Gentle roll shape Banneton for about 1.5-2 hours at 75-78F again Fridge overnight Preheat 475 for 30-45 mins.
